LOU...How about your recipe for Sunday Gravy please

I thought the one I had was yours but it was actually from another 'American of Italian descent'. He sure has your attitude tho! and makes me think of the NY midshipman I once sponsored. His family always had 'macaroni' with 'gravy' on Sunday. I learned from him that macaroni was any type of pasta and gravy was...well a hearty ragu with an assortment of meat.

When it gets cold down here, I'll be ready ...with your help please!! Maureen

Just wing it and add whatever spices that you like.

Pizza Sauce and Spaghetti Sauce ( Gravy )
I used Pizza Sauce which is crushed Tomatoes and Puree, with Basil.
You can use canned tomatoes but make sure they are Italian or a deep red color.
Some choices are Contadina , Red Pack , HuntÂs , All Red, = Tutto Rosso.
A lot of others are sort of orange, red color.

Try 1 large can of crushed tomatoes and 1 can of tomatoe Puree.
You have to spice to your own taste.
Start with 3/4 teaspoon of garlic pwd.
(add more later to taste)
1 tablespn. of onion powder. 1 teasp. Salt.
3 teasp. Sugar ( add more if too acidy ).
An Italian pinch of pwd.cloves.
3/4 teasp. Oregano ( or to taste ) it is strong.
1 teaspoon of Parsley,
1/2 teasp. basil.
1/4 teasp. black pepper.
Â½ teaspoon + of ( Chicken flavored Soup Base )
Large handful of Parmasan Cheese, after cooking about 1/2 hour. Add water if it is too thick.

Continue for Spaghetti Sauce

This recipe can be used for Spagetti Sauce ( maybe you would want to cut down on the Oregano )
also just add a can of Tomatoe Paste and water to thin a little ,
if it is too thick it will burn easily. It will thicken as it cooks.
ADD: Â½ cup of fine chopped Onion.
And 3 bay leaves . Don't forget the Chicken flavored Soup Base.
Add uncooked Meatballs, Sausage and Chicken Thighs, when you start cooking. (cook at least 1 Â½ to 2 hours )
Take the chicken out when it is done. ( About 1 hour )

Add the Parmasan Cheese after the sauce is cooked & stir
ALSO !!! season to your own taste. Add more or less of what you like.

I usually cook about 4 times this much at a time
so I can put some in the freezer and give out some care packages.

I bake about 50 meatballs at a time and freeze them until I make Gravy.
Sometimes I throw the meatballs in uncooked.
When the Sauce is cooked ,I let it cool and take the fat off the top.

Oh Lou...thanks so much. (You must think I'm a brat for not answering sooner. I didn't set the 'send to me' and forgot what I'd asked for.) It suddenly hit me....oh baby, better look for it or Lou will send those blasted deer south and they'll eat my fig tree!

??? What are the pasta things in the picture? I WANT ONE...or Five!!

I'll test this out when we get back from the ocean...or the shore if you want to hear it in PA-speak. ;-) Maureen

Lastly, I cannot believe how the word "Ick" offended others when no offense was meant at ALL. You all don't know me, but I'm known as the "Peace maker". Sure, I get my feelings hurt just like everyone else does, and I hate arguments especially if they're so trivial as me laughing and saying "Ick." I find it extremely rude to correct people on something so minor especially when it's obvious there was no intent on insulting anyone. I said it good heartedly. Just as I said the word "Yankee." Others have been calling themselves Yankees on this board all the time, but when I say it, it's considered offensive? I just get the feeling that some people here, but not all and just a minority, love to nitpick and bicker with others ad nauseum. We were having a fun and fascinating conversation about sandwiches and Miracle Whip vs. Mayonaise, until... I even found a place that sells the Mayo the "southerners" here like that I can order it online. Now, as far as being southern, I think I said this before. Both of my parents were born and raised in southern Virginia, and moved here to Oklahoma after they married. My father is a graduate of VA. Tech. Every single person in my family except my brother and myself are from Virginia. My uncle had a tobacco farm. I grew up with parents dipping cornbread in Buttermilk. ICK!!!! lol. See? I'm laughing about it, I still laugh at it to my mom when she does it! It's not a derogatory term because it's FOOD. But if you were to serve it to me, I'd be polite and eat it and if I didn't like it, you'd never know. Talking about food tastes is one thing and to turn it into nasty, nasty personal insults is another. Which I know you didn't do. I do however take offense because you are insinuating I am not "sophisticated" because I don't like fruit and nuts in my sandwiches. What? You have no idea what I eat. BTW, if anyone even cares at this point, I decided to make some Vegetable Bars and Tuna Salad finger sandwiches. :)

