German Apple Pancakes

This morning I made

German Apple Pancakes because we have a lot of apples on the tree in our back yard. I have another picture of it before I cut it, which I linked to below because I forgot how to use Photobucket.

Here's the recipe:

German Apple Pancakes

Pancake Batter

3 large eggs

1/2 tbsp pure vanilla extract

1/8 cup granulated sugar

3-1/2 Tbsp flour

3/4 tsp baking powder

Apples

1-1/2 tbsp unsalted butter

1-1/2 apples, peeled, cored, and cut into 1/4â slices

3/4 tsp ground cinnamon

1-1/2 tbsp granulated sugar

(I used tart Fiji apples, but if you use sweet apples, you may want to reduce the amount of sugar)

Batter

Using a stick blender (or regular blender), combine the eggs, vanilla, and sugar and blend for about 15 seconds, or until combined. Add the flour and baking powder and mix for one minute more, or until very smooth.

Apples

Preheat the broiler to 450ð. Heat an 8â skillet (I use cast iron, but you might want to use a non-stick version for easier cleaning) over medium heat and add the butter. Add the apples and sauté for 4 to 5 minutes, or until softened. Add the cinnamon and sugar, sprinkling them evenly over the apples, and stir for 2 minutes, or until the apples are glazed.

Assembly

Distribute the apples evenly in the skillet and pour the batter over them. Cook until the bottom seems quite firm, about 5 minutes. Transfer the pan to the broiler and, while watching carefully, cook until the pancake is firm throughout and golden on top. Loosen the edges, if necessary, and transfer to a plate, inverting the pancake so that the apples are on top. Divide into two servings.

Yield: 2 servings

Based on recipe from Röckenwagner (now know as Four Squares) in Venice, California. Original recipe calls for strawberries, powdered sugar, and crème fraîche as garnish, but these can be omitted. It also recommended a non-stick skillet, but I only have cast iron, and that worked well although I had to soak it to clean it afterward.

Kevin didn't say whether he like this or not, and so I had to ask him if he wanted me to make them again, since we have so many apples, and then he became a bit enthusiastic. Normally I get no response whatsoever as to whether he likes something. I'm posting this because it is apple season, and I thought someone might like an idea for how to use excess apples. The original recipe was slightly more than double this one and used a 12" skillet, but I only wanted to make two servings, and the 8" skillet fits in my toaster oven.
