Help me make dessert outta this??

Ok all you super dessert people...I am in no way a baker but I love dessert and I simply drool over the pics of desserts.

So I have some things on hand and try as I may I just wasn't gifted with the dessert gene.

So here is what I have.

Apples (granny smith)

Riccotta Cheese (about a cup)

Honey

Craisens (sp?)

Dried Papaya

Walnuts

Toffee chips

Chocolate chips

Flaked coconut

Peanut Butter

Fluff

assorted boxed cake mixes

I also have eggs, milk and butter.

Any Ideas???

Any oatmeal? I'd make an apple crisp - you can add the craisins to the apples.

4 medium apples, sliced (4 cups)
1/2 cup dried cranberries
3/4 cup packed brown sugar
1/2 cup all-purpose flour
1/2 cup quick-cooking or old-fashioned oats
1/3 cup butter, softened
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg

Heat oven to 375ÃÂºF. Butter bottom and sides of 8-inch square pan with.

Spread apples in pan. Sprinkle dried cranberries among the apples. In medium bowl, stir remaining ingredients until well mixed; sprinkle over apples.

Bake about 30 minutes or until topping is golden brown and apples are tender when pierced with a fork. Serve with ice cream or cream.

One of my favorite muffins, because the ricotta adds some protein..Chocolate Ricotta Muffins You can toss in the chocolate chips, toffee chips, craisins, coconut or walnuts..They are rich enough to be a dessert too..spread with a bit of butter or cream cheese for extra "delightful"..

You could also do a "stewed" topping for cake or ice cream.

Chopped apples, dried mango, cranberries and walnuts...in a sauce pan with a bit or water, wine or juice.

A little brown sugar or honey for sweetness..taste and warm until the apples are cooked and the mango is soft.

Oh boy! I am so glad it finally arrived! This is the all time greatest book of Italian bread and pastry. The method of making the starter will make a bread that is better than any crusty bread you would find in the Bronx, NY. Deanna, the recipe for Ciabatta on page 106 is wonderful - you will impress your friends! Also, my favorite biscotti recipe is on page 409(I usually double the recipe)- I add the grated zest of one orange and 1/2 teaspoon of orange extract too...also, biscotti are great with a native to your area dessert wine....and there is the Panettone and Pandoro recipes to try...Carol Field is a wonderful writer-she really shares her love of Italian baking through the history and research to the reader. My Nonna was a great bread baker - from little "bird's" she made that held hard boiled eggs for Easter to her pane d'casa...many of these recipes recipes remind me of her. I'm so sorry Scarlett. I think perhaps he is on the wrong drug cocktail. Unfortunately with psych meds it really is trial and error finding the right combo that works. And it is hard trying several different times to get it right and then waiting 4-6 weeks to start seeing changes from the meds. Don't give up, my heart goes out to you. From what I've read on this post my gut is telling me, OCD-BiPolar I'm not so sure?It's very easy to misdiagnose the creative artistic personality-The creative mind truly works and views the world differently. I would lean more toward clinical depression/ocd, but those are just my thoughts..Are you comfortable with the psychiatrist he is seeing? Please don't be offended by my asking but does schizophrenia run in his family tree at all? It often manifests in early adulthood. Does he have hallucinations at all? These are questions I would ask your/his mental health care provider..early diagnosis is best of course. I feel his sadness and your worry/frustration.(((Big hugs))) ~Cat

I'll suggest this coconut cream cake; the recipe even says it's best the 2nd day! Here ya go: Coconut Cream Cake 1/4 Cup Oil, 9" x 13" Pan 1 White Cake Mix 1 1/2 Cups Water 2 Eggs 2 Cups Cream of Coconut 8 oz. Cool Whip Pour oil in pan and roll to sides and bottom. Pour out excess. Mix cake mix, water, eggs and 1 cup Cream of Coconut with hand mixer on high until smooth. Pour into pan. Batter will be runny. Bake at 350 for 30 minutes. After baking, poke holes in top of cake with fork while hot. Pour 1/2 cup Cream of Coconut over holes. Cool in refrigerator at least 1 hour. FROSTING: Mix Cool Whip and 1/2 cup Cream of Coconut. Spread over cake and refrigerate. Tastes better the 2nd day.

Thank you again for all the recipes and well wishes. As long as berries are in season, I will continue to try them out. We have a parade of guests scheduled to visit through Labor Day who will be grateful to sample them ;) I ended up going with Olychick's Fresh Raspberry Glacé Pie. I had a barely-worked, perfectly crimped crust in the pie pan ready to chill before baking. I tipped it sideways over the sink to brush off a tiny bit of flour that was on it and..plunk..it plopped out of the plate. I made a quick save & caught it in my hand but reworking it back onto the plate made it look less than perfect. Nonetheless, it was delicious and met with rave reviews from my family who came to celebrate!

This cobbler is great and you could easily add craisins to it.

Apple Walnut Cobbler
Source BH&G January 1997

5 c tart apples, peeled and thinly sliced
3/4 c chopped walnuts
3/4 c sugar, divided
1/2 tsp ground cinnamon
1 c all purpose flour
1 tsp baking powder
1 egg, beaten
1/2 c evaporated milk
1/3 c butter or margarine, melted
Half & Half or light cream (Optional)
Preheat oven to 325F. Lightly grease an 8x8 square baking dish. Spread the apples in prepared baking dish. Sprinkle with 1/2 c walnuts, 1/4 c sugar and the cinnamon. In medium mixing bowl, stir together the flour, 1/2 c sugar and baking powder.

In small bowl, combine the egg, milk and melted butter. Stir egg mixture into the dry ingredients until smooth. Pour evenly over the apples, sprinkle with remaining walnuts.

Bake 50-55 minutes or until toothpick inserted in center comes out clean. Serve warm, cut into squares. If desired, serve with half & half or cream.
9 servings
You could also whip up a couple of the cake mixes and make a layer cake with fluff in between and topped off with a chocolate glaze made from the chips. Then chop the toffee chips up and sprinkle on top. Linda
