Vinaigrette proportions and creamy ones

I have periodically looked at vinaigerette recipes on line and while all somewhat similar I have found that the oil to vinegar proportions are alll over the place. Ina Garten has one that is like 1/2 cup oil and 3 tlbs vinegar which seems like way too much oil.

I know at some point it becomes personal preference but....,.

Is there a starting point? I do tend to like vinegary/tart so

1/2 oil to 1/2 vinegar? Or does it depend on other ingrediants? Like mustard?

Also - I was looking to make a creamy vinegrette and most seem to just add mayo. I don't keep mayo around (I rarely make potato salad etc. and for sandwiches I'm a Miracle Whip person). Can I use Sour Cream? Sour cream and yogurt?

I'm single and usually just make one serving at a time

Anyway if anyone has good rules of thumb or suggestions for creamy I'd appreciate it.
