Chili for dinner tonight to celebrate

the safe return of all 33 miners!!!

(and to use up some of the 16 pounds of turkey dh bought LOL)

Such a great idea and so thoughtful! It's a wonderful story and we've been watching all day.

Definitely something you can make a ton of and freeze.

I didn't cook the dinner I was going to, but we had ham, baked sweet potatoes, green beans and pineapple casserole. Harry had bought an 11 pound ham just before the kids came (sometimes I wonder where that boy's mind is) and there was tons of it leftover, even after a meal and sandwiches a few times for lunch. Talk about growing, I swear that ham is magic! It's a spiral cut, so I cut most of the meat off the bone and sealed the bone for soup. Then I sealed a nice piece for ham and scalloped potatoes. Had some pieces left that will be good in an omelet or quiche. Plus lots left over from dinner. We have to start eating our frozen leftovers. There are more of those in the freezer than food to cook.

I hope you ladies don't think I am crazy but last night Jan set out a pack of pork chops to thaw. As it neared supper time Jan was busy doing something so I decided I would cook supper tonight. I thought about frying them, but that was too much grease, then I thought about grilling them but the grille is out of gas so I opted to bake the chops. I began by making my own shake & bake type rub. 1/4cup white flour 1/4cup Italian flavored bread crumbs 1 TBS course ground black pepper 1 Tsp Curry Powder 1/2Tsp Garlic powder 1/2 Tsp chilli powder 1Tsp granulated sugar Put all that in a bag, mixed thoroughly, then I brushed the chops with Canola Oil and put in the bag one at a time to coat with the rub and place on a baking sheet. Mixed up a pan of Jiffy cornbread mix and put that in a bag and preheated the oven to 400 for the cornbread. Tossed both the corn bread and chops in the preheated oven for the prescribed 18 minutes for the cornbread, and I figured I would keep an eye on the chops till they browned nicely. Success, they took 22 minutes to cook. While they were baking I took a can of baby limas and a can of whole kernal corn, drained them and mixed in a pan, covered with milk, added a few pats of butter and put them on to low simmer, avoiding a scald on the milk. At about 10 minutes they were nicely heated so I mixed 1/2tsp of cornstarch in cold water and added that to thicken the broth to make succotasch. Baked a couple small potatoes in the nuke and made us each a small side salad of iceburg lettuce, leaf lettuce, cucumber slices, green pepper, onion and tomato wedges. (vinegar & oil on mine). For dessert I mixed two cups of bisquick with a bit of sugar added and just layed it out in one big piece on a cookie sheet and baked it about 2" thick. Chopped up a quart of fresh strawberries, added some sugar and laddled that over 3x3" squares of the bisquick cake for strawberry shortcake. Finished off with plenty of black coffee and now I am stuffed...LOL Jan was so pleased with that stupid rub for the chops that she made me write the recipee in her book..LOL Actually, I love playing in the kitchen and someday I might even get a cookbook to see how your supposed to do it.

Thanks for asking. Really pretty simple. I take malted butter and add minced garlic. Dip dried chicken pieces in that . Then in a mixture of equal parts freshly grated Parmesan and bread crumbs, I use panko if I have it. that has been seasoned with Italian seasoning , pepper. I didn’t add salt as the parm tends to be a bit salty. However, I am a salt pig so I would have if I wasn’t worried about the health aspect. Let that chill for a bit then bake. I prefer chicken thigh. anyway, the kids love it.

Last night was more interesting - chickpea ravioli filled with smoked gouda and poblano pepper, tossed with a little butter/olive oil mix and some parmesan. Pretty tasty! Plus an apple and some grapes. Got the ravioli at Aldi. Today is leftover homemade multi- bean & vegetable soup, stock made from beef bone. I may make some cornbread to go with - haven't had any in ages.

With all of the awful things going on in the news this was really uplifting! I too watched much of it on the news.

However, I am celebrating with a small glass of Ficklin Tinta Port.

THEY DID IT!!!!!!! And the last rescue worker is OUT!! Thank G-d all are safe!! Now I can go to bed. It's been riveting to say the least.

I can't wait to read the book...of which I am sure there will be. I cried when I watched it.

L2C46, I had the "live" broadcast going on the computer as I baked wedding cakes. I could tell as they brought each man up by the clapping and the chant.

I was up until they brought up the last rescuer, then I went to bed content, with the wedding cakes all crumb coated to boot.

No chili, I'm too busy to make any, but I was sure thinking happy thoughts for those men and their families.

Ha, I too made chili and never even thought about it in this context until I read this thread.

apparently I made it a bit too spicy. Well, I said, I ran out of supermarket chili powder so used some from the bulk bin at the hippie store.

Well, they said, you used that excuse last time too.

And now I can no longer find my chilpote pepper package!

We watched too...at the office and when I got home. I can't imagine being trapped that long under ground. I've been on a few cave tours over the years but no way in heck would you find me signing up to work in one or simular conditions. Sad to hear about the mistress and all....what a way to find out. Oy! I'm guessing there will be a feature on Discovery or another show in a year or so...and or a book/movie. I'm just glad to know they are all safe and home with family and friends.

Jessy, just google Chile Miner #21 and you can view a video of his assent and greeting his mistress - talk about awkward.

And apparently he wasn't the only one, just the only one who had his secret broadcast around the world.

David, can't wait to see a documentary. It was riveting to say the least. I cried buckets in those 24 hours.

I heard on NPR this morning that they all agreed not to tell too much to the press as they are all going to cooperate as a group to share in all benefits from their story. I'm sure there will be a book, movie, and lots of public appearances. Let's see... Bruce Willis to play Miner #21?

In all seriousness, it IS a miracle they all came out alive! Great news!
