Need Good Recipe for 'Breakfast Muffin'

I am looking for a good breakfast muffin to take to a little party that is being held for an elderly man that is going into a home. It is a morning coffee club so want something that is related to breakfast. Have seen some recipes with bacon and ham in them, has anyone tried any of these????

Any help would be appreciated.

I have a great breakfast cookie recipe with cornflakes, raisins (opt), bacon, etc. Really good. Made it quite a few times.

If U want I'll post the recipe.

Lynn, your list of breakfasts is amazing, but what's even more incredible these days is that you make it a priority to sit down as a family for breakfast. It's such a rarity in our fast-paced world. Growing up we always sat down as a family for breakfast and I have fond memories of that. Our children ate on the run, for the most part, but did have something before leaving the house, even if I handed it to them on their way out the door! Here's a recipe for steel-cut oatmeal done in the crockpot overnight: Slow Cooker, Apple Cinnamon Steel-Cut Oatmeal By Monica Servings: 5 1-cup servings Ingredients 2 apples, peeled, cored, cut into 1/2-inch pieces (2-1/2 to 3 cups chopped) 1-1/2 cups fat-free milk 1-1/2 cups water 1 cup uncooked steel-cut oats 2 tablespoons brown sugar 1-1/2 tablespoons butter, cut into 5-6 pieces 1/2 teaspoon cinnamon 2 teaspoons ground flax seed 1/4 teaspoon salt Optional garnishes: chopped nuts, raisins, maple syrup, additional milk or butter Directions Coat inside of 3-1/2 quart (or larger) slow cooker with cooking spray. Add all ingredients (except optional toppings) to slow cooker. Stir, cover, and cook on low for 7 hours. Spoon oatmeal into bowls; add optional toppings, if desired. Store leftovers in refrigerator. Freezes well. To reheat single servings: Put 1-cup cooked oatmeal in microwave proof bowl. Add 1/3 cup fat-free milk. Microwave on high for 1 minute; stir. Continue cooking for another minute, or until hot. Recipe can be doubled in 6-quart or larger slow cooker. Increase cooking time 1 hour.

I've made these. Perhaps they are what you seek. The lemon is subtle, there are ground almonds and almond extract as well as ricotta. And I probably posted it on a ricotta thread. Nonna's Lemon Ricotta Biscuits (muffins) from Giada de Laurentiis Prep Time: 15 minutes Cook Time: 20 minutes Yield: 12 muffins 1 1/2 cups plain flour 1/2 cup ground almonds (or extra 1/2 cup flour) 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1 cup plus 1 teaspoon sugar or more as needed for sprinkling 1/2 cup (1 stick / 115 grams) unsalted butter, room temperature 1 tablespoon finely grated lemon zest (from 2 lemons) 1 cup whole-milk ricotta cheese 1 large egg 1 tablespoon fresh lemon juice 1/2 teaspoon almond extract 1/3 cup thinly sliced almonds (optional) Line 12 muffin cups with paper liners. Preheat the oven to 350 degrees F/ 175 degrees C. Whisk the flour, baking powder, baking soda, and salt in a medium bowl to blend. Using an electric mixer, beat 1 cup sugar, butter, and lemon zest in a large bowl until light and fluffy. Beat in the ricotta. Beat in the egg, lemon juice, and almond extract. Add the dry ingredients and stir just until blended (the batter will be thick and fluffy). Divide the batter among the prepared muffin cups. You can substitute pecans or walnuts for some or all the raisins. Or also use dried cranberries. Makes 36 muffins. I divided it by 3 to get only 12. Or 6 jumbo. Clare Pumpkin Raisin Muffin Ingredients 3 cups sugar 1 cup oil 4 eggs 2 cups canned pumpkin 3 1/2 cups flour 1 teaspoon baking powder 2 teaspoons baking soda 2 teaspoons salt 3 1/2 teaspoons pumpkin pie spice 2/3 cup water 1 cup raisins Directions Mix oil& sugar. Add eggs& pumpkin. Sift all dry ingredients & add alternately with water to pumpkin, mixing well. Stir in raisins. Pour into greased muffin tins& bake at 350 degrees for 30 minutes.

