No I don't bother cooking a whole piece of corned beef. I will do one of three things:
1. Buy some sliced at my local deli, bring it home and steam it to re-heat.
2. Go to the "all you can eat" St. Patty's dinner at a local restaurant.
3. Buy pre-mede dinner at Deli above, they sell for $6.99.
THANKS FOR ASKING!

Had mine yesterday. Should have made two. Not enough left for corned beef hash and a few sandwiches. And there are only two of us. *oink oink*

My taste buds tell me that 'real' corned beef needs to be roasted or cooked in a slow cooker with cabbage, carrots, & onions. Canned corned beef is for hash or to be sliced for sandwiches. Left over roast beef makes a good hash, too, as Ann_t says. I'm thinking DL's recipe might be a good *'nother way* to do left over roast beef. And there is no way any ketchup will get anywhere near any of it here, either. So I am leaving that part out of the above recipe. Isn't it great that everyone has such different likes & dislikes? How boring & awful this world would be if we were all alike! Rusty

This is somewhat OT, but as long as we're talking about saltpeter (Potassium Nitrate): During the Civil War, the South had shortages of many items. One of the more critical ones was saltpeter, which is crucial for making gunpowder. A certain Judge John Haralson devised a way to extract potassium nitrate (also called 'nitre') from urine, and commenced upon a crusade to have the ladies of the Confederacy collect the contents of their chamber pots so they could make gunpowder. (I'm not making any of this up. Seriously.) When the word of this effort came out, there were several satirical ditties published. I have take one of the more widely circulated ones and bowdlerized it a bit to help evade the screening software, but I have no doubts that the intrepid denizens of this forum can (literally) fill in the blanks. I "Jno Haralson! Jno Haralson! We read in song and story That women's in all these years, Have sprinkled fields of glory; But never was it told before That how, midst scenes of slaughter Your Southern beauties dried their tears And went to making water. II No wonder, Jno., your boys were brave Who would not be a fighter If every time he shot his gun He used his sweetheart's nitre? And, vice verse what could make A Yankee soldier sadder Than dodging bullets fired from A pretty woman's bladder. III They say there was a subtle smell That lingered in the powder; And as the smoke grew thicker, And the din of battle grew louder That there was found in this compound This serious objection; The soldiers could not sniff it in Without getting an e________n."

Corned beef in a bag?

Agreed Dcarch. I've done CB a number of ways. However, boiling and submerged in liquid is not one of them. That does not mean it is wrong for others if that is what they prefer - IMHO. Simmered with a moderate amount of liquid on the stove top or in the oven in a covered pot works well also. I stopped cooking the vegetables in the pot with the meat a long time ago. I take one cup of the cooking liquid and another cup or two of water and braise the vegetables in that. They still have the flavor of the corned beef but aren't salt laden. And I have baked it in a bag or in a foil covered pan with a small amount of liquid. When I use either of those methods do a water bath the day before to remove some of the salt. Many ways to do corned beef and have it turn out delicious!

Because of this thread, I bought and cooked corned beef brisket last week. It was wonderful!! Very tender and very flavorful. I wondered why I don't cook them more often. Because of this thread I learned to buy a "flat." Until this thread, I did not know there was a difference, or even a choice. I opted for the long simmer in the oven, rather than the bake. I wanted something that would take little of my attention because I was in the middle of making the "car bomb" cupcakes. Rather than cooking the veggies with the brisket, I cooked them separately, mainly because I wanted to make skillet-roasted potatoes (not a fan of boiled potatoes). We got 2 meals out of it, then I got a corned beef sandwich and to finish up the "crumbs," I made a dab of corned beef salad to munch on with crackers. I ♥ CF

I'm making mine today. Everyone has something going on tomorrow :(
I guess we are the only Irish folks in town. DH works, one son has a track meet, and the other has an awards banquet. Boo

I baked a loaf of beer bread and a loaf of soda bread yesterday and I'll do another two today for DH to take to work with him. He's a firefighter so he'll be gone for two days. They'll do corned beef there.

I can't bear to eat it anymore. About 7 years ago I had the worst case of heartburn after eating a corned beef and cabbage dinner. Almost went to the ER cause I thought I was having a heart attack. I do still eat cabbage... but no more corned beef.

I won't make mine until later this week. Our wedding anniversary is tomorrow and we had planned on cooking on the grill but they are now calling for rain! So, I made reservations at a Japanese place here in town. This will be the first time we have ever eaten out on our actual anniversary! Too many crazy wanna be Irish folk out for us. We will brave the masses and go anyway. Go figure, both of us 100% Irish and we are going Japanese!

I am going to the store either today or tomorrow morning to get mine. The corned beef brisket is on sale at my brother's store for $3.49 a pound and I plan on getting 2 or 3 of them - they sure do shrink. LOL I am having my sister over and my friend and possibly my brother for dinner. Boiled cabbage, mashed potatoes, mashed sweet potatoes for my sister and carrots. Something tinted green for dessert - not sure what yet. I am also going to pick up a rye bread to make sandwiches the next day.

Happy Cooking

Corn beef is thawed in the frig so I can put it in the crockpot tomorrow morning. I don't cook the vegetables in the CP because I don't like the way they taste. After the meat is cooked, I put the broth in a pot and cook the veggie on the stovetop. I should make Glenda's brown bread--maybe tomorrow.

Have my rye bread ready for sandwiches, too, Anne.

DH isn't fond of corned beef so I will probably get some at a hofbrau. There is a local place that does it very lean and tender without all those spices some add. I love corned beef and cabbage with carrots and boiled potatoes. I eat it with horseradish.
