Apple jack around here is simply hard cider, or scrumpy with no further efforts at increasing the alcoholic level. You can buy hard cider at any package store, or many markets who carry alcoholic drinks. I guess apple brandy is sometimes called Apple Jack too, saw that when I googled it, but that's a new one on me. It doesn't make any difference how you raise the proof in the end run, it accomplishes the same thing and if I were going to look for the closest equivalent it would be apple brandy.

Lard has a larger fat crystal than other fats, which is one reason it works so well in pastry. Butter gives great flavor but has a lot of water in it and it melts quickly. The combination of lard and butter in pastry is a great twosome. When I use coconut oil (frozen and grated on the large hole on my box grater), I can reduce the amount of fat by about 25 percent, especially when using pastry flour or milling soft wheat or low-gluten spelt into flour to use for pastry. Good pastry is a combination of tenderness and flakiness and each characteristic is developed differently. Pastry is all about reducing the gluten development in the flour, so choose flour (pastry flour or Southern All-Purpose flours like Martha White, White Lily, Gladiola, Red Band) that has a low protein/gluten content to begin with as a great way to reduce gluten-development up front. If you want more tender pastry while using all-purpose flour you can add a little more fat and add an acid ingredient. Divide the cold fat in two portions and mix one half in the flour until it's very finely mixed. This will coat the flour so it develops the gluten in short strands (hence short-crust pastry) when the liquid is mixed in and will give a tender crust. Quickly add the remaining fat and keep it in larger blobs. When the heat of the oven melts the blobs of fat the steam will raise those layers in the pastry we recognize as a flaky pastry. Vinegar in a recipe is another way to decrease the gluten-development. Adding an acid brings one more tenderizer into play. "Acids soften gluten, breaking apart gluten strands and keeping the pastry tender." When eggs are used in a pastry recipe it is best used for something like a meat pie. The protein from the egg will reinforce the structure of the pastry, making it strong enough to hold a hefty filling. When liquid vegetable oil is used to make pastry it is considered a "warm fat", which coats each particle of flour so completely than no gluten develops. Oil pastries are very tender and tend to be more mealy than flaky since you don't have steam raising those flaky layers. Oil pastry is generally easier to handle and is easy to roll between two sheets of waxed paper. It's neither right or wrong what type of pastry you make - it's just one of those cooking/baking choices we make - BUT - as a general rule of thumb don't take an oil pastry to the fair because it will tend to get judged down because they rarely come up to judging standards. If a sticky dough that is hard to roll-out is your problem, you have too much gluten developed - probably from adding too much liquid and/or using flour that has a high protein content. Northern all-purpose flours like King Arthur and Robin Hood really don't make good pastry because of the high amount of protein. Add as little water as possible!!! As soon as lumps of dough stick together during mixing, stop mixing and adding water. It takes very little extra water, as little as 1/2 teaspoon, to quickly toughen the dough. -Grainlady

SORBET AU CABERNET 1 1/2 c Sugar 1 c Chilled fresh lemon juice 1 1/4 c Cabernet Sauvignon 4 Garnish peeled & sliced thin -kiwi 1 c Water 2 lb Red seedless grapes (Makes about 1 quart.) Combine sugar, wine and water in saucepan and simmer 5 minutes, stirring until sugar is dissolved. Chill. Crush grapes* in processor, then squeeze through cheesecloth to obtain 2 1/2 cups juice. Add grape and lemon juices to syrup. Process in ice cream maker. Arrange kiwi fruit and scoops of sorbet on individual dessert plates. Best made within 24 hours of serving. *Can substitute green seedless. Blackberry Cabernet Sorbet Recipe Ingredients: 1 pound blackberries (fresh is best, frozen is OK) 1 cup cabernet sauvignon 1/2 cup sugar 1 teaspoon lemon juice Turn this recipe into a puzzle! [click] Directions: Puree the blackberries, then put the mixture through a sieve to remove the seeds. Combine the strained berry juice, wine, sugar and lemon juice in a saucepan, and cook over medium heat until the sugar is