Why is my giblet stock bitter?

I make it every year and for some reason this year it has a mild bitter taste. NO LIVER, I cooked it separately.

Here are my ingredients:
Giblets
Butter
Onion
Celery
Bay Leaf
Thyme
Salt & Pepper

Could it be the bay leaf? I usually use fresh but the grocery store was out so I used dried.
