Need pumpkin raisin muffin recipe

Saw on another post about baking pumpkin raisin muffins in the jumbo muffin tins.

These muffins sounded so good!

Please share your recipe, aptosca and jojo or anyone else who has a good one?

You can substitute pecans or walnuts for some or all the raisins. Or also use dried cranberries. Makes 36 muffins. I divided it by 3 to get only 12. Or 6 jumbo.

Pumpkin Raisin Muffin
Ingredients
3 cups sugar
1 cup oil
4 eggs
2 cups canned pumpkin
3 1/2 cups flour
1 teaspoon baking powder
2 teaspoons baking soda
2 teaspoons salt
3 1/2 teaspoons pumpkin pie spice
2/3 cup water
1 cup raisins

Directions
Mix oil& sugar. Add eggs& pumpkin. Sift all dry ingredients & add alternately with water to pumpkin, mixing well. Stir in raisins.
Pour into greased muffin tins& bake at 350 degrees for 30 minutes.

Trudy (and Clare),

I make the same recipe as Clare, but with a few modifications (don't we all?) I cut the sugar to two cups and use chocolate chips instead of raisins. (welcome back, missing sugar).

I also do not add baking powder.Clare is also more exacting in her methods; I don't sift, and I just dump the mixed dry into the wet.

The recipe is wonderful. Clare, my yield is exactly 12 jumbo muffins, filled about 3/4 in the tin.

Sounds like my aunt's recipe. Spice cake mix, a can of pumpkin mixed into the dry mix, bake as directed. Kat added a bit of pumpkin pie spice, probably a tsp or less, and some crushed pineapple, probably drained. My aunt has even made the recipe and made cookies instead of a cake with it. Tami

Frankly that list of chemicals sounds more than gruesome to me!! Wading through all the colorants and preservatives I come up with a muffin made from flour, pumpkin, sugar, canola oil water and eggs with baking soda and baking powder with cinnamon and spices. Since I don't go to dunkin' donuts except for coffee now and then...I don't know what spices. I suspect that the trick lies in the streusel topping with a powdered sugar glaze on top. I would start with the recipe below...it has lots of oil so it should be moist....and top with streusel before baking and then drizzle with frosting. Good luck! PUMPKIN MUFFINS 3 1/3 c. flour 2 tsp. baking soda 3 c. sugar 1 1/2 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg 1/4 tsp. ground ginger Mix dry ingredients and add: 1 c. oil 4 eggs 2/3 c. water 2 c. pumpkin Preheat oven to 350F degrees. Prepare muffin tins by greasing with vegetable oil or butter and sprinkling lightly with flour. Shake out excess. Fill muffin tins three-quarters full and bake at 350 degrees for 20-30 minutes or until toothpick inserted in center comes out clean. Frost with Orange Icing or Cream Cheese Frosting.

Here ya go: PUMPKIN PECAN MUFFINS 1/4 cup oats, quick-cooking (not instant) 1/3 cup chopped pecans 1 tsp. cinnamon 1/2 tsp. salt 1 cup pureed pumpkin 1/2 cup oil 1 egg 1 cup all-purpose flour 1 tsp. baking powder 1/2 tsp. baking soda 1/2 tsp. nutmeg 3/4 cup brown sugar 1/4 cup milk 1 tsp. vanilla TOPPING: 1/4 cup oats, quick-cooking (not instant) 1/4 cup brown sugar 1 tsp. cinnamon 1/4 cup all-purpose flour 3 Tblsp. chopped pecans 1/4 cup margarine, softened Heat oven to 400Â° F. Mix together and fill muffin cups 3/4-full. Mix topping and sprinkle evenly over top of muffins. Bake 20 minutes.

Made the muffins and they are very tasty.
Recipe made 30 very full reg. sized muffins. Used choc. chips, 1/4 cup milled flax seed and used 1 1/2 teaspoon cinnamon, 1 teaspoon nutmeg and 1 teaspoon allspice for the pumpkin pie spice.
The spices gave the muffins a great flavor.
Will certainly make these muffins again soon!
