Corned beef in a bag?

One of my office mates asked me today if she could make corned beef in an oven bag for tomorrow. I have no idea since I've never used one. Do you know if it can be done?

I've done it with a corned beef eye round - not a brisket. I don't know why it would make any difference.

I've used an oven bag before, but Teresa is right; it doesn't make any difference. Just less mess to clean up!

With my oven set way dow to 170 degrees and the brine cured pastrami in there for over 5 hours and not getting past 110 inside, I pushed up the temp to 180, then 190, then 200 then 220, and after 11 hours I finally got the internal temp to reach 140 while the oven temp was at 250 degrees. I must say these two beef chunks took quite a lot longer to cook compared to the previous ones. Maybe because they were bigger in diameter. If anyone wants some of my left over dry spice rub, let me know and I'll send it out. It contains, allspice, clove, cinnamon, garlic, onion, bay leaf, mustard seed, celery seed, red pepper, black pepper, coriander, dill seed, ginger, and even some ground juniper berries. Needless to say its a really tasty spice blend and sticks to the outside of the beef once its been cooked. They now get refrigerated for at least 24 hours prior to slicing thin. I estimate I have about 8-9 pounds of pastrami, of which I will probably freeze some after its been sliced. Maybe in FS bags as individual servings that get vac sealed and then when I want a serving, I just put it in the microwave or drop into boiling water a couple of minutes, then open the bag and serve.. It should be good with the sourdough french bread I will also be making tomorrow, along with some spicy brown mustard I also made using some Grey Poupon, mixed with some finely ground brown mustard seeds and wine vinegar. The mustard needed a few weeks to 'mellow out' to a decent flavor. If it were served right after grinding amd mixing it tastes terrible. The same holds true for the chinese hot mustard powder when you mix it with water to make some hot mustard. It needs to 'bloom' a few hours before its served, also the same for Wasabi.

I know this is an old post but def relevant. I do rinse mine...no problem. Plenty of flavor. I posted this before, but this has been my go-to method for corned beef for years (courtesy of the Silver Palate duo). Always delish. Corned Beef and Cabbage (Serves 4-6) 1 corned beef (5-6 pounds...I prefer a flat cut) 2 onions, studded with 3 whole cloves (can be halved or quartered; cloves optional) 4 carrots, peeled and halved 2 ribs celery, halved 4 sprigs Italian parsle 1 green cabbage (about 3 pounds), cut into 6 wedges (See *Note below) 12 small red new potatoes 6 small leeks (white part and 2 inches of green), well rinsed (See *Note below) 6 carrots, peeled and cut into 2 1/2-inch lengths Salt and fresh ground pepper, to taste 4 T. chopped Italian parsley Place corned beef in large pot or Dutch oven. Add the onions, halved carrots, celery, and parsley sprigs (use seasoning packet if provided with your corned beef). Cover with cold water and bring to a boil. Reduce heat, cover, and simmer for 2 3/4 to 3 hours, turning beef over in broth every 30 minutes. DO NOT allow water to boil again; keeping at low simmer will ensure tenderness. When it is very tender, remove it from kettle and keep warm. Strain the broth and return it to the kettle. Add the cabbage, potatoes, leeks, cut-up carrots, salt and pepper, and 2 T. of the chopped parsley. Bring to a boil; reduce heat, cover, and simmer until vegetables are tender, 30 minutes. Arrange beef on warmed serving plater, and surround it with the cooked vegetables. Ladle broth over beef and vegetables, and sprinkle with remaining 2 T. chopped parsley *Note: Keeping the core in the cabbage wedges will help hold them together while cooking. Remove the core before serving. After thoroughly washing, leeks can be tied together with kitchen twine/string; remove for serving. Horseradish Cream Sauce (Optional but tasty) This makes 2 cups of sauce. Easy to reduce if needed. 3/4 cup whipping cream 1/2 cup mayonnaise 1/2 cup prepared horseradish, drained 2 T. Dijon mustard Pinch of sugar Salt and fresh ground pepper, to taste Whip cream in bowl until it forms soft peaks. Combine mayonnaise, horseradish, and mustard in another bowl. Fold in whipped cream. Add sugar, salt and pepper. Stir well, and transfer to serving bowl.

