Bacon wrapped Potato Bites with Spicy Sour Cream Dipping Sauce

1 pound small or medium red potatoes

1 1/2 teaspoons chopped, fresh rosemary

1 tablespoon olive oil

1/2 teaspoon salt

freshly ground pepper

12 ounces-to-1 pound thick-cut bacon

1 cup (8 ounces) sour cream

1 teaspoon hot sauce

salt and pepper

Preheat the oven to 400 degrees.

Wash and dry the potatoes. Chop them into 1-inch pieces, keeping the chunks roughly the same size, even if they aren't the exact same shape. Put the potatoes in a medium pot, cover with cold water, and bring to a boil. Season the water with salt. Once the water begins to boil, cook the potatoes for about 3 to 4 minutes, until you can stick a fork into them without too much resistance. You want the potatoes to be almost, but not fully, cooked through (so they won't fall apart during the next steps).

Drain the potatoes and put them in a large bowl. Add the rosemary, olive oil, salt, and a few grinds of pepper, and toss until the potatoes are evenly coated.

Cut the strips of bacon in half (with a short, vertical slice). Wrap each piece of potato in a half-strip of bacon, securing it with a toothpick. Put the potatoes on a baking sheet lined with parchment paper or aluminum foil. You may need to cook the potatoes in two batches.

Cook the potatoes for 15 minutes, then flip each piece.

Cook for another 10 to 15 minutes, until the bacon is cooked through and crisp. Mix the sour cream and hot sauce in a small bowl. Season with salt and pepper. Pile the potato bites on a plate and serve alongside the dip.

My Favorite Peanut Butter Pie

3/4 cup powdered sugar
1/2 cup creamy peanut butter
3/4 cup white sugar
3 Tablespoons corn starch
1 Tablespoon flour
1/8 teaspoon salt
3 Large eggs
3 cups milk
1 teaspoon vanilla
2 Tablespoons butter
1/4 teaspoon cream of tartar
1 deep 9 inch baked pie shell

In a small bowl, combine powdered sugar and peanut butter to make coarse crumbs. Set aside.

In a 2 quart sauce pan, stir together 1/2 cup sugar, the corn starch, flour, and salt. Separate eggs, placing the whites in a medium sized bowl and set aside to warm to room temperature.

Add yolks to sugar mixture in sauce pan along with the milk. With a wire whisk stir until very well combined. Over medium heat, stirring constantly. Heat milk mixture to boiling. Cook stirring, 2 minutes longer. Remove pudding from heat and stir in butter and vanilla.

Heat oven to 375 degrees. Sprinkle a third of the peanut butter mixture over the bottom of the baked crust. Spoon half of the pudding over the crumbs. Sprinkle with another third of the crumbs and add the rest of the pudding.

Add cream of tartar to the egg whites and beat till soft peaks form. Sprinkle in the remaining 1/4 cup of white sugar and beat until stiff peaks form.

Put on top of pudding in the baked pie shell. Then sprinkle the remaining crumb mixture on the top of it.

Place in preheated oven and bake for 8 to 10 minutes.

Anymore I don't cook mine on the stove but put the pudding part in a big glass Pyrex bowl and cook it in the microwave.

Spinach Parmesan Linguine

1 pkg linguine
1 cup chicken broth
1 small onion
2 garlic cloves, minced
1 pkg frozen chopped spinach, well drained
1/3 cup milk
2 tbsp cream cheese
salt and pepper
1 cup shredded parmesan cheese

Cook linguine. Meanwhile in a saucepan over medium-high heat, bring broth to a boil. Add onion and garlic. Reduce heat; cook uncovered, 5 minutes. Stir in spinach, cook 2 minutes.

Add the milk, cream cheese, salt and pepper; stir until cheese is melted. Drain linguine and place in a serving bowl. Add sauce and toss to coat. Sprinkle with parmesan and mozzarella, and toss.

Eggs benedict casserole 6 English muffins 10-12 ounces Canadian bacon (2 packages, or use diced ham) 8 large eggs 2 cups reduced-fat milk (or whole milk) 1 teaspoon onion powder cooking spray 1/2 teaspoon paprika easy hollandaise sauce- (I just use package) Directions Cut muffins into 1/2-inch cubes. Set aside. Cut Canadian bacon into 1/2-inch squares. Set aside. Whisk the eggs well in a 2-quart bowl. Whisk in milk and onion powder. Spray a 9-by-13-inch glass or ceramic baking dish with cooking oil spray. Scatter half the Canadian bacon evenly in bottom of dish. Scatter muffin cubes on top of Canadian bacon. Top with the remaining Canadian bacon, scattering it evenly over the bread. Pour egg mixture over the casserole. Cover the dish with plastic wrap and refrigerate overnight, or at least 8 hours, to let bread absorb egg mixture. Preheat oven to 375 degrees F. Remove casserole from refrigerator and uncover it. Lightly sprinkle the paprika evenly over the top. Cover the casserole with foil and bake for 40 minutes. Remove dish from the oven, remove foil, return dish to the oven and continue to bake, uncovered, until the eggs are set and the bacon on top begins to crisp, about 20 minutes more. Remove the casserole from oven and let it stand 5 minutes before serving. To serve, cut casserole into squares and place them on plates. Spoon about 2 tablespoons (or to taste) warm Hollandaise Sauce over each serving just before serving. Makes 10 servings. NOTE: Time does not reflect refrigeration time of at least 8 hours, nor standing time of 5 minutes

FRIED CATFISH Simple and delicious! -------------------------------------------------------------------------------- INGREDIENTS: 2 pounds catfish fillets -- 1/2 inch thick 1 teaspoon garlic powder 2 teaspoons salt 1/2 teaspoon freshly ground black pepper 2 cups cracker meal or coarsely crushed unsalted crackers 1 cup vegetable oil 1. Trim the catfish of any skin or membrane. Stir the garlic powder, salt, and pepper together in a small bowl. Sprinkle the mixture over both sides of the fillets. These are brought to your table before you order. Fabulous! CHEESE BISCUITS LIKE JIM N NICK'S A restaurant I go to has these cheese biscuits. The restaurant is Jim n Nicks BBQ. They aren't biscuits at all and should be called cheese muffins. 1 1/2 cups flour (should be self-rising flour) 1 cup sugar 1 cup shredded cheddar cheese 3/4 cup 2% milk 1 egg, beaten 4 tbsp. butter, softened 1 1/2 tsp baking powder 1/4 tsp vanilla Mix ingredients together, pour into greased muffin pan and at 400 degrees for about 20 minutes or until done. These are fantastic and will make 12 muffins. Serve with butter and enjoy!

Paula Deen's Chicken Casserole

1 fryer, cooked, boned, cut into small pieces (reserve broth)
1/2 cup mayonnaise
1/2 cup chopped onion
4 eggs
1 stick margarine, melted
2 1/2 cups chicken broth
1 pkg cornbread stuffing mix like Pepperidge farms
1 cup milk
1 can cream of chicken soup

Combine chicken, mayo, onion and set aside. Combine 2 eggs, margarine, chicken broth and stuffing mix and set aside. In small bowl, lightly beat 2 eggs and milk. Spray large casserole dish with cooking spray. In bottom of dish spread half stuffing mix; then layer with chicken mix. Add second layer of this. Pour egg and milk mixture over top layer of stuffing mixture. Refrigerate overnight. Preheat oven to 350 and spread cream of chicken soup on top of casserole and bake 45 minutes.
