Making T-Day sides ahead of time?

I'm having Thanksgiving at my house and while it's not a huge crowd, I don't want to be cooking all day on Thursday. I'm thinking about making the dressing, sweet potatoes, green bean casserole on Tuesday before my guests come into town. Then I'll just bake them on Thursday.

I bake the dressing in a baker - bread cubes/sausage/onion/celery/butter/stock.

Sweet potatoes - crushed pineapple/butter/brown sugar

Classic green bean casserole - put crunchies on top before putting in oven.

Do you think these three things would do ok being in the fridge for two days? On Thursday, I'll make the turkey, gravey, mixed frozen veggies and mashed potatoes.

Pies and rolls are coming from a bakery this year.

The sausage in the dressing is already cooked, right?

Yes, I would make everything like I was going to bake it right then, but just put it in the fridge and bake it later.

I was just thinking the stuffing would be soggy, but then maybe it won't dry out so much in the oven anyways?

It will be fine. Slightly undercook (by only a minute or two) the pasta, and add a little extra liquid to your cheese sauce. Of course, you won't want to add the crumb topping the night before--just take that in a separate container, and add before serving. I wouldn't plan on baking before leaving--just get there early enough to put it in the oven in time to get hot for dinner. That way you can carry it cold, in a cooler. '

I wouldn't begin to freeze a quiche. It's an egg custard and I would be afraid it would get watery....and even if you added flour, I would be afraid the crust would be soggy. I would make the crust ahead and portion it into one pie size balls and refigerate for up to 3 days....and the night before chop the veggies and garte the cheese and fry and crumble the bacon....and morning of...just roll out the crust, mix up the eggs and milk and cream, dump in the fillings and the egg mix and bake. When I have had to have quiche ready by 7:30, I have even parbaked the crusts the night before and filled and baked the quiche in the morning. I don't think you will be very happy with freezing quiche for a party. Linda C

This is the Christmas Morning Wife Saver from the Best of Bridge cookbook. CHRISTMAS MORNING WIFE SAVER 16 slices of white bread slices of Canadian back bacon (enough to cover the pan) grated sharp cheddar cheese (enough to cover the pan) 6 eggs 1/2 tsp salt 1/2 tsp pepper 1 tsp dry mustard 1/4 c. minced onion 1/4 c. green pepper 2 tsp Worcestershire sauce 3 cups of whole milk dash of Tabasco sauce 1 stick of butter Special K or Corn Flakes Butter a 9 X 13 baking dish. Cover the bottom with a layer of 8 slices of bread, then bacon, then grated cheese, and top with remaining 8 slices of bread, sandwich style. Beat eggs, salt, and pepper together. Stir in mustard, onion, green pepper, Worcestershire sauce, milk, and Tabasco sauce. Pour the mixture over the "sandwiches", cover, and refrigerate overnight. In the morning, melt the butter and pour over the top of the "sandwiches". Cover with the cereal. Bake uncovered for 1 hour at 350 degrees. Let sit for 10 minutes before serving.

How far ahead of time can you make applesauce (w/o canning)?

I freeze applesauce in canning jars. We have several feral apple trees around our property. I have no idea what variety they are. We don't spray the trees so the fruit is ugly. The apples are small and the flavor of the apples from each tree is different but when mixed together they make a delicious applesauce. I don't add anything to it just apples. Though once in a while I will add a splash of maple syrup (DH likes it on the sweeter side), juice and zest from an organic lemon to keep the sauce from darkening or even a little fresh grated nutmeg. My family does not like cinnamon in applesauce. I wash/scrub the apples, remove bad spots, cut in to quarters and plop them in a pot with a tad bit of water. Cook until soft then run the mixture through a food mill.

I would consider making the green bean casserole the day or night before instead. The cream soup with mushrooms may taste better a little fresher. I know you want to save on time but it really only takes about five minutes to throw it altogether.

For the stuffing, I'd do all the chopping and cubing but probably keep the onions and stuff separate from the bread and just assemble it all when you bake it. Again, it should only take a couple extra minutes to assemble it.

Here's a recipe for the mashed potatoes you may be interested in. I never tried it, but I hate having to do the potatoes last minute; it may help you out even being able to do them the day before.

2 thoughts~ Use frozen beans, make the casserole (without the fried onions on top) 2 days ahead..add last of onions just before baking.
~cream of mushroom soup never tastes fresh..LOL
