Who knew SEAMS would cause so much stress?

Here's my dilemma. I am 90% sure we're going to get Paperstone slabs and do the cutting and installing ourselves. My dad will actually do this, as he is a great woodworker and has done a couple dozen laminate countertops. The DIY instructions for Paperstone are very thorough and I know he can do it, but I'm sure his seams wont be quite as amazing as someone that has experience with Paperstone.

I will have an L shaped countertop so there will definitely be a seam somewhere. I think that having one running the diagonal would look best but I havent really seen any other type of seaming, so maybe I'm just uninformed. However, If I am willing to have a straight seam instead of diagonal (does that make sense??), I can save about $500 in materials.

$500 for use is huge.. Our entire budget is $16,000. But is that something that will drive me nuts and just might be worth the extra money? Should I pinch the pennies somewhere else?

Here's what the Paperstone looks like:
