I suggest you have the stove checked....at 5,000 you should not really notice any difference at all.
For a lot of years I cooked for a week or so at almost 10,000 feet....and really the only difference I noticed was that it was awfully easy to get a "mucky" hard boiled egg if you didn't remember to almost double the cooking time, boiled potatoes wre sort of iffy, they tended to fall apart before they cooked on the inside and angel hair pasta worked better than linguini for the same reason. Bread rose high and proud in very short order....and for brownies and such I bought a mix from the locql grocery stores and they were already adjusted for the altitude.
But the difference in roasting a turkey or grilling a steak was not worth mentioning.
Except for boiled eggs and bread, you really shouldn't notice any difference at 5000 feet.

Things do take longer to cook than at sea level - including baking as well - so you have to adjust your time/temps accordingly. Cooking isn't much different aside from some longer cook times but baking is kind of trial and error - I followed a bunch of different guidelines when I first moved to high altitude, some were helpful, some not - depended on the recipe. There are some recipes of my Mom's I have given up on at high altitude, they just don't work - but most things work fine. Plus it always gives you a good excuse when things go wrong "darn that altitude!" ;)

Linda, you may be onto something there with the stove check. I hadn't thought of that! This house sat empty for over a year, and I doubt MIL was doing much cooking the year prior to that. Now that you mention it, I have noticed a couple things about the stove that made me go "hmmm". I chalked it up to having electric the last five years and that I was just forgetful about the quirks of gas appliances. There's plenty of flame and it appears to be the "right" color, but the jet pattern seems odd.

And since I'm cooking for one I've not roasted any meats, but the very things you mentioned -- eggs, potatoes and pasta -- have been the main problems!

I am only about 3200 feet higher than you and I don't notice any real difference Except with baking. I use a book called Pie in the Sky and it has breakdowns for each recipe for sea level, 3000, 5000 7000 and 10,000 feet. So far, everything I've baked from it has turned out great. Even the little muffins I made rose nicely. Haven't tried any breads besides quick breads yet.
I add more salt to boiling water...almost forgot that part.
I thought the price of the book was high at $40 so I just keep checking it out from the library.

Oh, it's a long and boring tale!

The Reader's Digest Condensed version is that my MIL talked us into it. She had serious health issues over the past two years. At one point it was serious enough to trigger her medical power of attorney, which is held by DH. Fortunately, she had given us explicit instructions about her wishes several years ago -- a conversation I strongly suggest EVERYONE have with their families. Still, trying to manage her healthcare long-distance was a nightmare and there was no way either of us could leave our jobs. DH finally strong-armed FMLA time, but that's unpaid and a nightmare of a different sort.

MIL has since recovered beyond our wildest hopes, for which we are very grateful. Meanwhile, our situtation had changed, and there was no longer anything to keep us in KY. We started thinking about moving closer to DH's family. We were kicking around the idea of NM or CO when MIL offered to rent us her house until the real estate market recovers. It is a win-win solution for all of us. MIL doesn't have to worry about a house that's too much for her to tend anymore, we don't have to worry about selling our place before we can find another, and DH doesn't have to worry about me being stranded BFE while he's on the road for work. I, of course, worry about everything, but that's just what I do. LOL!

DH is still back east until the house in KY sells. Neither of us is thrilled with that part of the deal, but you do what you have to do. With any luck, he'll be able to tie up those loose ends, negotiate a transfer with his job and join me here within the next year.

Thanks for the update, once again it's been a wild ride! I'm glad to hear that your MIL is doing so well. I'm negotiating the waters a bit right now with my dad (and mom) but they only live 5 minutes from here! It's very hard to be so far away, I saw that with my grandparents. My dad finally moved his mom out here just so he could oversee her care.
I'm glad that things are going well and hopefully Mike can visit over the holidays. It sounds like his job is a solid one, so for that I'm sure you're grateful! Do you have to cook at all for your DMIL? Where is she living now?

In any case, I'm glad you're back to add your humor and knowledge to the CF.

MIl is living nearby. She recently "graduated" from assisted living and now has the cutest little condo. She wanted to be near her medical team and new friends. I see her once a week, and she will sometimes let me cook for her. Mostly she wants to go out to eat, though. I suspect she feels deprived of cheese, gravies and sweets when I cook. LOL!

You know, I knew that one day we would be dealing with elder care issues, just not so soon! Fortunately, when she assigned her MPOA to DH, they had a long talk about her wishes and expectations should anything happen. When it looked like she might not make it, having that information really helped us focus. Then when DH took this job, we knew he and I needed to have that same conversation. We all want to think we will live forever; I've never met anyone yet who has managed to do it.

Yep, it's not a glamorous job, but it's honest work and so far no one has figured out how to outsource it! LOL!

Darn, I seem to remember that you or Mike have family in the Ft. Collins area. That would have been great - so would C. Springs. I'm in Boulder.

But it sounds like it is indeed a win-win situation and I hope that your home in KY sells quickly so you can be together.

I can tell you one thing I've already learned about high altitude: Don't buy chips in Nebraska and take them over high passes. When the d@mn bag explodes next to your head at midnight in the middle of nowhere, it will take ten years off you life in a nanosecond! For about five seconds we didn't know if we were being shot at or had lost a tire.
