Tea Sandwich Question

I am going to be making tea sandwiches and want to butter the edges of some and dip in chopped parsley. I have to make them a day ahead, and will put in a covered Rubbermaid container with waxed paper and damp towel in the fridge. Will the parsley still look good the following morning?

can you butter and dip them the next morning? I think that would be a fresher look.

It would be too difficult the next moring because I'll have other last minute things to do and they have to be ready by nine.

What a great idea for the next time my husband and I go for a road trip! I like to pack a lunch because when we travel anywhere, we like to stay off the freeways and go small, back highways, and finding a nice, scenic area to stop for lunch is part of the fun. We love cream cheese with minced dry salami & black olives. Tuna salad with my sweet pickle relish. Liverwurst or deviled ham with my crunchy sauerkraut. Cheddar cheese with roasted red bell pepper tapenade. Mmmmm, don't forget peanie bunkle (peanut butter) with really good jam. Egg salad with sweet&hot mustard. If I've any leftover broiled fish, like salmon or halibut, I like that minced, with fresh dill sour cream and maybe some green onions. Ruthanna, I love your idea of taking good tea as well. I used often to take a thermos of tea on road trips when I lived in the Bay Area, but I guess I'd got out of the habit living here in the Valley, where quite often it is too hot to consider a hot beverage...but this time of year, I should remember!

When you said you were having a "noah's ark cake" I assumed it would be a real cake, not a diaper cake. LOL! Lovely presentation....good thing 30 people didn't show up! You would have been raiding the pantry! Cookies or bars would have been a nice addition and made your sandwiches go farther. Linda C

Oh, this is bring back wonderful memories of the tea I took my DS and DGC to in London last April! We had tea at a wonderful hotel The Lanesborough. I've been there many times, and it did not disappoint. These are the finger sandwiches served: Egg (salad) and watercress H. Forman salmon and cream cheese Ham and aged cheddar cheese with honey mustard dressing Cucumber and mint Coronation Chicken They were fabulous! Coronation chicken salad is made with a bit of curry in it - just a tiny bit. It's SO good - best chicken salad ever! I also like VERY thinly sliced tomato sandwiches with just a tiny bit of mayo. A lot of the very expensive London hotels are now doing some rather non-traditional teas - guess to please the new, very wealthy young ones who destain anything traditional. Thanks, but no. Here in KY, tea sandwiches always include pimento cheese - SO good!

Every solution I can think of would mean covering up the pretty cherries. Maybe polka dot sandwiches? Arrange cherry slivers evenly on the bread to make nice spots, and put the cream cheese across the top of them. :) I keep thinking of that Dr. Seuss animal with the spots and circus dots. :)

I would guess the parsley would look a bit "wilted" and possibly beginning to brown on the cut edges.

If there is another task you can make ahead so you can dip the next morning I would have to agree that would be better.

How about you butter a piece of bread tonight, dip it in chopped parsley, and check to see how it holds up tomorrow morning?

Good idea Rachelellen except I don't have any parsley. I'll go get some tomorrow and try it tomorrow night. Stay tuned.

Reporting back: I made tea sandwiches yesterday and done the edges with chopped parsley. Today the parsley looked just as fresh, no dark edges or anything. I do know that the parsley had just been put out at the store so it was extremely fresh to begin with. I chopped it with a ceramic knife which also could have made a difference.
