Need Good Recipe for 'Breakfast Muffin'

I am looking for a good breakfast muffin to take to a little party that is being held for an elderly man that is going into a home. It is a morning coffee club so want something that is related to breakfast. Have seen some recipes with bacon and ham in them, has anyone tried any of these????

Any help would be appreciated.

I have a great breakfast cookie recipe with cornflakes, raisins (opt), bacon, etc. Really good. Made it quite a few times.

If U want I'll post the recipe.

It's just a quiche recipe I already had. It had too much oil (completely removed below) in it and not enough eggs. You're probably better off coming up with your own, but here you go! Since it's such a modified recipe, I'll write it as I am making it, rather than how it started: Crab breakfast muffins Ingredients: 2 tablespoons all-purpose flour 4 eggs, beaten 1/2 cup milk 1 cup crab meat 1 cup shredded Swiss cheese 1/2 cup chopped green onions 1/4 t salt 1/8 t pepper 1/8 t old bay Directions: 1.Preheat oven to 350 degrees F (175 degrees C). 2. In a medium bowl, beat together eggs, flour, milk and seasoning until thoroughly blended. Stir in crab, cheese, and onion. Divide among 8 muffin cups. 3. Bake for 30 minutes, or until a knife inserted in the center comes out clean. _____________ this go around I added 1/3 of red pepper and a few mushrooms cut into small pieces. I think the time is off too. But I am not sure what it is. So keep an eye on them in the oven.

Source: MORE Make-A-Mix Cookery - by Karine Eliason, Nevada Harward & Madeline Westover MOLASSES & BRAN MUFFIN MIX 1-cup dry buttermilk powder 1-1/2 c. whole wheat flour 1-1/2 c. unbleached all-purpose flour 2 T. baking soda 1 T. salt 1-1/4 c. packed brown sugar 6 c. whole-bran cold cereal (the brand that looks like worms) 6 T. molasses In a large bowl, combine buttermilk powder, whole wheat flour, unbleached flour, baking soda and salt. Stir with a wire whisk to blend. Press brown sugar through a coarse sieve. Use a wire whisk to stir brown sugar into flour mixture until evenly distributed. Process whole bran cereal in blender 1 cup at a time until coarse crumbs form. Stir cereal crumbs into flour mixture. Slowly pour molasses over mixture while stirring with a wire whisk or with a heavy-duty mixer on low speed, until evenly distributed. Spoon into a 10-cup container with a tight-fitting lid. Attach lid. Label container with date and contents. Use within 12-weeks if stored at room temperature or within 6-months if stored in refrigerator or freezer. Makes about 10 cups. Bran-Ana Muffins (To make plain bran muffins, omit the banana and add one more egg.) 1 egg, slightly beaten 1 c. mashed bananas 1/4 c. vegetable oil 3/4 c. water 3 c. MOLASSES & BRAN MUFFIN MIX Grease 12 large muffin cups. In a medium bowl, combine egg, mashed bananas, oil and water, beating with a wire whisk to blend. Add MUFFIN MIX all at once, stirring until just moistened. Batter will be lumpy. Let stand 10-minutes to soften bran. Preheat oven to 400-degrees F. Fill each prepared muffin cup 2/3 full with batter. Bake 15 to 20 minutes in preheated oven until golden brown and a wooden pick inserted in center comes out dry. Makes 12 large muffins. Grainlady note: You can easily make half-recipes of both the mix and the muffins.

You can substitute pecans or walnuts for some or all the raisins. Or also use dried cranberries. Makes 36 muffins. I divided it by 3 to get only 12. Or 6 jumbo. Clare Pumpkin Raisin Muffin Ingredients 3 cups sugar 1 cup oil 4 eggs 2 cups canned pumpkin 3 1/2 cups flour 1 teaspoon baking powder 2 teaspoons baking soda 2 teaspoons salt 3 1/2 teaspoons pumpkin pie spice 2/3 cup water 1 cup raisins Directions Mix oil& sugar. Add eggs& pumpkin. Sift all dry ingredients & add alternately with water to pumpkin, mixing well. Stir in raisins. Pour into greased muffin tins& bake at 350 degrees for 30 minutes.

