Fine Cooking Magazine

What do y'all think of Fine Cooking magazine? I subscribed to it several years ago and remember thinking it was pretty great, but I did let my subscription lapse (and I can't remember why).

I've had my interest piqued by an offer for the last 15 years worth of issues (96, I think) on dvd. I'm thinking of putting this on my Christmas list, but would like some opinions of the magazine overall, if you have them.

Since finding this forum, I have let all my magazine subscriptions expire...Gourmet, cooking Light, Bon Appetite, Cooks and others.
This forum provides all the inspiration and know how I need.
And I don't have tos tore the info on my coffee table!

I've found the Fine Cooking recipes to be reliable and very good. My biggest peeve with them is the lack of nutritional info, but that can be deduced easily enough. Having the recipes on DVD would be a great idea, I may look into that myself!

Until recently I have always had a gas stove with a gas oven. I grew up with gas and prefer it. But recently I have had electric stoves and must admit that I haven't noticed a difference between the bread I baked in the gas oven and the bread I bake in the electric oven. I bake all my breads on a stone in a 500F oven and I spray the loaves with water and I also toss a handful of ice cubes on to the oven bottom. I do miss having a gas top though. Ann

Ann T, I often eat regular french toast with just butter, no syrup or jam, etc., I think it depends on my mood. Other times I want it covered with homemade peach syrup or something similar. I always make sure the egg mixture soaks all the way through, though, and then I have to cook it long enough that it's not soggy. Thanks, Marilyn, it looks like Paul's description answered my question. I was kind of wondering if the whiter middle part just tasted like bread or if some of the flavor permeated the slice. So, I'm guessing that the chocolate outer part is strong enough in chocolate flavor to allow for the "unsoaked" middle? So, Carol, you just ate yours "dry", no fudge sauce and pecans...? Annie

RECIPE: Amazing Flourless Chocolate Cake

Marilyn, that's such a pretty cake. I've only made once before, but this one is completely covered with the glaze (it's a recipe I tried from Bon Appetit). You're right - they're not difficult at all to make, but they sure do have a "wow" factor to them, don't they?! For cake 12 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped 3/4 cup (1 1/2 sticks) unsalted butter, cut into pieces 6 large eggs, separated 12 tablespoons sugar 2 teaspoons vanilla extract For glaze 1/2 cup whipping cream 1/2 cup dark corn syrup 9 ounces bittersweet (not unsweetened) or semisweet chocolate, finely chopped Chocolate shavings Make cake: Preheat oven to 350Â°F. Butter 9-inch-diameter springform pan. Line bottom of pan with parchment paper or waxed paper; butter paper. Wrap outside of pan with foil. Stir chocolate and butter in heavy medium saucepan over low heat until melted and smooth. Remove from heat. Cool to lukewarm, stirring often. Using electric mixer, beat egg yolks and 6 tablespoons sugar in large bowl until mixture is very thick and pale, about 3 minutes. Fold lukewarm chocolate mixture into yolk mixture, then fold in vanilla extract. Using clean dry beaters, beat egg whites in another large bowl until soft peaks form. Gradually add remaining 6 tablespoons sugar, beating until medium-firm peaks form. Fold whites into chocolate mixture in 3 additions. Pour batter into prepared pan. Bake cake until top is puffed and cracked and tester inserted into center comes out with some moist crumbs attached, about 50 minutes. Cool cake in pan on rack (cake will fall). Gently press down crusty top to make evenly thick cake. Using small knife, cut around pan sides to loosen cake. Remove pan sides. Place 9-inch-diameter tart pan bottom or cardboard round atop cake. Invert cake onto tart pan bottom. Peel off parchment paper. Make glaze: Bring cream and corn syrup to simmer in medium saucepan. Remove from heat. Add chocolate and whisk until melted and smooth. Place cake on rack set over baking sheet. Spread 1/2 cup glaze smoothly over top and sides of cake. Freeze until almost set, about 3 minutes. Pour remaining glaze over cake; smooth sides and top. Place cake on platter. Chill until glaze is firm, about 1 hour. (Can be made 1 day ahead. Cover with cake dome; store at room temperature.) Garnish with chocolate shavings or leaves. I love the Fine Cooking magazine. I save all my copies and when I want a recipe I just have to look at the spine of the magazine as they are stacked. The recipes are so easy and they show you step by step how to make it and with pictures too. Even my brother Paul uses them when he doesn't know how to cook something. There offer a tips and techniques section submitted by readers. Product comparisions (which is the best to buy). Why don't you buy your Dad 1 copy of each cooking magazine and then let him choose which one he would like as a gift subscription? Fine Cooking is my favourite of all the cooking magazines out there and my "go to" magazine when I am wanting ideas on how to prepare a certain dish or veggie. Anne

I do subscribe to the magazine and I think the recipes are reliable. I don't like the size of it at all and probably will not subscribe to it again.

I too am gradually dropping all my subscriptions as they expire. I've been getting Fine Cooking since it began and am tired of saving all the past issues. Out it all goes. But, yes, the recipes are reliable and usually come out the way they're photographed.

I, too, subscribed to Fine Cooking Magazine from the Premier Issue on, but about 2 or 3 years ago I stopped my subscription. I love the magazine, and at times am tempted to start a subscription up again. However, I just couldn't bear to throw any of the issues away so saved every one!
Even bought the slip-cases to store them in.

I wouldn't even think of throwing (or giving) away even one issue....but figure that with all of the recipes and information between those covers, any more issues would only be repeatetive.

At the same time, was also subscribed to their sewing magazines and did the same with them.

Think that the old issues could have some monetary value!

I lose more recipes from magazines because I don't know which issue to look in. My inlaws have given me a few of the Food & Wine annual consolidated recipe books and I love them. CDs of 15 years of recipes will probably take five inches of shelf space. How can you go wrong? I'm gonna look this up.

Thank you for your thoughts. I'm probably going to end up ordering this; it sounds like a good resource and lots of fun.

I have a complete run of FC from Issue #1. Thanks to the online index I refer to the back issues fairly often.
