Two new dip recipes to share.....

We are headed to a fun evening doing some light-hearted wine tasting at a friends house tonight. I said I would bring some snacks to share. But it is Friday, didn't have a lot of time for shopping or prep. Whipped up one of these last night and the other just now. Easy and Tasty!

From Jean Pare, Company's Coming, Focus Series, Dip, Dab and Dunk......

Herb Spread

1 8 oz block of cream cheese, softened

3 tbsp fresh chives

3 tbsp fresh parsley (I used flat leaf)

pepper

2 tbsp sweet chili sauce (i used about 3)

1 tbsp soy sauce

Original recipe says to mix well in a bowl, but I used small FP to combine.

Cover and refridgerate for at least 2 hrs to blend flavours. Garnish with bit more chopped herbs.

Sun Dried Tomato Spread....

1 bulb of roasted garlic, cooled

8 1/2 oz jar of sun dried tomatoes in oil

8 oz block of softened cream cheese

1/4 c chopped fresh parsley

2 tbsp fresh lemon juice

2 tbsp sweet chili sauce

2 tbsp water ( i did not use)

pepper

(To roast garlic, chop off tope to expose cloves, wrap loosely in tinfoil with a drizzle of evoo. Bake in oven 375 degrees for about 45 min. Squeeze bottom of bulb to remove cloves from skin)

Add all ingredients into FP and process til smooth. Cover and let chill for an hour or so to blend flavours.

I will let both of them come to room temp or so before serving so they are softened, serving with crackers, and sliced veggies for dipping.

Just tasted the one I made last night (the sun dried tomato one) and it is even more flavourful.

Think these will be good to have for last minute prep over the holidays.