I find that potatoes absorb all the flavor and leave the meat bland. I cook them separately. I don't add any fat to the pan but put the meat in the very hot pan, let it sear and turn it when it releases. If you leave it alone until it is ready to release you will be able to turn it without tearing the browned bits off. Sear all sides then add chopped onion, several cloves of crushed garlic, herbs and carrots if you like them. I often add either fresh Italian plum tomatoes or a can of whole tomatoes, in which case my herbs will be thyme and oregano. Cover and simmer for an hour or more. Cool the meat completely in the fridge. Remove from pan and slice across the grain, return slices to pan, cover slices with the gravy, cover with tight lid and simmer for another hour. Slicing the cold meat and returning to simmer guarantees a tender, not stringy pot roast. You can cook pot roast without adding any liquid. After searing and adding the herbs and aromatics cover tightly and cook over low heat. The meat will release its own juices.You can adjust seasonings according to your own tastes. There is nothing in the world like a well cooked, tender pot roast and there are many ways to accomplish it, but slicing against the grain is essential. I don't know why. This I learned from my mother in law and I have never seen it to fail.

Trudy: " Traditional " is my favorite way also. Thought everyone went to Salting , High Heat method. Nice to see I'm not alone. I usually make mine with Stuffing, sometimes with chopped up and simmered Sausage mixed in it. Stuffing ( Double for Turkey ) 1 Celery stalk, (10in. Piece ) and Â½ of a Med. l onion (chopped small) and Cooked in Micro Wave until tender (about 2 Â½ min.) Some Bell Pepper may also be added. In a large Bowl mix: 1 cup of small bread cubes 2 cups of Italian Bread crumbs 1 tablesp. Parsley Flakes 2 tablesp. Of Locatelli Romano grated cheese 1 teasp. Of Onion Powder 1 teasp. Of Garlic Powder ( or more to taste ) 1/2 teaspoon of Old Bay Seasoning Salt to taste ( about Â½ teaspoon ) Optional- 1 piece of Italian Sausage 10 in. long, skinned and cut into small pieces. Sautee till medium rare. Add the cooked Onion and Celery. Put 1 egg into a cup of chicken stock , or Chicken Soup Base ) beat well and mix this into the other ingredients. Add a little water, if the mixture is too dry. Add more sausage or whatever you like. Baking the Turkey: I use a Waterless cooker and Bake until the inside stuffing temperature reaches 165 Degrees. Take the lid off for the last 1/2 hour , to brown. I just rub oil on the turkey and sprinkle with Onion and Garlic Powder. Put 1/2 cup of water in the bottom and let her rip. Always Good !!! Hi Ellen, here it is! I hope your friend likes it, I'm making mine right this minute (I don't use the giblets, I think they're ick). Make-Ahead Turkey Gravy Makes about 2 quarts For more flavor, after roasting the turkey you can skim the drippings from the pan and add them to the gravy just before serving. It's best to discard the strong-tasting liver before using the giblets. This recipe makes enough to accompany a large turkey and still have plenty for leftovers. 6 turkey drumsticks, thighs, or wings reserved turkey giblets reserved turkey neck 2 carrots , chopped coarse 1 head garlic , halved 2 ribs celery , chopped coarse 2 onions , chopped coarse Vegetable oil spray 10cups low-sodium chicken broth 2 cups dry white wine 12 sprigs fresh thyme 1/2 cup all-purpose flour Table salt and ground black pepper 1. Adjust oven rack to middle position and heat oven to 450 degrees. Place giblets, neck, drumsticks, carrots, celery, onions, and garlic in roasting pan, spray with vegetable oil, and toss well. Roast, stirring occasionally, until well browned, 1 to 1 1/2 hours. 2. Transfer contents of roasting pan to Dutch oven. Add broth, wine, and thyme and bring to boil over high heat. Reduce heat to low and simmer until reduced by half, about 1 1/2 hours. Pour through fine-mesh strainer into large container (discard solids), cover stock with plastic wrap, and refrigerate until fat congeals, at least 2 hours. 3. Using soup spoon, skim fat and reserve. Heat 1/2 cup fat in Dutch oven over medium-high heat until bubbling. Whisk in flour and cook, whisking constantly, until honey colored, about 2 minutes. Gradually whisk in stock, bring to boil, reduce heat to medium-low, and simmer until slightly thickened, about 10 minutes. Season with salt and pepper. (Gravy can be refrigerated for up to 3 days or frozen for up to 2 months.) Reheat gravy in saucepan over medium heat until bubbling.

Maureen: They took my wife from the hospital to a Hospice
Facility.
The doctors don't give her much more time.
She really went down in the past 2 weeks.

Lou, I checked this thread to try your gravy, a friend says sauce, another says gravy, I always thought gravy, too! I'll be trying this, it looks so good! Copied and pasted.
