I have not made them in many, many years. My husband does not like them. We still have them at Long John Silvers and Captain D's. So I don't have a tried and true recipe. Hope someone does for you.

We're in Texas, of course I make hush puppies (mandatory with fried catfish, optional with BBQ)!
Here's the recipe, which is super-easy:

1 3/4 C. cornmeal (I use yellow, but white is fine)
1 1/2 tsps. salt
1 tsp. baking powder
1/2 tsp. soda
1 beaten egg
1 c. buttermilk
1/4 c. finely chopped onion (green onions with part of the green chopped is best)
vegetable oil

Combine dry ingredients, add egg and buttermilk, mixing lightly. Stir in onion.
Heat oil in deep pan to 370 degrees. Drop batter by tablespoonfuls into oil, turning once. Cook 3 to 5 minutes, until puppies are golden brown. Drain well. Makes about 18 pups.

I just made some Friday night. Unfortunately I made a mistake by substituting Splenda for the sugar. I also mixed up the ingredients ahead of time which made them turn out dry. But we've had these before and they are excellent... just follow the recipe! lol

I haven't made them in ages, but marlingardener's recipe sounds good. Don't forget the chopped green onions.

I use about the same recipe as Marlingardner's, but I only use 1 teaspoon salt, 1 teaspoon granulated garlic and 1/2 tsp. pepper.
I drop them from a mini sized ice cream scoop.

Crab Hushpuppies

8oz crabmeat
3 uncooked slices bacon
1/2 C chopped white onion chopped
1 C cornmeal
1/2 C all-purpose flour
3/4 tsp baking powder
11/2 to 2 C buttermilk
Salt & Pepper to taste
Vegetable oil

Combine crabmeat, bacon and onion and mix well.
Combine cornmeal, flour, baking powder and salt and pepper and mix well.
Add the crabmeat mixture and mix well.
Add 1/4 C of the buttermilk and mix well. Continue adding the buttermilk 1/4 C at a time until the batter is moist but not runny. Stir constantly.
Heat vegetable oil in a skillet or fryer to 350. Drop the batter by spoonfuls into the hot oil. Deep fry for 2-21/2 minutes or until golden brown; drain.

Red Lobster's Hushpuppies

3 cups cornmeal
6 tablespoons baking powder
1 1/2 teaspoons salt
3/4 teaspoon pepper
3/8 teaspoon white pepper
1 cup minced onion
3 eggs, beaten
3/4 cup milk

Mix cornmeal with baking powder, salt, pepper, and onion.

Mix egg with milk and whisk into cornmeal.

Spoon hush puppies into hot oil and fry until golden brown.

Servings: 12

I make my grandmother's, but will have to hunt for the recipe. I'll post it when I find it. Thought it was on the puter, but it isn't.

Here's Justin's Recipe. Haven't had shut up dogs in a long time. Sound good though. Need to make some soon.

Justin Wilson's Hush Puppies Recipe

Deep fat for frying
Ground cayenne pepper
1 c Buttermilk
1 c Green onion, finely chopped
1 c Plain flour
1 ts Baking powder
1 ts Salt
1/2 c Parsley, finely chopped
1/2 ts Garlic powder (to taste)
1/2 ts Soda
2 c Cornmeal
2 tb Bacon drippings, hot
2 Eggs, beaten

48 servings

Combine all dry ingredients.
Add eggs, buttermilk, onions, and oil or bacon drippings. Mix well.
Drop in deep hot fat by spoonfuls and brown on all sides.

I remember the worst hush puppies I ever had were in Charlotte, NC. No flavor, greasy, and if that's the best they had to offer.... ugh.

At first when I saw your heading I thought you were talking about shoes and wondered how you could make them, then the light dawned. As you can tell, I have never had hush puppies.

Not very often, because I tend to eat them...all!
My recipe is mostly like Marlingardners...would love to try the crab recipe, but I know I would eat every one of them! Will have to make sure guests are coming next time I make hushpuppies.

I only eat the crust of the hushpuppies, and leave the center on the plate. Most times I can peel the crust off.
