Such a great idea and so thoughtful! It's a wonderful story and we've been watching all day.

Definitely something you can make a ton of and freeze.

You have to forgive my recipe for I'm one that cook without measuring. I just eyeball the quantity. This time, I tried and managed to write it down. For the vegetables: celery, carrots, garlic and onion, you can add or subtract from this recipe to your like. I also use ready made flour tortillas for dumplings. It does come out as dumplings. I put 4 servings as in soup bowl servings. I have no idea how much is considered a serving and it depends if one eats alot or not. This recipe is definetely more than 2 servings though. Here's my recipe for Chicken 'n Dumplings using a crockpot: Natalie's Chicken 'n Dumplings 4 servings Ingredients: 3 boneless chicken breasts (thawed or frozen) 1 can (10 ¾ oz.) condensed Cream of Mushroom + same 1 can of water 1 can (10 ¾ oz.) condensed Campbell's Chicken Noodle Soup + same 1 can of water (May substitute with chicken broth. Using the same empty can cream of mushroom measure 2 full cans of broth) 3-4 cloves of garlic, chopped ½ onion, chopped 1 stalk or 8-10 ribs of celery, sliced 4-6 carrots, sliced or 1 small bag (1 lb.) of baby carrots, halved. 15-20 small size (about 6"-7") ready made flour tortillas, cut up in about 2" squares. Don't need to separate them too much if they stick together. Salt & Pepper to taste Instruction: In a crockpot, add in all the ingredients except for the tortillas. Stir it up a little. Cook on High for 4 hours or on Low for 8 hours. At the last 30 minutes (it doesn't matter whether you've been setting it on high or low), take the chicken breasts out and shred them in small to medium size or desired size. After 10 minutes (from time of taking out the chicken), put back the chicken in the pot and add the tortillas. Stir it up and turn the crockpot on High and cook for the last 20 minutes. Add salt and pepper to taste. Note: The sauce will thicken some more with the tortillas. Enjoy! Natalie

I have a couple of suggestions..... Chicken Chili from Ina Prep Time: 15 min Inactive Prep Time: hr min Cook Time: 1 hr 45 min Level: Easy Serves: 6 servings 4 cups chopped yellow onions (3 onions) 1/8 cup good olive oil, plus extra for chicken 1/8 cup minced garlic (2 cloves) 2 red bell peppers, cored, seeded, and large-diced 2 yellow bell peppers, cored, seeded, and large-diced 1 teaspoon chili powder 1 teaspoon ground cumin 1/4 teaspoon dried red pepper flakes, or to taste 1/4 teaspoon cayenne pepper, or to taste 2 teaspoons kosher salt, plus more for chicken 2 (28-ounce) cans whole peeled plum tomatoes in puree, undrained 1/4 cup minced fresh basil leaves 4 split chicken breasts, bone in, skin on Freshly ground black pepper For serving: Chopped onions, corn chips, grated cheddar, sour cream Cook the onions in the oil over medium-low heat for 10 to 15 minutes, until translucent. Add the garlic and cook for 1 more minute. Add the bell peppers, chili powder, cumin, red pepper flakes, cayenne, and salt. Cook for 1 minute. Crush the tomatoes by hand or in batches in a food processor fitted with a steel blade (pulse 6 to 8 times). Add to the pot with the basil. Bring to a boil, then reduce the heat and simmer, uncovered, for 30 minutes, stirring occasionally. Preheat the oven to 350 degrees F. Rub the chicken breasts with olive oil and place them on a baking sheet. Sprinkle generously with salt and pepper. Roast the chicken for 35 to 40 minutes, until just cooked. Let cool slightly. Separate the meat from the bones and skin and cut it into 3/4-inch chunks. Add to the chili and simmer, uncovered, for another 20 minutes. Serve with the toppings, or refrigerate and reheat gently before serving. ****************************************************** Crockpot Chicken Tortilla Soup Place in crockpot 2 or 3 boneless, skinless chicken breast halves. You can easily skip the sour cream and cheese. Without draining anything, combine in bowl: 2 (15oz) cans black beans 1 (14.5 oz) can tomato sauce 2 (15 oz) cans Mexican stewed tomatoes (or Rotel) 1 (4 oz) can chopped green chilies 1 cup salsa, your preference as to strength Pour over chicken and cook on low 8 hours. Just before serving, remove chicken, shred it, and stir it back into the soup. Stir in: 1 can Niblets corn Heat just long enough to get corn and chicken hot. Serve topped with cheese, sour cream, and crushed tortilla chips. Or put the chips in the bowl first and ladle soup on top. Either way, YUMMY and so easy!

I didn't cook the dinner I was going to, but we had ham, baked sweet potatoes, green beans and pineapple casserole. Harry had bought an 11 pound ham just before the kids came (sometimes I wonder where that boy's mind is) and there was tons of it leftover, even after a meal and sandwiches a few times for lunch. Talk about growing, I swear that ham is magic! It's a spiral cut, so I cut most of the meat off the bone and sealed the bone for soup. Then I sealed a nice piece for ham and scalloped potatoes. Had some pieces left that will be good in an omelet or quiche. Plus lots left over from dinner. We have to start eating our frozen leftovers. There are more of those in the freezer than food to cook.

OMG, Jinx, that’s exactly what I told DH I wanted for our birthday dinner this Saturday night! Seriously 😂! Our birthdays are just 4 days apart (4th & 8th) and so, with no indoor dining here still and him pushing no meats, I told him last night that I wanted all of those- lobster tail, crab legs and (my favorite) Creamy Orange Jalapeño Scallops- for our celebratory dinner. DH laughed, but I’m getting at least two! Come on over and you can eat and celebrate with us!

With all of the awful things going on in the news this was really uplifting! I too watched much of it on the news.

However, I am celebrating with a small glass of Ficklin Tinta Port.

L2C46, I had the "live" broadcast going on the computer as I baked wedding cakes. I could tell as they brought each man up by the clapping and the chant.

I was up until they brought up the last rescuer, then I went to bed content, with the wedding cakes all crumb coated to boot.

No chili, I'm too busy to make any, but I was sure thinking happy thoughts for those men and their families.

It's truly amazing. I can't wait for a documentary going into detail on the engineering of it all. A miracle.

Ha, I too made chili and never even thought about it in this context until I read this thread.

apparently I made it a bit too spicy. Well, I said, I ran out of supermarket chili powder so used some from the bulk bin at the hippie store.

Well, they said, you used that excuse last time too.

And now I can no longer find my chilpote pepper package!

We watched too...at the office and when I got home. I can't imagine being trapped that long under ground. I've been on a few cave tours over the years but no way in heck would you find me signing up to work in one or simular conditions. Sad to hear about the mistress and all....what a way to find out. Oy! I'm guessing there will be a feature on Discovery or another show in a year or so...and or a book/movie. I'm just glad to know they are all safe and home with family and friends.

Jessy, just google Chile Miner #21 and you can view a video of his assent and greeting his mistress - talk about awkward.

And apparently he wasn't the only one, just the only one who had his secret broadcast around the world.

Peppi, Lol. Maybe he did;)

David, can't wait to see a documentary. It was riveting to say the least. I cried buckets in those 24 hours.

I heard on NPR this morning that they all agreed not to tell too much to the press as they are all going to cooperate as a group to share in all benefits from their story. I'm sure there will be a book, movie, and lots of public appearances. Let's see... Bruce Willis to play Miner #21?

In all seriousness, it IS a miracle they all came out alive! Great news!
