I volunteered to make ground beef BBQ for a birthday party next weekend.
I was told there will be 43 people.
Do you think 10 lbs of ground beef sounds about right?

My SO's ex and some of her family will be there...and even though she and I get along rather well, I know there will be some tongues wagging...any killer recipes will also be welcomed!

I personally think it sounds a little light. If you assume somewhere around 1/4 lb per person like a hamburger patty is you would be a little bit light. If I were doing it I would be safe and go with 15-20, because you will have shrinkage and loss from fat.
Will there be any other main dish items other than the ground beef bbq? I assume this is going to be served on buns like pulled pork? Because you know some people are going to be piling it on and that might cut some people short.But I always prefer to have plenty left over than none.

For recipes do you want for side dishes, appetizers, or what?
I think with that kind of bbq a good cole slaw or broccoli slaw is always good. I prefer broccoli slaw. Macaroni salad is good too.

this is really good I got the recipe from a restaurant we used to go to in Dallas. It makes a good amount.

BAKED POTATO CASSEROLE

5lbs potatoes(ready to boil)
1pt sour cream
1/2pt.chopped green onions(plus 1 oz. for garnish)
1/2pt.grated cheddar cheese(plus 3 oz. for garnish)
1/2pt.fried & crumbled bacon(plus 2 oz. for garnish)
1/4lb.margarine
1/2pt.milk
2tsp.salt
2tsp.coarse ground black pepper
*optional I always add a little cajun seasoning also
1/2 pt.= 1cup 1pt.= 2 cups

Boil potatoes until tender, then mash.
Mix all ingredients into mashed potatoes except for the garnish ingredients. Put mixture into large rectangular baking dish. Garnish, by sprinkling on top cheese, bacon and onion, and bake at 350 for 15 minutes or until cheese begins to brown.
*hint spray baking dish with pam for easy cleanup

I make this a lot too for parties and do it in the crock pot
Cheesy Potatoes1
1can cream of mushroom with roasted garlic soup
1jar Ragu cheese creations double cheddar sauce
1 1/2 lb or so of well scrubbed and washed red or gold potatoes sliced in rounds about 1/4 in.
1/2 tsp. paprika
1/2 tsp. pepper
1tsp Cajun seasoning (I use Tony’s)
2cup shredded cheese (I use Colby jack)
*Optional diced onion
*Optional diced ham
Spray well inside of crock-pot with Pam. Layer in potatoes. Mix soup and sauce with seasonings in a mixing bowl. Put in part of the shredded cheese on top of the potatoes then pour in the ingredients from mixing bowl. Put remaining cheese on top. Cover and cook in crockpot on high for 3 to 4 hrs till potatoes are tender. If adding onion or ham just mix it in with the soups in the mixing bowl.
I use this same recipe to make cheesy macaroni also I just replace the potatoes with cooked elbow macaroni (cooked very firm do not fully cook it) and stir it all up in the crock pot and cook.

You can do this in the oven too just cover for part of cooking time with foil(first 30 mins) and cook at 350 for about an hour till potatoes are tender. Cook in a 13x9 baking dish sprayed with pam.

This squash casserole is delish and really does not taste like squash.

SQUASH CASSEROLE

1 1/2 LBS SQUASH(or 2 cans squash)yellow
1 CAN CREAM OF CHICKEN SOUP
8 OZ SOUR CREAM
2 MED ONIONS CHOPPED
2 STALKS OF CELERY CHOPPED
1 CARROT GRATED
1 1/2 STICKS OF BUTTER OR MARGARINE
1 8OZ PCK OF HERB STUFFING MIX
SALT N PEPPER TO TASTE

PREHEAT OVEN TO 350%
SPRAY 13X 9 BAKING DISH

COOK SQUASH(drain) AND MASH ( ABOUT 30 MINS,)
COMBINE ALL INGREDIENTS IN BAKING DISH EXCEPT 1/2
STICK OF BUTTER AND HALF OF STUFFING MIX.(If you are using the stuffing mix that has separate seasoning pack use half now use the rest later)
MELT 1/2 STICK OF BUTTER AND MIX WITH REST OF STUFFING
MIX. POUR ON TOP OF CASSEROLE FOR TOPPING

BAKE AT 350% FOR 40to50MINS
LET STAND 15 MINS THEN SERVE.
YOU CAN USE THE FROZEN SQUASH ALSO.
I found it easier to mix all the ingredients in a large mixing bowl before putting in to the casserole dish.

