Has anyone made the following recipe, called Katherine Hepburn's Brownies?
1 stick unsalted butter, plus more for buttering the pan
2 ounces unsweetened chocolate
1 cup granulated sugar
2 large eggs, lightly beaten
1/2 teaspoon vanilla extract
1/4 cup all-purpose flour
1/4 teaspoon salt
1 cup roughly chopped walnuts (optional)
INSTRUCTIONS
Preheat the oven to 325 degrees F . Butter an 8-inch square baking pan. Line the pan with parchment paper and butter the paper.
Melt the butter and chocolate together in a large saucepan over low heat, stirring constantly. Remove the pan from the heat and stir in the sugar. Add the eggs and vanilla and stir to make a smooth batter. Add the flour, salt, and optional walnuts and stir until incorporated.
Pour the batter into the prepared baking pan and spread evenly. Bake until a toothpick inserted in the center comes out clean, 40 to 45 minutes. Let cool on a rack. Cut into squares and serve.
It is from a cookbook by Laurie Colwin and gets rave reviews on Epicurious. However, every time I make it,it comes out very gooey...very, very gooey. Uncooked-gooey. Am I just not cooking it long enough? A toothpick inserted in the center comes out clean.
The flavor is great, but the texture, looking uncooked, is off-putting. And it doesn't cut into squares. You just cut it and try to scoop out the goo in some semblance of a pleasing shape.
Anyone else had this problem? Anyone know the solution? I'm afraid to cook too long, since brownies can go from done to over-done in the blink of an eye.
