About a bushel of apples and pear cardamom jam

We went to Apple Hill today, our local apple growing locale. I got 2 bushels of apples - one winesap and one braeburn. They had the second grade for $12 a bushel. I sent some home with one son and will send some home with my daughter-in-law so we will have about a bushel.

What should I do besides apple butter? I was thinking of making some apple jelly but I've never made jelly before so I'm kind of hesitant there. I've always made jams or preserves - it seems such a waste to just use the juice. If you make apple jelly, do you do anything with the pulp?

I also got half a bushel of pears and want to make pear cardamom jam but how much cardamom should I use? Does anyone have a recipe? I prefer recipes that don't call for additional pectin.

Meanwhile, I'm going to start working on an apple pie.
