cooking doldrums

Have you ever been in a cooking slump? I am in one and can't seem to climb out. My DH and I traveled all summer, and I've been in a slump ever since. Part of the slump is a new boss and slightly longer days.

Have you ever been in a slump, and if so, how did you escape from the doldrums?

Come here and look at all the pictures on the WFD threads.
Or sit and sort through all my "to try" recipes until one looks "just right".

That's a tough one. I hope somebody has some good ideas on getting out of the slump. I could use some.

Maybe make a project of learning a new cuisine, such as Indian or Portuguese. Get a good cookbook or two, stock up on the necessary ingredients and prepare a new recipe every day or so. Repeat the best ones occasionally for practice and to lower the learning curve.

Ask her doctor. If they're legit, they certainly can't hurt. If she'll only eat a few different vegetables, just continue to serve them, maybe in different recipes. Here is a recipe that my family loves and so has everyone else who's ever tried it. Tons of veggies of your choice...I use zuchini, summer squash, mushrooms,carrots, peppers, eggplant, or any other veggies I have on hand. onion, garlic, 1 can chicken broth, 1 can diced tomatoes undrained, juice of 1/2 lemon, approx 2tsp. dried basil, chopped spinach or escarole. Saute veggies, onion and garlic in small amount of oil (approx 2 Tbsp). When they begin to soften, add chicken broth, basil, lemon juice and tomatoes and bring to boil. Lower to simmer, add about 6oz chopped spinach or escarole. Let simmer for about 5 minutes. That's it! Add your favorite cooked pasta, about 1/2-3/4 pound, and sprinkle with parmesan or romano cheese if you'd like. If you want to add meat, try either grilled chicken cubed or some nice spicy Italian sausage, cooked and crumbled. (about 1/2-3/4 pound). This is a full meal with tons of flavor, it's healthy and it's packed with veggies.

The problem I have with palak paneer is finding/making the cheese! I sub feta but it is nowhere near the same. Plus I like mine medium hot, with some fresh naan. Again, pita bread or store bought naan just doesn't cut it. But that's my homeade version. So I'm not really a good person to encourage you on the palak paneer! I love Indian food but my own attempts at mastering the dishes I like have been . . . eh.

Kitchens are very personal to those that use them. One cooks dream kitchen will be another cooks nightmare. Fingers crossed in two years time I will be allowed to build MY dream kitchen in our current house. Any line cook/professional chef will feel at ease here, but most people on this forum would be shocked. I am in a very unique situation where my wife has a very well paying job that means I do not have to work to put food on the table. This is not to say I could not find work, as 13 years in the Australian Army (retiring as a Major) and four years as a Finance Professional (two finance degrees, the highest a Masters) have left me with marketable skills. After moving to Dallas TX via five years in New York City, from Sydney Australia, I was looking at short courses to improve my home cooking. Not finding any courses that were of value I enrolled at Le Cordon Bleu and completed a 15 month Culinary Associates Degree in 13 months then worked in a five star restaurant for nine months. This was all to improve my home cooking. Kitchens for me are a place of work. If you want to socialize there are other rooms in the house for that. If you need to do homework, there are other rooms in the house for that. If you are in my kitchen you are cooking and/or cleaning. By their nature kitchens are hot, noisy, dangerous places. Pets and very very young children do not belong in the kitchen as they pose a risk to themselves and others, both through injury and food contamination. My kitchen will have a commercial range hood. I'm not talking 27" deep 48" wide 1,000 cfm, but a 48" deep 9' wide 2,500 cfm hood covering the entire hot cooking area. The hot cooking area will have one gas wok burner and outlets/space for two 3,500w (240v) portable induction burners, two 1,800w (110v) portable induction burners, one 240v counter top deep fryer, two immersion circulators (110v) in their water baths, and a commercial combi oven. Portable burners and the like allow flexibility in the kitchen and increase prep counter space. Most of my kitchen will be stainless steel with open shelving. It might not grace the pages of Better Homes and Garden, but it will be a bullet proof kitchen that is easy to clean. As much as possible the kitchen will be a separate room, NOT open the the main living areas. For me kitchens are food preparation areas with other rooms for food eating and socializing. A separate kitchen allows the noise, heat and smells to be contained in one room, not spread throughout the house. This kitchen will match my cooking style and methods. I hunt and have a chest freezer full of venison, rabbit and squirrel I harvested myself. The freezer also contains sub-primal cuts of animals that I buy in bulk. I much as I can I butcher and process my own meat and make sausage from scratch. I make all stocks, broths and sauces from scratch. I need large prep tables that are easy to clean to do this. While I do not consider my cooking methods cutting edge, I do own and use equipment not often seen outside professional kitchens. I cook Sous Vide for almost every meal. I use immersion circulators to cook most of my proteins and I use a vacuum chamber sealer to seal product in plastic bags. For those that have seen the five volume cookbook Modernist Cuisine, I can prepare most of those recipes with the current kitchen tools I own. My dream kitchen will allow me to cook them all. I rarely cook one pot wonders. A normal mid week meal, for just my wife and I, will be one course with a protein, sauce, two different vege and a starch. I require five separate burners to heat the food for plating - one for each item. I will/have happily spend/spent 6-8 hours a day in the kitchen for 3-4 days preparing a themed 9 course tasting meal (paired with wine) because one friend from out of town is/was coming over. I enjoy preparing, cooking, plating and serving food at home that is 5 star restaurant quality. When people ask me what do I do, I say I am a Personal Chef to my Wife. I can count on both hands the number of times per YEAR that we order take out and/or eat at a restaurant for dinner when in Dallas. A kitchen is where cooking occurs. While many people forget it, cooking is a very serious business. When you make mistakes in a kitchen, at best people go yuk and a pizza is ordered; worse case people die. To reduce the possibility of food borne illnesses, the kitchen needs to be an area that is separate from the main area of the house. It should not be a thoroughfare for the family and pets traipsing from the carport/outside/garage/etc to get to another part of the house. The materials the kitchen is made of need to be easily cleaned and sanitized. If you are scared to use a pressure washer on them, it is not the right material. My dream kitchen is most peoples nightmare. It is industrial, noisy and tight. Any aisle wider than 36" wide is too wide, any wider I would have to take a step to reach something - that is inefficient. The lighting will be bright and daylight balanced. I spend my pretty-mood-lighting-funds on the lights outside and in the great room, not the kitchen. The only view in my kitchen, other than the four walls, is the TV in one corner. The best views in the house are when you are sitting on the back deck with a cold beer in both hands, not standing at the sink washing a stack of dirty pans. A "cook's kitchen" is one where any cooking occurs. I have friends with kitchens costing $200k+ that only get used to heat precooked purchased food on Thanksgiving - I do not call this a cook's kitchen although it could be. Another friend will prepare, from scratch a 3 course plated meal for 10 in their 800 sq ft NYC studio apartment. The "kitchen" is a bar sink, 2 feet of counter space, 1 hot plate, 1 toaster oven and a dorm fridge. What constitutes a "cook's kitchen" for me is one that I am willing and happy to spend many hours a day, day after day in. For me this is commercial kitchen in a residential home.

