High altitude tips?

I realize some of you won't consider this that high an altitude, but it's a lot higher than anywhere I have lived before. I'm right at 5000 ft. and in "high desert" climate. (Which, if you don't mind dry skin, has the advantage of things not molding as fast as in the humid south and your chips don't go stale.)

I notice that things take for-flipping-EVER to cook here. I'm assuming I'm in for some surprises when I finally decide to do some baking.

Any tips?
