mounting sinks on soapstone countertops

We have the countertop people coming tomorrow to do a digital measurement for our soapstone countertops. We will have two sinks: one prep sink in stainless steel (undermount), and our main sink is a farmhouse sink. The farmhouse sink is very heavy (double bowl quartz), and we had the cabinet built to completely support it. The countertop people said they will take both sinks with them and "mount" them to the soapstone.

I am very nervous about the added strain to the soapstone having to carry the weight of the sinks. Vermont Soapstone even has DIY instructions for undermount sinks without screwing/bolting them to the soapstone.

Does anyone have any knowledge/information as to whether it is really necessary to mount the main sink to prevent water leakage (as they claim), or even the other one? Couldn't they just cut the counter with a 1/4" overlap and do a clear caulk to seal it off for the farmhouse sink and mount the prep sink like at vermont soapstone and caulk that as well?
