LOU...How about your recipe for Sunday Gravy please

I thought the one I had was yours but it was actually from another 'American of Italian descent'. He sure has your attitude tho! and makes me think of the NY midshipman I once sponsored. His family always had 'macaroni' with 'gravy' on Sunday. I learned from him that macaroni was any type of pasta and gravy was...well a hearty ragu with an assortment of meat.

When it gets cold down here, I'll be ready ...with your help please!! Maureen

Just wing it and add whatever spices that you like.

Pizza Sauce and Spaghetti Sauce ( Gravy )
I used Pizza Sauce which is crushed Tomatoes and Puree, with Basil.
You can use canned tomatoes but make sure they are Italian or a deep red color.
Some choices are Contadina , Red Pack , HuntÂs , All Red, = Tutto Rosso.
A lot of others are sort of orange, red color.

Try 1 large can of crushed tomatoes and 1 can of tomatoe Puree.
You have to spice to your own taste.
Start with 3/4 teaspoon of garlic pwd.
(add more later to taste)
1 tablespn. of onion powder. 1 teasp. Salt.
3 teasp. Sugar ( add more if too acidy ).
An Italian pinch of pwd.cloves.
3/4 teasp. Oregano ( or to taste ) it is strong.
1 teaspoon of Parsley,
1/2 teasp. basil.
1/4 teasp. black pepper.
Â½ teaspoon + of ( Chicken flavored Soup Base )
Large handful of Parmasan Cheese, after cooking about 1/2 hour. Add water if it is too thick.

Continue for Spaghetti Sauce

This recipe can be used for Spagetti Sauce ( maybe you would want to cut down on the Oregano )
also just add a can of Tomatoe Paste and water to thin a little ,
if it is too thick it will burn easily. It will thicken as it cooks.
ADD: Â½ cup of fine chopped Onion.
And 3 bay leaves . Don't forget the Chicken flavored Soup Base.
Add uncooked Meatballs, Sausage and Chicken Thighs, when you start cooking. (cook at least 1 Â½ to 2 hours )
Take the chicken out when it is done. ( About 1 hour )

Add the Parmasan Cheese after the sauce is cooked & stir
ALSO !!! season to your own taste. Add more or less of what you like.

I usually cook about 4 times this much at a time
so I can put some in the freezer and give out some care packages.

I bake about 50 meatballs at a time and freeze them until I make Gravy.
Sometimes I throw the meatballs in uncooked.
When the Sauce is cooked ,I let it cool and take the fat off the top.

Oh Lou...thanks so much. (You must think I'm a brat for not answering sooner. I didn't set the 'send to me' and forgot what I'd asked for.) It suddenly hit me....oh baby, better look for it or Lou will send those blasted deer south and they'll eat my fig tree!

??? What are the pasta things in the picture? I WANT ONE...or Five!!

i've made sausage grav by crumbling pork sausage,rendering the fat(discard some if too much)cooking the flour in the remaining and add warmed milk...i never measure... was so dissapointed when we went for chicken dinner in frankenmuth mi, and they had canned gravy!

Thank you for replying, I wasn't going to come back into the topic but it's been bothering me all day because all I did was jokingly say "Ick" to a food I don't like. What I notice here is that others have made rude comments about Miracle Whip, a food *I* use, but were they called out on their "rudeness" to me? No. Why is it ALWAYS me, especially when I go out of my way to let you all know I'm laughing, just as I would if you were sitting before me. I'm not laughig AT you, I'm laughing at an ingredient in food! I have to disagree with you about people adding the ingredients that I specifically asked NOT to be added. I'm not saying this to be mean, but I was the one who wanted some recipes which do not use fruits and nuts. It's no different than if you did a topic on the other forum asking for painting advice on any color EXCEPT black, and everyone replied showing you their black rooms. lol. So I don't see how it was wrong for me to RME when I got the recipes with fruits and nuts. When we do a topic asking a specific question, should others reply for the sake of themselves, or to answer the OP's question? Lastly, I cannot believe how the word "Ick" offended others when no offense was meant at ALL. You all don't know me, but I'm known as the "Peace maker". Sure, I get my feelings hurt just like everyone else does, and I hate arguments especially if they're so trivial as me laughing and saying "Ick." I find it extremely rude to correct people on something so minor especially when it's obvious there was no intent on insulting anyone. I said it good heartedly. Just as I said the word "Yankee." Others have been calling themselves Yankees on this board all the time, but when I say it, it's considered offensive? I just get the feeling that some people here, but not all and just a minority, love to nitpick and bicker with others ad nauseum. We were having a fun and fascinating conversation about sandwiches and Miracle Whip vs. Mayonaise, until... I even found a place that sells the Mayo the "southerners" here like that I can order it online. Now, as far as being southern, I think I said this before. Both of my parents were born and raised in southern Virginia, and moved here to Oklahoma after they married. My father is a graduate of VA. Tech. Every single person in my family except my brother and myself are from Virginia. My uncle had a tobacco farm. I grew up with parents dipping cornbread in Buttermilk. ICK!!!! lol. See? I'm laughing about it, I still laugh at it to my mom when she does it! It's not a derogatory term because it's FOOD. But if you were to serve it to me, I'd be polite and eat it and if I didn't like it, you'd never know. Talking about food tastes is one thing and to turn it into nasty, nasty personal insults is another. Which I know you didn't do. I do however take offense because you are insinuating I am not "sophisticated" because I don't like fruit and nuts in my sandwiches. What? You have no idea what I eat. BTW, if anyone even cares at this point, I decided to make some Vegetable Bars and Tuna Salad finger sandwiches. :)