Mine doesn't seem to be overly salty either, but I do rinse it, then sprinkle the spices over top and most of the time I add a bit of water to the bottom of the dutch oven, more water if it's the crockpot. Peppi, it's one of those "5 ingredient" recipes and I didn't even mean it to be. (grin) I chop up the corned beef, dice some potatoes and onions. Throw some fat into a frying pan, add the onions and potatoes and stir until nicely browned. Add the chopped corn beef and some beef broth, I use my home canned stuff and use maybe a cup. Put a lid on and cook until the potatoes are tender. At this point it's ready to serve with some nice over easy eggs, but the girls liked a crunchy bottom layer. So I dumped out the hash, added butter to the hot pan, put the hash back in, made wells for eggs and put the lid back on. By the time the eggs were done the bottom was starting to crisp up and it was perfect. I've never used any measurements and the corned beef is salty and spicy enough that I only occasionally add a grind of black pepper when serving it. I use as many potatoes as I want servings, I can stretch just a little bit of corned beef this way or add a lot if I have some that I need to use up. I've added cabbage or parsnips at various times, I really like the added sweetness from the parsnips but Elery likes the original potato and onion version. It's really simple, just fried potatoes and onions and some leftover corned beef, but it's just the way we like it. We just got the cooktop installed, but no electricity yet for the ignitors, so it's probably going to be the crockpot... Annie

Thanks, Chloebud! Especially for the timing since this is a one meal cut piece (I've done plenty of whole briskets and halves, but never a quarter like this, or corned beef). I'm just winging it. :) I'm sure it'll be fine. I'm also looking at a recipe for more like a traditional braise (I realize that I've never actually boiled meat that wasn't for stock/soup). Worst case scenario, we'll order pizza. :) It's not a holiday dinner for us. When I was in 4th grade, I didn't know it was St. Patrick's Day that day (younger grades did decorations ahead of the holiday, but we were studying aviation and our projects were air related, not holiday crafts. This is in a very culturally mixed school, btw. So I just dressed as usual, in a pretty jumper and top, and a girl in my class screwed up her face in anger and socked me before class. I was utterly baffled. She was from an Irish heritage family. At age 10, I'd never even heard of Orangemen, or thought anything about my dress other than it was pretty and made me happy, in shades of pumpkin. I promise not to make orange corned beef, or green for that matter... Dcarch, my assumption would be that they'd attacked the meat with one of those bed of nails type things because I can't imagine pounding brisket would get you anywhere... If it were a chemical tenderizer, would they be required to list it?

Well....here we go again. IMHO corned beef needs to be boiled, for many reasons, not the ;east of which is to cook out some of the salt.
She could cover it with water and simmer for a while and then put it into an oven bag....but why bother? Just simmer it a little longer.

I agree with Lindac. DH and I have either corned beef or cottage ham quite regularly. I've done blind tasting with my husband and have not told him whether I simmered or baked. Simmering wins hands down in our house. An added plus is the tasty water for cooking cabbage, potatoes and carrots. As far as clean up, a pot with a ring around it isn't that tough to clean - wipe ring while it's still warm with a paper towel, squirt some dish detergent into pot, and it's clean!

Not quite OT, but a "live and learn" lesson on corned beef. A million years ago, when I got first microwave... big, heavy thing. Since it was a new "toy" used it for a lot of things as I learned what worked and what didn't. Actually attempted to cook corned beef in it!! Technically, it was "cooked" in no time, but turned into a rock solid hunka meat. Ended up dumping it into a big pot and boiling... like I had been taught. It took that long simmer to get it to being tender. Luckily, short spin in microwave didn't destroy it, and meal was salvagable.

There is no one way to cook corned beef. Do a Google search and you will see. Just a metter of preference.

Corned beef cares about two conditions, how hot and how long.

I have done corned beef many ways (except microwave LOL ).

Recently, I prefer sous vide corned beef. (yes, in a plastic bag)

135 F for 48 hours. At this temperature, medium rare corned beef is truly juicy and tender. There is no need to cut across the grain, which I classify as making the meat chewable but not tender.

At 135 F, I had measured, the shrinkage is less, which means juicier meat.

Agreed Dcarch. I've done CB a number of ways. However, boiling and submerged in liquid is not one of them.

That does not mean it is wrong for others if that is what they prefer - IMHO.

Simmered with a moderate amount of liquid on the stove top or in the oven in a covered pot works well also.

I stopped cooking the vegetables in the pot with the meat a long time ago. I take one cup of the cooking liquid and another cup or two of water and braise the vegetables in that. They still have the flavor of the corned beef but aren't salt laden.

And I have baked it in a bag or in a foil covered pan with a small amount of liquid. When I use either of those methods do a water bath the day before to remove some of the salt.

Many ways to do corned beef and have it turn out delicious!
