Poultry mushrooms, tomato chutney and a kitten

I met a couple of friends for dinner this week. It is the time of year to share the harvest bounty - so I offered them some tomato ginger chutney. The wife is an expert mushroom hunter. She brought me a large bag of hen of the woods ( maitakes) and chicken of the woods. I have more experience eating mushrooms than cooking them. Any recipe suggestions? The chickens in particular are a very different texture than other mushrooms. Thanks

I received a surprise today from Chris (grolikecrazy)! Thank you. :) The plain letter envelope had holes in it- looks like it was damaged in transit. There was no bubble wrap or other padding inside of it to cushion the seeds. Seeds sent to me with no bubbles almost always do get destroyed like this, because the PO runs mail through some hard metal rollers unless it's in a bubble mailer marked FRAGILE in big red letters. :( The Dianthus barbatus seeds were about 75% destroyed and the Red Noodle Yard Long Bean seeds were completely dust. Thank you grolikecrazy, for kindly sending to me. I can still sow the few Dianthus seeds that made it, and hopefully get some plants! Excited about that. :) I'm sorry this happened, Chris. You were so kind to send seeds to me. I'm very glad you were thinking of me, and some of the Dianthus seeds do appear to be usable. It made my day to receive this, even if it is just a few seeds. : ) Thanks, Grovespirit Wondering why the surprises I mailed out haven't shown up here yet. I do hope they didn't get lost in the mail.

Agmss - This is a good beginner smoothie and the first one I started with I found it on a recipe runner. 1/2 cup unsweetened almond milk (or milk of choice) 1/4 cup plain non fat Greek yogurt 2 cups fresh baby spinach 1/2 cup fresh or frozen strawberries 1 frozen banana, broken into chunks 1/2 T. honey 1/4 t. vanilla extract 1/2 cup of ice Then my new current favorite smoothie that my SIL introduced me to. I don't have a recipe so I just kind of wing it but its - 1/2 frozen banana approx 1/2 cup of unsweetened almond milk 1/4 of an avocado two good size handfuls of spinach a tsp of peanut butter cinnamon approx 1/4 tsp and sweetener of choice honey, stevia, a date, sugar, whatever you like to use best. Adjust sweetener amount to your own taste. I usually just give a good size squeeze of the honey and its enough especially with the banana. You can also adjust the amount of liquid if you like a thinner or thicker smoothie. Just always add the liquid first in the blender than the rest of the ingredients. I generally like to eat my greens too but I have to say as a quick breakfast I can drink on my way to work I really enjoy them. I sometimes make them as a sweet treat at night too.

Cruising had this and it was awesome. GS had to have a bite and didn't give plate back, cause he finished it :o) Goat Cheese Souffle -------------------------------------------------------------------------------- 3 large egg yolks 3/4 cup whole milk 3 tablespoons butter 3 tablespoons all purpose flour 2 3-ounce logs soft fresh goat cheese, crumbled 3/4 cup freshly grated Parmesan cheese 1/3 cup chopped fresh chives 1/2 teaspoon salt 1/2 teaspoon ground black pepper 5 large egg whites Preheat oven to 375 degrees. Butter four 1-1/4 cup souffle dishes. Whisk yolks and milk in large bowl. Melt butter in heavy, medium saucepan over medium heat. Add flour and stir 1 minute. Gradually whisk in milk mixture. Continue whisking until thick, about 2 minutes. Return mixture to bowl. Cool souffle base slightly. Set aside 1/4 cup of goat cheese. Whisk remaining goat cheese, 1/2 cup Parmesan, chives, salt, and pepper into souffle base. Beat whites in another bowl until stiff but not dry. Fold whites in another bowl until stiff but not dry. Fold whites into lukewarm souffle base in 3 additions. Divide mixture among prepared dishes. Top with 1/4 cup goat cheese and 1/4 cup Parmesan, dividing equally. Bake until puffed and golden, 25 minutes. Set souffle dishes on plates and serve.

My late wonderful friend "Dotmom" used to call her potroast style meatloaf with potatoes and carrots "potloaf". I sure miss her. RIP friend. I make meatloaf in different ways, usually just wing it. But some guidelines: NEVER put glop on top. I like the crust. Sadly, I usually use the electric roaster and it keeps things too moist to get the good old crust a gas oven gives so I sometimes put it under the broiler to crust it up. And I usually put a seasoning on the outside too when I do. A rib rub on a broiled loaf is great. This one turned out to be a favorite but you (ok *I*) never can really duplicate it over and over but I like to mix meats. Usually beef and pork/sausage are mandatory and often put bacon or bacon bits in there and pepperoni adds a great flavor. Onion soup mix is just too salty for me these days so I use minced onion and onion powder and occasionally a touch of low salt bouillon to beef it up a touch if desired. Other seasonings: fresh celery and onion if I'm not using for sandwiches, otherwise I use conventional seasoning replacements. I don't like chunks of celery/onion in a sandwich, but for the meal that's great. Garlic, worchestershire, Italian seasoning, lemon pepper, hot sauce and a touch of BBQ sauce often helps. I've started using potatoes instead of breadcrumbs since my sister is celiac. Either shredded or instants, egg. I also add a little beer or water to add moistness. I might put some bacon/ranch/onion dip in or sour cream to also add moisture. If I have some, I put some wild rice in there. Mashed used to be the standard but lately I like roasted potatoes with it or occasionally brown and wild rice medly, some bbq bacon ranch corn... a feast.

Can't help with the mushrooms, but I could just hug those kittens. I haven't had a cat since I lived in Japan, I'm usually a dog person, but I can't resist kittens.

Chickens and kitties....irresistible.
And the climate for mushrooms. NYTimes is on it. One the sidelines are past recipes etc.

Addiction is right, I'm loving the kitties. Bud and Makayla just got a new kitten, and Midnight hides under Makayla's bed or the chairs or the cars in the driveway, then jumps out at you just to watch people go "eek". (grin) Guess what color she is. Yeah. She looks a lot like my dear departed Dead Cat From He!!. Acts a lot like her too, the little devil...

Anyway, mushrooms. Chicken of the woods does have a different texture, it's been likened to chicken, go figure, I'm assuming that's where the name came from. I've had it in an omelette and kind of a mushroom based "chicken fajita" and I'm betting it would make a pretty good fungus pasta dish.

Oops!!! My new phone has odd aggressive predictive text. My sister and I participated in an open studio last weekend. My nephew brought over something to entertain my 8 year old niece. The little diablita is from the same litter. Mustang your kitty is adorable!!

Cathy, Brownie doesn't look brown at all! She does look cute though. I love kitties, but not enough to get another one. I also love mushrooms.

Pam, I let Lily (6 YO) name her because she is a very observant namer for her stuffed animals. She named her Brownie because (if you look closely) her nose is brown.

Annie, Brownie is VERY athletic and she likes to "hide and greet" then run away so quickly that you can't find her.

Kitties ARE addictive. Just come to my house and you'll see evidence.

I haven't ventured much past white button mushrooms, portabellas, and on rare occasions shitakes or dried porcinis. This is not because of any reason other than budget. The "fancier" mushrooms are just too expensive.

What's the difference between Chicken of the Woods and Hen of the woods?

Went to the Mystic Wild Mushroom Festival last weekend. What a fun experience. All the mushrooms on display were collected in Mystic.

I was afraid to open this thread, "Poultry mushrooms, tomato chutney and a kitten"

What could that recipe be for those ingredients? Perhaps "Kitten" was misspelled? Should be "Kitchen"?
