Full StoryI'm saving up to buy a grain mill because of the nutrition and taste benefits of using freshly-ground whole wheat to make bread. Until I get my own mill, I can only count on being able to use a friend's mill every once in awhile.
So, I realize that flour is best used immediately after milling, but what would my second best option be?
A) Freezing the flour right after it's milled
B) Make dough with the freshly milled flour, then freeze the dough
C) Make bread with the freshly milled flour, then freeze the bread, or
D) It doesn't really matter
Anyone know for sure? thanks!