dissolved. Freeze according to the directions for your ice cream freezer, or place in a shallow pan in the freezer. I'm not staying at my house this week so I took a look at what Amazon reviewers have to say. The book does not use canned soups. Though the attached review may not sound all that positive, it does answer the question of ingredients, etc. "I usually rave about Cooks Illustrated books because they are the best all-around cookbooks out there, but I have to rant a little about this one. The idea behind Cover and Bake is to improve on classic casseroles by getting rid of sub-par ingredients like cream of mushroom soup and pre-packaged bread crumbs, and simplifying cooking procedures so as to allow as much one-pot cooking as possible. The people at Cooks Illustrated make a lot of references to "Tuesday night dishes," i.e., main courses that can be prepared, cooked and served quickly and don't result in a lot of clean-up. This, however, isn't that book. The dishes that look so quick and easy when you watch them on America's Test Kitchen aren't so quick and easy at home because they have someone else to pull the leaves off of enough fresh tarragon that they have 3 tablespoons ready and waiting when they start cooking their Chicken with Spring Vegetables. When at home you have to trim and cut the chicken, pull the leaves off of the tarragon and chop them, wash and cut leeks, carrots, and asparagus and measure out cream (rather a lot of it) and chicken broth as well as various spices, and make home-made bread crumbs in the food processor, it all adds up to several hours of preparation before the casserole even makes it into the oven, and along with the casserole dish itself, you end up with a dutch oven, food processor, cutting board, knife and several prep bowls to clean. You can make the basic dish in advance, but you still have to wait for the mixture to chill down before you can put it in the refrigerator, and you have to leave it out at room temperature for an hour before you can put it in the oven. Yes, it tastes much better than the chicken casserole you would make with precut pieces of chicken and cream of mushroom soup, but unless you make it on a weekened and have someone to take it out of the refrigerator for you before you get home from work, it's not a quick and easy weeknight dinner. As mentioned by someone else, this also isn't healthy eating. Most of the dishes have cream or cheese, and vegetarian isn't a word the folks at Cooks Illustrated seem to have learned, although the dishes seem to have a lot of mushrooms. Even the side dishes aren't truly vegetarian as a lot of the recipes in the book use one form or another of pork for seasoning, or otherwise rely on cheese or cream. For a book called Cover and Bake, I certainly expected at least some recipes which make star use of grains, rice, beans and vegetables, which are nice to have even for meat eaters. Those also aren't here. These are basic beef, pork, chicken and fish with rice and/or potatoes and they are hearty dishes. The side dishes are basically rice dishes to serve with the meat. Don't get me wrong -- the resulting food tastes good. But their "paella," for instance, bears no resemblence to paella. It's shrimp with tomatoes and rice and while it's quite tasty, for an expensive dish, it just isn't the star it ought to be. When you make a dish that calls for 1 1/2 pounds of extra large shrimp, which is going to run you at least $25, plus the costs of the other ingredients, the dish should be more than tasty -- it should be spectacular. No one is going to complain about this dish, but it's doubtful they are going to rave about it either. On the plus side, everything is extremely easy to prepare, especially if you like making food that serves 4-6 people and makes use of 9"X13" baking dishes, dutch ovens, and large skillets. There are, as always, plenty of useful illustrations, and the instructions are easy to follow. I'll use this cookbook since I still like the idea of dishes I can make over the weekend and keep in the refrigerator for several weekday uses, but it's not going to replace Cooks Illustrated's New Best Recipe or The New Basics or other recipe collections I own. This is really for people who like chicken and rice, beef and potatoes and other combinations that classically go into casserole dishes with thick and creamy sauces. If that describes you, this book is probably a 5-star book for you. Otherwise, you may search hard for recipes that sound worth the trouble."