Here are 2 of my favorites: BLUEBERRY MUFFIN CAKES (makes 18) 1/2 cup sold shortening 1 1/2 cups sugar 2 eggs 2 1/3 cups flour 1/2 tsp salt 2 1/2 tsp baking powder 1/2 tsp nutmeg 3/4 cup milk 1 1/2 cups fresh blueberries, rinsed & dried 1 stick butter, melted 1/4 tsp cinnamon Preheat oven to 350Â°. Cream the shortening until light & fluffy. Gradually beat in 3/4 cup of the sugar. Beat in the eggs one at a time. Mix the flour w/the salt, baking powder & nutmeg. Alternately add the dry ingredients & milk to the egg mixture beginning & ending w/the dry ingredients. Fold in the berries. (I roll them lightly in flour first so they don't sink.) Spoon the batter into greased or paper lined muffin tins, filling them 3/4 full. Bake 20-25 minutes. Romveo the muffins from the pans & cool slightly. Meanwhile, mix the cinnamon w/the remaining 3/4 cup sugar. Roll the muffins in melted butter, then in the cinnamon sugar.~~Tested, Tried & True. Ã¯Â¿Â½1 cup of flour
Ã¯Â¿Â½1/4 teaspoon baking soda
Ã¯Â¿Â½2 cups of multi-grain flakes or corn flakes

Preheat oven to 350 degrees. Cook bacon until very crisp, drain well and break into 1/2 inch pieces. Beat together butter and sugar till light and fluffy. Beat in egg. Combine flour and baking soda; stir into butter mixture. Stir in bacon, mult-grain flakes and raisins.

Drop by rounded teaspoonfuls onto ungreased cookie sheet. Space 2 inches apart. Bake for 15-18 minutes. Remove to rack to cool--about 2 minutes, then remove from rack.

1/2 cup raisins U can leave out the raisins. Bet craisins would be good.
Preheat oven to 350 degrees. Cook bacon until very crisp, drain well and break into 1/2 inch pieces. Beat together butter and sugar till light and fluffy. Beat in egg. Combine flour and baking soda; stir into butter mixture. Stir in bacon, mult-grain flakes and raisins.

Drop by rounded teaspoonfuls onto ungreased cookie sheet. Space 2 inches apart. Bake for 15-18 minutes. Remove to rack to cool--about 2 minutes, then remove from rack.

The Blue bery muffins Ivamae post a while back are very good.

Blueberry Muffins - makes 9 large ones.
The batter is very thick

1 1/2 cups all purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk ( approximately - see below)
1 cup fresh blueberries ( I used half of the pint container.)
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 & 1/2 teaspoons ground cinnamon

1. Preheat oven to 400 degrees F. ( I had it just a wee, wee bit less)

2. Grease muffin cups or line with muffin liners.

Combine first 4 ingredients.
Place vegetable oil into a 1 cup measuring cup, add the egg and fill the rest of the cup with milk.
Mix this with the flour mixture. I just stirred it in. I did not use the electric mixer as it is very stiff.
Fold in the blueberries.

It says to fill the muffin cups right to the top. I didn't fill them quite that much. Sprinkle with the crumb mixture.
3. To make the crumb topping: mix together the last 4 ingredients and mix with a fork ( I used my one hand to finish crumbling it.) Sprinkle over the muffins before baking.
4. Bake for 20 to 25 minutes ( I found 22 was about right) in the preheated oven or until done.

It is so very easy and they freeze well, too.

These are my fav's
Dolly
Orange Muffins

2 whole oranges with peels still on
1 cup orange juice
1/2 cup oil ( I use olive oil)
2 eggs
3 cups flour... Half white, half whole wheat
2 Tablespoons baking powder
2 teaspoons baking soda
1 cup sugar..1/2 cup for diabetics
1/2 cup raisins..cut raisins if diabetic
1/2 cup chopped walnuts or nuts of your choice.

In blender or food prosesser combine, oranges cut in pieces, juice,
oil and eggs until well blended.
Combine four and all dry ingredient in a large bowl. Add orange mixture and mix well.
Fill muffin tins 2/3 full and bake at 375 F for 25 minutes.
Makes 1 dozen large muffins or 2 dozen medium muffins.

Try these in a bread pan to bake, They make a nice loaf.
Test with toothpick, if it comes out clear it's done.
