Walk, Turkey Talk

It has been said that if you analyze the physics of the act of walking, you may not think walking is possible.

Likewise, the physics and chemistry of cooking a turkey is so theoretically complicated. Perhaps you should not be concerned about it; if you do, you may decided to give up making a well cooked turkey all together. :-)

The property of a turkey:

Turkey has two kinds of meat, i.e. white (breast) and dark (thigh/leg). Ideally white meat should be cooked to about 155 to no more than 160 degrees F, and the dark meat to about 180 degrees F. otherwise the turkey will get tough and dry.

To begin with, meat is mostly water, and water boils at 212 degrees F. (ignoring salt changes boiling temperature somewhat) Therefore, it makes no difference what temperature you roast you turkey in, you can never get more than 212 degrees F in the meat. The purpose of high heat in the oven is really to crisp the skin.

Meat is a very poor conductor of heat, that�s why it takes a few days to thaw a frozen turkey in the refrigerator. To expect 212 F to reach deep inside the turkey�s 40 degree inside and raise it to 160 F will take a few hours, and in doing so a lot of the meat will get too tough and dry. It is an unavoidable fact that you will need lots of good gravy to help out.

It is even trickier if you stuff the turkey. Some uncooked juice may get inside the stuffing and can be a health problem unless you totally cook and dry out the meat to get to a safe temperature. And how do you cook the dark meat and white meat at different temperature and the skin at very high heat to crisp it in the same oven?

There are many things you can do to help make things better; one of the most useful tools to use is heat conducting pins.

Metal conducts heat much faster, therefore allowing temperature to reach deep inside the turkey faster without over cooking the meat outside too much.

I have also made some heat pins using a different technology, namely heat pipes.




Heat pipe is a very interesting thing. It conducts a great deal of heat even more than bare metal using a different thermodynamic concept. Heat pipes are in use for many applications and for many years. One of the uses is in heat removal of CPUs in laptops and computers. You can buy CPU heat pipe cooling devices (shown in picture) really cheap on eBay.

For some reason, this great technology has not been used in cooking heating pins. I have salvaged many of them and I have been using them for heat pins in cooking meat that requires a great degree of temperature control, such as cooking turkeys.
