8' Cast Aluminum Tortilla Press

I finally got one. I brought my husband to the dr. for an appointment and had 45 minutes to kill. It was in a trendy part of the city so I went for a stroll and came across a "kitcheny" store, went in asked if my chance they had a press. Well, he directed me further down the street, approximately 10 minutes to a kitchen store. Well, 20 minutes (one way) of very brisk walking with a baby strapped to me with another in a stroller and going uphill for half of it, to get to the store with 6 steps in the front, I went in and got my press. I used it yesterday and it doesn't work! I am furious. It bends around the dough and only presses to about 1/4 (if that) thickness. Needless to say, it has to be returned. They had a 6" press made out of cast iron. Do you think I should bother? Just wondering if I may getter a thinner tortilla out of it?

I have one of the cast iron presses, and it works fine. I've heard that there are some like yours, that don't do a good job, but I've never worked with one. However, I prefer my wooden one. They have them in the mexican grocery stores around here (Colorado). You might want to check them out, if you have access to one. Good luck!

Cookie definitely take it back. The Aluminum presses are worthless.

I bought a cast iron press a couple of years ago. Works great. I'm sure City Chef would ship to the US.

Gloria, Tortillas are best served fresh. I usually only make enough for one meal. Although if you have a few leftover, the best way to heat them is to wrap in a damp towel, put them into a plastic bag (unsealed) and microwave on 50% power for a couple of minutes. Are you making flour tortillas or corn? We had dinner Monday night with our neighbours and I made Mexican. I made about 24 corn tortillas. I kept them warn in the tortilla warmer that Gina gave me in a swap. Keeps them hot for hours. Leftover corn and flour tortillas can be cut into triangles and deep fried for "tortilla chips". Home Cookin Chapter: Recipes From Thibeault's Table Flour Tortillas =============== 2 cups flour 1/2 teaspoon salt 1 tablespoon to 1/4 cup lard/shortening 1 teaspoon baking powder 1/2 cup warm water (might need a bit more) . Place the flour, salt, baking powder in food processor and pulse to mix. Cut in the shortening and then add the warm water and process to make a soft dough. Dough should be soft but not wet and sticky. Wrap in plastic and let rest for at least 30 minutes. Divide dough into 10 or 12 pieces and shape into balls. Keep covered. Roll each ball out into a 7 to 9 inch circle. Dough should be thin. Cook on a dry hot grill or frying pan on medium heat, turning once. Do not over cook or they will be hard. Butter and roll up and wrap in teatowel to keep warm as you cook the other tortillas. (I place the ones wrapped in the towel in a low 200 oven to keep warm, while I am cooking the rest.)

WorldÂs Greatest Home Made Corn Tortillas MAKES EIGHTEEN 6-7 INCH TORTILLAS 1 1/2 cups, canned hominy (most of a 29-ounce can) - drained 1 1/2 cups, masa harina 1/4 teaspoon, salt 1 cup, hot tap water Puree the hominy in a blender or food processor. Mix thoroughly by hand (or process in food processor) the pureed hominy with the masa harina, salt and water until the dough gathers into a soft ball. Wrap the ball completely in plastic wrap until ready to use; set aside, or refrigerate for up to 1 day. When Ready to Use: Divide the dough into 18 golf-ball-size pieces. Cover with plastic wrap to keep the unused balls moist while rolling or pressing the others to make tortillas. To Form Each Tortilla: Place a ball of dough between two pieces of plastic wrap. Press with a tortilla press, or roll with a rolling pin, to make a 6-7-inch round disk if dough, between 1/16- and 1/18-inch thick. Set aside, in the plastic wrap until ready to cook. [Tortillas may be formed and refrigerated overnight.] Be sure to cover all resting dough with plastic wrap - it dries out very quickly! To Cook Tortillas: Heat a heavy, cast iron skillet, griddle, or comal over medium-high heat. Peel off the plastic wrap, and place the tortillas in the pan, one at a time (unless more will fit without overlapping). Cook for 30 seconds, turn over, then cook for 1 minute. Turn the tortilla over again to the first side and cook for 30 seconds, until the tortilla puffs slightly but is still pliable. Remove tortilla from pan. To Store Tortillas: They may be cooked in advance, stacked, wrapped in plastic and refrigerated overnight. Reheat just before serving. NOTE: If the edges of a tortilla crack when the tortilla is rolled out, press on the plastic wrap with your fingers - or cut the edges off with a sharp knife, to form even rounds.