No such luck with my Dad. He argues with every single person he comes into contact with. And lack of appetite is one of the things he fusses over. But refuses to take any medications that might deal with the whole spectrum of symptoms. I just tell him take a few bites, like you'd do with a toddler. And he also gets upset that I'm NOT upset about his eating. I can't control it, he'll either eat or not eat, he cannot be force fed. Large portions of his day revolves around fussing and obsessing over food, or obsessing over lack of sleep which would probably also be helped by anti-depressants . . . but I try to keep it as his "thing" and not my problem since nothing can be done about it. He's refused MULTIPLE doctors suggesting or prescribing anti-depressants. It's not for lack of options or food available to just put fork to mouth for, or resources for medical help. He will eat under certain circumstances, but often salty foods that are terrible for his congestive heart failure kidney condition, so that's another issue. Eating "forbidden" foods and getting away with it is something that motivates him. Of course he pays for it with indigestion at the very least, which of course he fusses about some more . . . This is one instance of "It is what it is" because it is not for lack of resources right under his actual nose. He cannot be forced. Ironically, he likes to break social distancing rules and go unmasked and un-distanced over to friends houses to eat, who are also not social distancing and out and about on their social rounds. The defiance stimulates his appetite I think . . . so I'm just always uncomfortable around him for a whole variety of reasons . . . I have to try and socially distance from him and yet keep an eye out on him, which also triggers his anxiety. So far the only thing that makes his day is proving he was right and someone else was wrong, along with defying someone's rules and "getting away with it." He's not the only one presenting that issue in a social situation either, hence more discomfort for a lot of folks.

Much as I enjoy cooking, the fact is I've been running a household since I was 12 yrs old, and almost 50 yrs is a really long time. I realized a long time ago I love to cook, but I DON'T like having to make dinner every night, 7 days a week. One's a hobby, and one's a chore.

I agree with jimster - another cuisine is a palate-refresher.

In our case, being foodies is our hobby. We go out as often as I can talk my DH into it. Whether it's $5 quesadillas or $30 filets, doesn't matter. Dining out is a major line item in our budget. We live in an area where there's a lot of interesting options at all price levels.

Tonight (Tuesday) we're meeting some family members to try a new Ethiopian restaurant. Our city is a hotbed for the Ethiopian/Eritrean community. Although we've tried six of them over the last few years, there's still another half-dozen to visit.

Thursday is our weekly dinner with my MIL. I'm thinking German food, because I've been craving potato pancakes with applesauce and sour cream, neither of which DH or MIL likes. Although that day is supposed to be the hottest day of the week, so maybe something lighter, just CA bistro food, and do the German food next week.

By the weekend it will be 20 degrees cooler, and DH has been longing for homemade lentil soup, LOL. We just discovered a restaurant with great Chinese roast duck to go, and we love using duck bones for a great stock! Sometimes just soup and sandwiches for dinner is enough of a "break" in routine.

