Only definite right now is...cherry cobbler for dessert.
Got some chicken cutlets in the feezer....probably Chicken Piccata or Cordon bleu with Cheesy mashed potatoes and asparagus.

Jammer didn't sleep well last night so I let him sleep in this morning. We skipped church. So...I ate Oreos and coffee for breakfast. I would like to go out for chicken fried steak for lunch. *S*

Chicken fried steak sounds wonderful MaryAnn but we have had quite a bit of beef this week so I guess it will be Mahi Mahi fish at our house this evening.

Actually it is one of my favorites but Bobby doesn't care for it. He always wants to put ketchup on it and I refuse to let him mangle a meal that I went to the trouble of making taste soooo good..lol

Your fish sounds great Nita! I'm still struggling to put on some weight. I finally weighed this morning...the first time since my surgery and I weight ½ lb less than I did when a Senior in HS! I have an appetite, but can't eat much at a time. So when I get in the mood for something I try to indulge!!! *S*

Just came back from Daughters house. She sent me home with a margerine tub of ham salad that she made from the leftover Easter ham, and a small tub of egg salad also from Easter leftovers. Plus she gave me a half loaf of her friends homemade "to die for" peppperoni bread. I have some Italian vegetable soup in the fridge that I made on Friday, so all this will be on the menu here today.

Well, the timer just went off on my Marie Calendar Turkey Pot Pie. So, that's lunch.

Dinner? Mahi Mahi sounds great. But, I only have Canned Salmon. So I guess it will be Salmon Patties, which I absolutely love, with Scalloped Potatoes and Spinach.

I want to go to Gazania's house for dinner. I ate a big breakfast so I don't want any lunch, but I love-love-love all those Easter leftovers!

lunch was leftover chinese... dinner was suppose to be chicken caccatorie (sp??) but not all ingredients were on hand so I improvised a LOT.... chicken, onions and garlic prepared properly... then added jar sauce... it's simmering for about 4 hours or so.... guess it's pasta with chicken meat sauce! :P

Had one slice of leftover pizza. Will be cleaning out the fridge for meals today. A ton of apples have been sitting idle in the fridge - going to make apple tarts (low fat of course) with phyllo dough later.

Apricot, raisin and cranberry stuffed pork loin. Not sure what kind of potato or sidedish yet, but it will be yummy!

We ate lunch early in Ames. We have a WONDERFUL barbecue spot we love, and about the only time you don't have to wait in a long (and it is a HUGE place!) line, is early on Sunday morning. They have a chicken dumpling soup that is sooooo good! I had the soup, and a saucy southerner (it is a mixture of all their barbecued meats...turkey, beef & pork in barbecue sauce...Mmmmmmmm) and baked beans....ate the soup and beans and brought the sandwich home.

For supper tonight it is homemade pizza. Both Dean and Caryn are drooling about it already! LOL I have Canadian bacon, pepperoni, sausage and hamburger plus some tomatoes, onions and gr. pepper and olives for it. Looking forward to it myself!

I've only had cereal and coffee so far today.

I promised DH a pot roast, so I'll have to get started on that soon. It will make the house smell warm and cozy, homey.

We went to Red Lobster after church and I had the fried shrimp and shrimp scampi. I love their Aztec chicken but had just had it one day last week, so I got something different. As long as I don't have to cook it, anything's fine w/ me!

Leftovers from last night--Swiss steak, mashed potatoes and gravy. Some kind of vegetable because we ate all the carrots last night. Sister Shubert yeast rolls, no dessert unless DHarry finishes off the chocolate chip cookies I made the other day.

Instead of making tray after tray of individual cookies, I spread the whole batch of cookie dough into a 10x15x2" pan and baked it about 20 minutes. Much easier!

Madison and DS came up for lunch. We had roast beef and potatoes and gravy and cauliflower with cheese sauce.
Maddie said "I don't like broccoli!" LOL We got her to just try a small bite and she likes cauliflower now!
Evening will be spent taking her back, so who knows, MickeyD's or Subway I suppose.

I'm feeling energetic LOL, very rare!! We're having chicken enchiladas for dinner...with this recipe I've used for years...sooo good!

OHHHHHHHH, I might make that spoon bread for my Monday week's water aerobics club lunch! Sounds delicious!

Cheeseburgers on the grill. Guess that's burgers add cheese later.
Spinach salad, croutons, feta, Raspberry vinegarette.

Had "brunch" for lunch.Planned to go to Church but it was "froggy" out so decided to stay home.DD fixed biscuits,bacon and eggs over easy.Had supper about 2 hours ago.I know,way too late to be eating.DD made a hamburger ring that is delicious.She browns lean hamburger with chopped onions and garlic,salt,pepper and any seasonings you like.Sometimes she adds diced potatoes.You can put just about any vegetable you like in it.Open 2 cans of crescent rolls and place each roll together,overlapping each other in a circle on a pizza pan with the wide side in the center,leaving a hole in the center of the dough.Arrange the meat mixture in the center of the dough,top with shredded cheese of your choice.Pull the narrow sides of the crescent rolls over the meat mixture and press down.The meat should be encased in the dough.Bake at 350 until golden brown.Deeelish!

I made up a batch of "Marlboro Man's favorite sandwich" from the Pioneer Woman Cooks site.

And the rest of a batch of her "Baked Potato Casserole" I made the night before.

We had the sandwiches last night too, some friends stopped over and I made them for all of us..but tonight Jeff was home and he was dissapointed he missed them so I made more.
