Cooking corned beef tomorrow?

I am. I'm posting this to remind anyone with their corned beef in the freezer to get it out!

No I don't bother cooking a whole piece of corned beef. I will do one of three things:
1. Buy some sliced at my local deli, bring it home and steam it to re-heat.
2. Go to the "all you can eat" St. Patty's dinner at a local restaurant.
3. Buy pre-mede dinner at Deli above, they sell for $6.99.

Had mine yesterday. Should have made two. Not enough left for corned beef hash and a few sandwiches. And there are only two of us. *oink oink*

DC, I do something similar with our corned beef. My husband is on a salt-restricted diet, but he & I dearly love corned beef. So when it's on sale for St. Patrick's Day, I get a hunk and soak it for two days, changing the water at least 2 times a day. Then I cook it in fresh water in my slow cooker. Once the water comes to a simmer/boil in the slow cooker, I change the water again. I know I'm losing flavor, but these are necessary steps for his health's sake. Yet in spite of all that water, the corned beef tastes pretty good -- much milder than regular but tasty nonetheless. So we can enjoy a corned beef & cabbage dinner and corned beef sandwiches for lunch the next day. And no swollen, painful feet or congested lungs from over indulging.

Because of this thread, I bought and cooked corned beef brisket last week. It was wonderful!! Very tender and very flavorful. I wondered why I don't cook them more often. Because of this thread I learned to buy a "flat." Until this thread, I did not know there was a difference, or even a choice. I opted for the long simmer in the oven, rather than the bake. I wanted something that would take little of my attention because I was in the middle of making the "car bomb" cupcakes. Rather than cooking the veggies with the brisket, I cooked them separately, mainly because I wanted to make skillet-roasted potatoes (not a fan of boiled potatoes). We got 2 meals out of it, then I got a corned beef sandwich and to finish up the "crumbs," I made a dab of corned beef salad to munch on with crackers. I ♥ CF

I've only done chickens on mine, but the video at the link may be of help. At about the 6 minute mark in the video, he cooks what appears to be a eye of round. What cut of beef are you cooking? If it's a pretty juicy one, you probably don't need to worry about it too much. If it's a leaner cut, maybe you need to slather the outside with something before putting it in. The rotisserie has the advantage of maintaining the juiciness of meats; instead of dripping off the meat, gravity helps the juices redistribute to the middle. If you have an instant read thermometer, I wouldn't worry a bit. Even though I've never done a beef roast on the rotisserie, here's how I'd attack it: put the hunk of meat on the spit, rotisserize it until the center reads about 118-120, let it rest, then serve. If you don't have an instant read thermometer, go get one today. (Digital is faster than dial-type thermometers.) Then you don't have to worry a bit about how done the meat is, or how long to cook it; you just cook it till it's done. I have a Thermapen (around $90), and I consider it to be worth every penny, but there are lots of good ones out there in the $15-30 range. Here is a link that might be useful: capital rotisserie

I couldn't wait for Wednesday.....just another day really :-) So I fixed my corned beef and cabbage early and have since been enjoying leftovers. A couple of sandwiches and hash. Having the last of the hash for dinner tonite. Fixed mine today and it came out wonderfully. I love corned beef hash and always have the canned variety on hand, but may try to make home made. I'm looking forward to Reuben sandwiches. It may not be an Irish dish but my part Irish Dad always had it on Saint Patrick's Day. Would sometimes sing a few Irish ballads too. I sure miss him.

I guess we are the only Irish folks in town. DH works, one son has a track meet, and the other has an awards banquet. Boo

I baked a loaf of beer bread and a loaf of soda bread yesterday and I'll do another two today for DH to take to work with him. He's a firefighter so he'll be gone for two days. They'll do corned beef there.

I can't bear to eat it anymore. About 7 years ago I had the worst case of heartburn after eating a corned beef and cabbage dinner. Almost went to the ER cause I thought I was having a heart attack. I do still eat cabbage... but no more corned beef.

I won't make mine until later this week. Our wedding anniversary is tomorrow and we had planned on cooking on the grill but they are now calling for rain! So, I made reservations at a Japanese place here in town. This will be the first time we have ever eaten out on our actual anniversary! Too many crazy wanna be Irish folk out for us. We will brave the masses and go anyway. Go figure, both of us 100% Irish and we are going Japanese!

I am going to the store either today or tomorrow morning to get mine. The corned beef brisket is on sale at my brother's store for $3.49 a pound and I plan on getting 2 or 3 of them - they sure do shrink. LOL I am having my sister over and my friend and possibly my brother for dinner. Boiled cabbage, mashed potatoes, mashed sweet potatoes for my sister and carrots. Something tinted green for dessert - not sure what yet. I am also going to pick up a rye bread to make sandwiches the next day.

Corn beef is thawed in the frig so I can put it in the crockpot tomorrow morning. I don't cook the vegetables in the CP because I don't like the way they taste. After the meat is cooked, I put the broth in a pot and cook the veggie on the stovetop. I should make Glenda's brown bread--maybe tomorrow.

Have my rye bread ready for sandwiches, too, Anne.

DH isn't fond of corned beef so I will probably get some at a hofbrau. There is a local place that does it very lean and tender without all those spices some add. I love corned beef and cabbage with carrots and boiled potatoes. I eat it with horseradish.