tishtoshmn - LUCKY you finding PAN on clearance!!!! I thought about trying to make my own PAN, but I don't need another "make work" project just now (LOL). I make arepas about 2 or 3 times a year and freeze them. Hubby really likes them. I'll only eat them open-faced, not a top AND bottom. I thought about dehydrating canned hominy and milling it; and even have some dry white corn posole from Rancho Gordo I thought might work. I mill my own cornmeal so may need to explore the "how-to" a little more, but I thought milling the dried hominy or posole would be the least amount of work. I also have to limit my corn intake. When I make a wrap using one from Aldi (usually for an in-car travel lunch) - I cut the rolled wrap 2/3 and 1/3 and I eat the 1/3-portion and hubby eats the 2/3 portion. The longer I'm away from bread the better it is to live without it - rather than try to replace it. The wrap is just a "holder" for the contents, and I'm just as happy with a lettuce wrap. We ate at a Red Robin once and I ordered my hamburger without a bun, commenting how I'm gluten-sensitive, not gluten-intolerant, so not to worry about cross-contamination, and they served it with a bun, assuring me it was gluten-free. I took one bite and removed the burger off the bun. I just couldn't hack that much bread anymore!!! GAG ME! I'm better with a small slice of yeasted seedy-bread I make and use for toast, or paleo bread made into French Toast. Don't miss the sandwich. You, or someone else, mentioned galette some time ago. Calphalon 12" griddle pan for flour tortillas

Lars, good to know the Calphalon griddle is much lighter. Thank you! I had a few basic Calphalon pans years ago, but gave them all to Sam, while she was living in Nashville. I have an arsenal of cast iron pans, including two griddles. One is an 11½-inch Griswold, the other is 9 inches in diameter. I use them for everything, from sweet to savory pies, to cakes, biscuits, etc. I find a cast iron griddle yields a darn good crispy crust. Cast iron is unparalleled in baking, compared to the more common aluminum, glass, or ceramic pie pans, although utilitarian and not as pretty ☺ For pizza, I rarely preheat the pan. But I do grease it with garlic-infused olive oil, or butter, or a combination of both. Place ball of dough into the greased pan, then gently stretch it out with the tips of your fingers. Add toppings and bake in a hot oven (My oven only reaches 550° F., so, my pizza normally bakes in 8-10 minutes). This tomato tart baked in a cast iron griddle was posted on WFD a few years ago. I'll try to find one topped with pizza instead. The only drawback is the size of the pans. That's why I am curious about the Calphalon griddle, because I can't imagine wrestling with a larger cast iron pan. In any case, this thread had me craving homemade tortillas, so you can guess the rest. I should've hit the treadmill right after today's carb fest. Ann, do you make flour tortilla with yours? Yeah, it is going back.

cookie, I had a cast iron tortilla press, I eventually gave it away. I'd press out a tortilla, then lay it on the counter to roll it flatter.

Even the wooden ones and the cast iron ones don't make the tortillas as thin as I like them and the aluminum ones are completely worthless.

Cookie, no. Tortilla Presses are really for corn tortillas not flour. I roll out my flour tortillas by hand.

Annie, I haven't had a problem getting a corn tortilla thin using the press I bought. If they were any thiner they wouldn't bake properly.

Hmmm. Must be why I don't like corn tortillas as much as I do flour tortillas, they always seem too thick and keep that "chewy" texture. I want them thin, crisp and crunchy!

Once you've pressed the tortilla, you can always take a rolling pin and make it thinner.

I gave up the muss and fuss years ago and bought a tortilla press/cooker, so it presses the tortilla and cooks it at the same time. This is one of those tasks hubby actually likes to get involved in, and believe me, ANY kitchen gadget is worth it if you can get your husband interested in cooking (LOL).

The recipe for the tortillas below smell wonderful when they are cooking and have more nutritional value and fiber than regular recipes.... The link below is a really fun recipe for the kids. I like the bag method so much I use it for all my tortillas. I keep bags of the mix ready-to-make.

Wheat and Sesame Tortillas
(source: "Natural Meals In Minutes" by Rita Bingham)

2 c. whole wheat flour
3 T. dry milk powder
1/3 c. sesame seeds
extra flour for board
2 T. butter or applesauce
1/2 t. salt
2 T. yogurt
1/2 c. lukewarm water

Combine dry ingredients. Use hand or electric beaters to cut in butter or applesauce until mixture resembles fine crumbs. Slowly pour in water and yogurt, mixing lightly with a fork. On a floured board, knead dough until smooth and elastic, about 5 minutes. Shape into a ball, cover and let stand for 10 minutes.

Divide and shape dough into 8 balls. Cover, removing one ball at a time and roll paper-thin on floured board. Place on heavy, hot, ungreased skillet, over medium-high heat. Blisters should appear right away. Brown on one side and turn. Cook about 30 seconds. Makes eight 9-inch tortillas.
