excess melted Scharffenberger chocolate

I melted a 9 oz brick of Scharffenberger bittersweet chocolate to make chocolate covered strawberries. It only took about half of the melted chocolate. I read somewhere that once the chocolate is melted, the remaining chocolate could be used for ganache.

So, here are my questions:

- how do I store the leftover chocolate?

- how long can I store the leftover chocolate?

- any other words of chocolate-wisdom?

Don't know about that brand... actually know little about any specific brand?!? Made chocolate dipped goodies as holiday gifts... started with bags of semi-sweet chips. I ended up with left-over melted chocolate that I just could not just toss. I poured it into a mini loaf pan and it harded up just fine once cool. I wrapped it in several layers of plastic wrap and just stashed in fridge. Can be unwrapped and grated.

As for how long you can keep it? My scientific answer (kidding) is a LONG TIME, especially in fridge. If it develops that gray-ish film... it's NOT BAD! Just might not be the prettiest. I have chips in a vac seal container from LAST holiday season... absolutely nothing wrong with them.

I keep a covered bowl full of leftover dipping or drizzling chocolate in the freezer inside a freezer ziplock. I pull it out and melt it over simmering water when I need to dip something. I add to it if needed. It isn't tempered and will develop bloom but usually everything I dip is consumed too quickly for this too happen.

Is it difficult to remove from the pan without using a springform? Haven't had a chocolate mousse cake in ages. Ginger, Out of the 4 times I have made this cake, I have always used a springform pan. I think it would be very difficult to remove using a standard cake pan.

Yeah Wizardnm, we both love the skin too. Don't worry, you get a nice thick skin. I always laugh at recipes that say to put plactic down on surface. Hah.. noooo way. To tell you the truth, I think I tend to make the pudding even thicker this way because on the stovetop as soon as it starts to boil/thicken you take it off because you know it's going to burn/stick/ruin a pot. I sure don't miss cleaning those pudding pots. Sorry to keep going on about simple pudding, but hey.. easy fast pudding has been a big deal. One of my fave cooking tips.

I made the Dave Lebovitz chocolate ice cream last night. It was delicious!! Very rich. But very easy to make. Thanks for posting that Tracey! By the way I used TJ's pound plus dark chocolate in the recipe. Hard to measure exactly since they are not in one ounce squares. So since the recipe called for four ounces, and the bar is 17.6 ounces, I just used 1/4 of the bar. Yes, just a bit MORE than the four ounces called for but I prefer to err on the side of excess when it comes to chocolate. Yummy!!!

If you will use it tomorrow, I'd leave it on the counter. Frig would be okay, too. It might develop bloom but since you'll remelt it and it will be consumed quickly, I wouldn't worry. I keep a covered casserole of dark chocolate that I use for dipping in my freezer. I remelt (over a double boiler) and add to it whenever I use it and put it right back in the freezer. It doesn't develop bloom this way.

I'm with Moni. "Excess" and "Chocolate" are mutually exclusive terms. "Excess" can never be a modifier of the noun "chocolate".

You could certainly make ganache and truffles with the leftover chocolate, but I store mine in the metal pan in which I melt it. I use TJ's Pound Plus Belgian dark chocolate because it is cheap and does not have milk in it. So I have a pan dedicated to melting chocolate, as I will only do it in a double boiler.

Today a textile representative from Switzerland came to visit us today to show us some of their latest textile samples and also brought some Frey brand chocolate for us! Those are the kind of visitors I like to have, but I will say that I've gotten nicer presents from the Italians, and I like their chocolate also.