Just cook easy stuff until the doldrums disappear. I pretty much stay in slump mode all summer but the cooler weather of fall always snaps me out of it.

OR, you could treat yourself to some pricey kitchen gadget...

OTOH, it doesn't really have to be pricey...maybe just some pretty new towels for the kitchen...anything that makes you feel good being in the kitchen.

It's so easy to fall into the cooking doldrums when your days are too long to start with.

For the past 4 years, between owning 2 houses, trying to get one ready to move into, and one ready to sell, DH working unbelievable overtime, me starting a new job... I wasn't overly excited about cooking either. Now that DH is retired and we've unloaded one house, moved into the other, I'm a lot more relaxed and find I'm enjoying and doing more cooking.

But it doesn't sound as if that answer will work for you. I think, given your situation, the answer is planning. Plan meals where you can do the 'heavy' cooking one day, then use the leftovers for quick redo's other nights. A roast chicken (and why not buy one already cooked at the supermarket?) can be a nice chicken dinner one night, and the next can come to the table as: bbq sandwiches, chicken pot pie, chicken salad, etc. Roast beef and mashed potatoes tonight? Tomorrow they can turn into shepherd's pie, or a quick stew or hot roast beef sandwiches.

While you're planning, think about those really quick meals--things like stir-fry (and don't limit yourself to oriental flavors, there--I often stir-fry an Italian mix of veg, sausage, etc, and toss in some pasta for a quick, fresh meal), omelettes, hot sandwiches (DH's one meal he cooks for us is: deli roast beef, jarred gravy and Stovetop--even he can get that dinner on the table in about 15 minutes!).

another quick trick I use a lot? Buy the vegetables you need for recipes at the supermarket salad bar!!! They're already cleaned and ready to go. One store near me even has grilled chicken on the salad bar, so I run to the salad bar, then grab a can of water chestnuts and I've got everything I need (there's always rice in my pantry) for a quick stir-fry dinner. I also use the salad bar for salads--buy a head of lettuce, and pick up the extras at the SB. Yes, having a lot of the work done for you does cost a littlem more, but there's no waste, and with just 2 of us empty nesters now, I'd never have ALL the salad things on hand at once, anyway.

I'm sitting here right now, considering a dinner challenge. My kitchen is full of my living room furniture (having just shampooed the rug)--not sure I'll be able to cook tonight, depending upon how long this takes to dry. AND I have a meeting tomorrow at dinnertime. So, I'm thinking that while I do usually cook these days, tonight would be a good night to go out for something that would leave us with easy leftovers for tomorrow. DH never turns down pizza, so perhaps Pizza Hut will do us tonight. But that's not something we do often. I honestly cannot remember the last time we had a pizza--think it may have been the last evening I had a meeting, which would have been a month ago, now.

Oh yes, round about 25 years of marriage/cooking I ran out of interest and ideas. Got rid of the husband, but still not much cooking.

Took about 10 years of doodling in the kitchen, cooking for myself and the misc. kids who came and went before I really got back into it again.

Mostly because about 5 years ago I found some good forum friends, great recipes and lots and lots of advice and help. It got me back to cooking, baking and canning, and now it's fun again. My DD is even peeking at the posts on the forum and being a bit more adventurous cooking now.

I really got re-started with baking. It's very satisfying to bake something sweet and successful, and enjoy it for a few days, it gave me some confidence that I badly needed.

Take it easy for awhile, I doubt either of you will starve if you keep it simple or buy prepared foods and nuke them. Save your energy for the holidays.

If you haven't looked at Pinterest, try that. I've never seen such an amazing collection of wonderful pictures and recipes that are really affecting my enthusiasm for cooking again. I think it's doing the same thing for my gardening slump.

One thing that stokes my interest for cooking is to keep a cookbook on my bedside table. Lots of nights I am too exhausted to read but I find it relaxing and inspiring to leaf through a beautiful cookbook.

I go to our local library regularly and always pick up an audiobook to listen to in my car and a new cookbook. This also allows me to test-drive recipes before investing in a cookbook.

I agree with several of the above suggestions. I check WFD, I grab a cookbook, or I make something new. Sometimes I work on a recipe that I just can't get right, trying to figure it out, something to stretch my mind a bit.

I think we all get "cooking doldrums". I get busy and have egg sandwiches for a week at a time, or cold cereal, or whatever. Eventually, though, I pick up a cookbook or read a recipe and it's time to start cooking again!

These are all great suggestions, thanks! I do think the long days are part of the slump, and in talking about it with DH last night, he pointed out this is the first year we haven't had a garden bursting with veggies to use up. I think that's a part of it -- bad enough to let supermarket veggies get past their prime, but home grown veggies? Never!

I do like the idea of dabbling in a new cuisine, so I will try that. I'm thinking Indian, as I love it and there are not an abundance of Indian restaurants near me.

We love to eat out but after our summer-long travels, we've been trying to eat at home to plump up the budget a bit -- we want to do it again!