loves2cook4six, here is what I did. Super easy. I based it on a few recipes I found, plus what I had in my house, so feel free to personalize it, too. A lot of recipes call for ham, which we don't eat, but I bet it's good. I had some roasted pepper strips in my "goodies" drawer in the freezer, and that added color and flavor. Mushrooms and asparagus would be great, too. Just make sure to pat whatever you use dry. Enjoy! Gellchom Jr.'s Favorite Mini-Stratas about 3 cups cubed bread (I used a country white, including crusts) 3/4 cup (or more) shredded cheddar chopped roasted sweet red and green peppers (and/or raw peppers, pimiento, mushrooms, asparagus, or whatever you have on hand) a few sliced scallions (or you could use any onions) 3 eggs 3/4 cup milk (I used skim) pinch each salt and pepper In a bowl, toss together the bread cubes, cheese, vegetables, and scallions. Divide evenly among greased muffin cups or ramekins. Whisk together eggs, milk, salt, and pepper. Pour over bread to soak thoroughly. Cover with plastic wrap and refrigerate for at least 4 hours or overnight (up to about 16 hours). Bake at 350F (180C) for about 25 minutes, or until set. Let stand for 5 minutes.

Ã¯Â¿Â½1/4 teaspoon baking soda
Ã¯Â¿Â½2 cups of multi-grain flakes or corn flakes
Ã¯Â¿Â½1/2 cup raisins U can leave out the raisins. Bet craisins would be good.
Preheat oven to 350 degrees. Cook bacon until very crisp, drain well and break into 1/2 inch pieces. Beat together butter and sugar till light and fluffy. Beat in egg. Combine flour and baking soda; stir into butter mixture. Stir in bacon, mult-grain flakes and raisins.

Drop by rounded teaspoonfuls onto ungreased cookie sheet. Space 2 inches apart. Bake for 15-18 minutes. Remove to rack to cool--about 2 minutes, then remove from rack.

The Blue bery muffins Ivamae post a while back are very good.

Blueberry Muffins - makes 9 large ones.
The batter is very thick

1 1/2 cups all purpose flour
3/4 cup white sugar
1/2 teaspoon salt
2 teaspoons baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk ( approximately - see below)
1 cup fresh blueberries ( I used half of the pint container.)
1/2 cup white sugar
1/3 cup all-purpose flour
1/4 cup butter, cubed
1 & 1/2 teaspoons ground cinnamon

1. Preheat oven to 400 degrees F. ( I had it just a wee, wee bit less)

2. Grease muffin cups or line with muffin liners.

Combine first 4 ingredients.
Place vegetable oil into a 1 cup measuring cup, add the egg and fill the rest of the cup with milk.
Mix this with the flour mixture. I just stirred it in. I did not use the electric mixer as it is very stiff.
Fold in the blueberries.

It says to fill the muffin cups right to the top. I didn't fill them quite that much. Sprinkle with the crumb mixture.
3. To make the crumb topping: mix together the last 4 ingredients and mix with a fork ( I used my one hand to finish crumbling it.) Sprinkle over the muffins before baking.
4. Bake for 20 to 25 minutes ( I found 22 was about right) in the preheated oven or until done.

It is so very easy and they freeze well, too.

These are my fav's
Dolly
Orange Muffins

2 whole oranges with peels still on
1 cup orange juice
1/2 cup oil ( I use olive oil)
2 eggs
3 cups flour... Half white, half whole wheat
2 Tablespoons baking powder
2 teaspoons baking soda
1 cup sugar..1/2 cup for diabetics
1/2 cup raisins..cut raisins if diabetic
1/2 cup chopped walnuts or nuts of your choice.

In blender or food prosesser combine, oranges cut in pieces, juice,
oil and eggs until well blended.
Combine four and all dry ingredient in a large bowl. Add orange mixture and mix well.
Fill muffin tins 2/3 full and bake at 375 F for 25 minutes.
Makes 1 dozen large muffins or 2 dozen medium muffins.

Try these in a bread pan to bake, They make a nice loaf.
Test with toothpick, if it comes out clear it's done.