I am only taking the beef though, not even the buns which is fine with me. ;)

One advantage of the Bosch is that the height inside the oven is greater than the inside height of most other ovens with similar external dimensions. Part of the reason for that is that the floor of the Bosch can be used as a "shelf," because the lower heating elements are beneath the floor. However, I am pretty sure that when we have a Thanksgiving turkey in our oven (we usually get about an 18 pound bird), the top of the turkey is higher than the underside of a rack placed in the highest position would be. I think that we do not remove the bottom rack for Thanksgiving, so we are "wasting" a couple of inches at the bottom of the oven. When we make beer can chicken, even a four-pound chicken stood on "end" with a 12-oz beer can up its tokhes fills the entire height of the oven, even with all of the racks removed. If my recollection is correct, then the 30" wide oven will get you some carrot space on either side of the turkey pan, but no room for a real baking dish. Trend away from island cooking?

We have these discussions of cooktop on island or perimeter or whether islands or peninsulas are better, but I don't think much of the abstract answer. A lot of the time it is a question of what works for your space plus the way you use the kitchen. For our L plus big island kitchen, putting the rangetop on the perimeter just wouldn't have worked. Our island is 8 foot long so the L plus island works about the same as a galley kitchen between the island and long leg of the L with the short leg of the L providing for the baking and coffee/tea area and the back of the island being for big projects, buffet serving for parties and casual hang-out area. There just isn't enough perimeter for a rangetop plus sink plus other countertop appliances (mixer, bread machine, expresso machine). Even if we didn't have the countertop appliances or stored them in cabinets (and I'm not willing to do that for big appliances that we use a couple of times a week or even daily), the sink would have been too close to the rangetop for convenient multi-cook use if we kept the sink under the window. If we moved the sink from under the window so that both could be on the L but more separated, then one or the other would be too far from the breakfast room and dining room. Also, we keep kosher which means two to three sets of plates, flat ware, utensils, pots and pans, etc. If the range top plus focal point hood were on the perimeter, We'd have lost some of my wall cabinets - something we weren't willing to do. Might as well have the hood over the island where it isn't displacing storage - and I don't find it interferes with the feeling of openness. For some reason people here seem to accept a pot rack, chandelier, or pendant lights as decorative over an island but consider a hood an impediment to openness. I don't quite understand that. I wasn't willing to put the clean-up sink on the island - it wouldn't have provided as good flow and separation between someone cooking and someone else cleaning up and I don't want the clean-up sink front and center. Our island is a little over 4' deep (3 feet of cabinet plus a 15" bar). The island it replaced also had a cooktop and eating bar on a 4' deep island. In more than 20 years with raising a family in the house, we never had a safety issue arise due to the placement of the cooktop on the island. 2' between the cooktop and the edge of the eating bar was enough separation to keep the hot stuff away from people at the bar. For a smaller island, I can see dedicating the island to one function like prep or serving. Big islands can accommodate multiple functions. Like some others here, I like prepping next to my cooking surface. Yes sometimes I do mise en place - mainly when cooking things like stir fry where it is important to keep up the cooking pace to have the veggies turn out tender crisp. But other times like when getting a stew or soup ready I chop and toss items in as I go. It is nice to be able to keep an eye on what's on the stove with a glance to the side or reach out to give it a stir. I may spend more time prepping than cooking, my set-up allows me to do both while facing guests or family in the family room. And most prep occurs before or during cooking so as guests gather for food, I'm more likely to be cooking than prepping. 8 feet on the kitchen side of the island provides for prep sink, prep counter, range top and a bit more counter on the non-prep side of the range top. The 8' by 2' area on the family room side of the island provides plenty of buffet space but sometimes when serving items like a soup that we want to keep on the heat, we have made one side of the rangetop into part of the buffet too. For me keeping my walls for storage, clean-up, baking center and being able to cook and prep facing the open area were worth the extra $1000 or so that it cost to get an island hood instead of a wall hood. I do have one regret - I wish I had sprung for the extra cost to have an external fan motor on my vent hood. At the time we bought, the manufacturer had a special where the internal motor was free with the hood so it was hard to justify the cost of the external one.

The long and short of it is that it's an oven so if the recipe says 350° for an hour that's what I'd go with but would allow some extra time if needed and keep in mind you need to heat the oven which will add some time to it. I'm in agreement with using the pans on the rack. The purpose of the rack isn't to keep it from burning since, as already said, most roaster ovens heat from the sides (although I believe my mother's Kenmore heated from sides and bottom) and the advantage of the rack and pan is you'll get better air circulation. It'll be better yet if you have a convection version which will make things any shade of brown you want and yes even black! I do like my "Roast-Air" Nesco.

I'm confused by the term "ground beef BBQ". Do you mean something like sloppy Joes?

I agree that 10 lbs won't be enough unless it's basically all kids -- or you know they'll be serving something else too (like hotdogs).

I was wondering what it was too but thought maybe like pulled pork but with ground beef.
I know that the men I used to feed never ate only one of anything lol.

Sorry, yes sloppy joes. I guess I just never grew up calling it that.
I just found out tonight there will also be soup pasta salad and she said a big subway sub...not sure how big.
There will be 6 children...I think I will make 13 pounds, I can always freeze any leftovers.
