We had Artisan Bread in 5 a Day, now tell me about HEALTHY vers

OMG, I've missed you guys but life keeps getting in the way of computer time.

I'll try and spend more time here when I'm not chasing kids LOL

Anyways, just got HEALTHY Artisan Bread in 5 minutes a Day and tried the basic recipe.

It was so wet that I ended up with flatbread. Being the baker that I am, I weighed the flours (120 g WWF and 125b APF). Do you think this made enough of a difference to cause my dough to be SOOO wet.

I can normally just tell by feel if I have good hydration but with this I didn't have a clue.

Also, has anyone tried the 100% WW breads and how did they turn out?
