Sealing/painting partially finished wall of drawers

Hi. I am looking for some very basic and step by step information. One room in my house has a wall of built in shelves and drawers that are stamped Douglas Fir. The previous owner stained only the exterior surfaces with a dark (ugly) stain. I want to 1) seal the remaining unfinished wood surfaces as I think they throw off an objectionable odor, and 2) paint the whole thing.

Now, here's where I get confused. Is varnishing the unfinished wood the way to go? If so, how do I pick a varnish? I've read that oil based varnishes are the easiest to work with and that heat delaminates polyurethane. This is not a high end project, but I would like to fix up this wall so that it can be serviceable and not smell! Thanks for any help you can provide.