I never used to use the same recipe twice, I'd vary it although I usually used a guideline. I kind of liked a pizza flavored meatloaf and would use pizza type seasonings, mozzarella cheese cubes in it sometimes, a little bit of pizza sauce for one type, served with garlic bread and fries or potato wedges. Another time I used Marcia Adam's recipe for a guideline. I'd use what's on hand. I really like meatloaf. If you don't overseason it, it's hard to goof it up. The one thing that's not tolerable to me is the inch of ketchup or tomato sauce on top. That's gross. I like gravy and mashed potatoes most of the time with it. I think it's important to mix meats in there. I happen to like pork sausage (Jimmy Dean type), ground beef, some pepperoni and bacon. I used to use turkey but got some very unattractive stuff and was put off by it so I don't use it anymore. I don't keep oatmeal around or I might use that on occasion. Many like it and I thought it was OK. To me, it's more a guideline than a recipe. Getting too exact can be problematic. More or less meat, more or less additives will all vary the result. In the link above I gave the listing of things I used in the last couple meatloaves I made and probably how I'll make it most of the time from now on unless I decide to go pizza/Italian style or something. You certainly can substitute for or eliminate the onion altogether. It's certainly flavorful enough or you could add something else if you want. Don't be afraid of it. Meatloaf and meatballs are basically the same thing. You can make meatloaf patties out of it too and cook quicker. Make several kinds. Enjoy them. Combine them. That's what I did when I came up with what I liked. There is no "best" recipe for me, since I like variety. So no "one" recipe will do all the time. Want something a little different? Put some hard boiled eggs in there or some cooked bratwurst or polish sausage. Makes for an interesting presentation when you slice it. I do have one problem making meatloaf. I can't seem to get the good crust on there my mom's meatloaf had and I like the crust! It helped with the thin layer of BBQ, essentially brushed on and then seasoned. I imagine the gas oven was dryer than my electric oven and definitely dryer than the Nesco so that's probably part of the problem. Good luck and happy testing!

This is so easy and so good! Eggs Benedict casserole 6 English muffins 10-12 ounces Canadian bacon (2 packages, or use diced ham) **I used diced ham 8 large eggs 2 cups reduced-fat milk (or whole milk) 1 teaspoon onion powder cooking spray 1/2 teaspoon paprika easy hollandaise sauce- (I just use package) How to make it -------------------------------------------------------------------------------- Cut muffins into 1/2-inch cubes. Set aside. Cut Canadian bacon into 1/2-inch squares. Set aside. Whisk the eggs well in a 2-quart bowl. Whisk in milk and onion powder. Spray a 9-by-13-inch glass or ceramic baking dish with cooking oil spray. Scatter half the Canadian bacon evenly in bottom of dish. Scatter muffin cubes on top of Canadian bacon. Top with the remaining Canadian bacon, scattering it evenly over the bread. Pour egg mixture over the casserole. Cover the dish with plastic wrap and refrigerate overnight, or at least 8 hours, to let bread absorb egg mixture. Preheat oven to 375 degrees F. Remove casserole from refrigerator and uncover it. Lightly sprinkle the paprika evenly over the top. Cover the casserole with foil and bake for 40 minutes. Remove dish from the oven, remove foil, return dish to the oven and continue to bake, uncovered, until the eggs are set and the bacon on top begins to crisp, about 20 minutes more. Remove the casserole from oven and let it stand 5 minutes before serving. To serve, cut casserole into squares and place them on plates. Spoon about 2 tablespoons (or to taste) warm Hollandaise Sauce over each serving just before serving. Makes 10 servings.

Maureen: They took my wife from the hospital to a Hospice
Facility.
The doctors don't give her much more time.
She really went down in the past 2 weeks.
I appreciate all your concerns.

Lou, I checked this thread to try your gravy, a friend says sauce, another says gravy, I always thought gravy, too! I'll be trying this, it looks so good! Copied and pasted.

I've tried a couple of your recipes that were great, still have your cheesecake I need to try. The gravy is on my list now!
