want homemade spices grill rubs

Looking for different ways to make your own homemade grill rubs from spices to use on chicken, pork chops, fish, steak, etc. Could you post your favorites here? Don't need exact measurements just the mixtures to create fascinating taste. Thanks in advance!

I make one that I use on everything, however the recipe was written for grilled chicken..

Smokey BBQ Dry Rub
2 t smoked Paprika
2 t kosher salt
1 T sugar (I use raw.)
1/2 t freshly ground black pepper
1/2 t cumin
1 t garlic powder
1/2 t chile powder (I used Ancho Chile and plus a generous sprinkle of Mexican Oregano.)
1/2 t cayenne
Yields: About 3 Tablespoons

I make this times 4 and keep in tin to have on hand.

I use this as a base than add other spices depending on my mood (I've used cumin, cayenne, allspice, cardamom, chinese 5 spice - not all at once :)

3 tablespoons paprika
1 tablespoon garlic powder
1 tablespoon brown sugar
1 tablespoon dry mustard
3 tablespoons kosher salt

Then there is KatieC's roasted garlic and tomato soup, it's yummy. I add cream when I open a jar and have cream of tomato soup, plus I use it as a pasta sauce in a pinch! Please remember, though, if you're going to can it, don't add the cream when it gets canned, it gets added later when the jar is opened and used. Roasted Tomato Garlic Soup Recipe By :Katie 12 tomatoes -- *see Note 2 carrots -- cut in 1" pieces 1 large onion -- quartered 2 whole heads garlic -- peeled (or more, to taste) olive oil 2 cups chicken broth -- (or 3) 1/2 cup chopped fresh basil -- (or 1 Tbsp. dried) cream -- to taste Core tomatoes and cut in half. Place, cut side up, on foil covered cookie sheet with carrots, onion and garlic. Brush with olive oil. Bake at 400F for about an hour, or until vegies are roasted and a little blackened. Place in a large saucepan with the chicken broth and basil and simmer for about 10 minutes. Blend with a stick blender (or in small batches in a blender) until almost smooth. Add cream to taste. To can: Process in a pressure canner, pints for 60 min. and quarts for 70 min.For dial gauge canners use 11 pounds pressure at 0-2000 ft., 12 lbs. at 2001-4000 ft., 13 lbs. at 4001-6000 ft. and 14 lbs. above 6000 ft. For weighted gauge canners use 10 lbs. pressure at 0-1000 ft., and 15 lbs. over 1000 ft. *Note: These measurements are approximate...I use whatever it takes to cover the cookie sheet. I agree with David on the method; we did almost the same thing this weekend. However, it might take longer to smoke because of the fat cap. The point has an inner fat cap that you can't get rid of unless you cut the point in half (and then it's more difficult to smoke). When smoking a whole brisket, the amount of time needed to smoke the whole thing allows for more of the fat cap to melt down. Using part of the brisket changes your method. Ann - tell Elery (sorry for the misspelling in the first post!) that you want the flat for pastrami and he can have the point for the smoker. His Texas BBQ will turn out just fine with the point. The upside is you won't have 12 pounds of Texas BBQ to deal with (not that it's a bad thing). Brisket done right is one of my favorite cuts of meat! I will have to try homemade pastrami as well!

I find spice blends helpful in cooking low sodium foods for my husband. I like Tony Cachere's Salt Free blend and Penzey's Mural of Flavor along with its Adobo, the Singapore, and the Jerk. I also like Chef Paul Prudhomme's Magic Salt Free Seasoning. My favorite Chili powder blend is Grandma's, but it's becoming harder & harder for me to find. And I'm another who likes Sun curry powder. I found my favorite and most used blends quite by accident and in an unexpected store. I discovered several really good salt-free blends at Cost Plus World Market. I've been using their Chicago Chop & Steak blend for grilled meats. The Thai Spice blend is great sprinkled on Asian inspired dishes. I've used the Greek Mediterranean blend on roasted asparagus and chicken. I like it a lot better than Cavender's Salt Free Greek seasoning or Penzey's Salt Free Lamb seasoning. I've used the Garlic Pepper blend on all kinds of things, including last week's rib roast. The Cal Mex & the Fajitas blends are great for Mexican inspired dishes. The Jerk Chicken & Fish blend is tasty too. And the Key Lime blend has a spicy & tangy citrus kick to it. To tell the truth, I wasn't expecting much, but I'm really impressed with the flavors.

I can't think of any sauces I buy, other than plain canned tomato sauce. I often make marinara sauce, white sauce & salad dressings - do those count? Does salsa fresca? I haven't in a very long time, but I used to make an orange/cumin peanut sauce for cold noodles that we loved. As for a spice, if I had to choose just one it would have to be black pepper - fresh ground. I put that on just about EVERYTHING. I make my own spice blends, but 2 I buy & try to always keep on hand are Crazy Mixed-Up Salt (fantastic for roast beef) & Spike (awesome on fish). I grow fresh herbs as well: rosemary, Italian parsley, marjoram, oregano, garlic chives, winter savory, basil, lemon grass & spearmint, & use them freely. Until last week, I had a little bay tree & used a lot of fresh bay leaves too. (Hubby cut the tree down by mistake, but I salvaged branches full of leaves & have enough to last quite awhile, until I find a new tree.) And I love tarragon & smoked paprika = ) ETA: donna_loomis's post below reminded me I also keep Frontier Co-op's curry powder on hand as well - so great for roast chicken, chicken salad & squash soup.

Diane Home Cookin Chapter: In a Jar Dustcatchers Crafts ,dressings, dips & spice blends

Memphis Rub
===========
1/4 cup paprika
1 tablespoon firmly packed dark brown sugar
1 tablespoon granulated sugar
2 teaspoons salt
2 teaspoons accent (MSG; optional)
1 teaspoon celery salt
1 teaspoon freshly ground black pepper
1 to 3 teaspoon cayenne pepper, or to taste
1 teaspoon dry mustard
1 teaspoon garlic powder
1 teaspoon onion powder
. Combine all the ingredients in a jar, twist the lid on airtight, and
shake to mix. Store away from heat or light for up to six months. Makes
about 1/2 cup. Enough for 2 racks of ribs.

Pseudo Bay Seasoning

1 tbsp ground bay leaves
2 1/2 tsp celery salt
1 1/2 tsp dry mustard
1 1/2 tsp black pepper
3/4 tsp ground nutmeg
1/2 tsp ground cloves
1/2 tsp ground ginger
1/2 tsp paprika
1/2 tsp red pepper
1/4 tsp ground mace
1/4 tsp ground cardamom

Combine all ingredients: store in an airtight container.

Lemon Herb Rub

4 1/2 tbsp. Basil
1 1/2 tbsp Celery seed
3 3/4 tbsp Oregano
1 1/2 tbsp Basil
1 1/2 tbsp Powdered black pepper
1/2 tsp Granulated garlic
1 1/2 tbsp Granulated onion
1/2 tsp Lemon rind, grated
