I don't want spinach in my brownies....but I have made the chocolate cake with beets, not because it was a way to eat veggies but because it makes a good moist cake. I make squash muffins...or rather sweet potato muffins but they also work with butter nut squash, and put apple sauce in muffins and pancakes, I have put carrots in mashed potatoes and even carrots in cake and served "faux 'tatoes" which is cauliflower mashed with a little sour cream and salt and pepper.
I think the amount of veggies in those recipes is way over rated...like the veggie puree mixed with the egg to coat chicken before breading...puh...leeze! How much of that stuff sticks to the chicken and how much would be in one piece of chicken. And 1/2 a cup of spinach in a pan of brownies? Really! that might abount to a tablespoon per brownie? There are many other ways of making veggies palatable without adding sugar etc to them.
Sweet potato muffins are good as is zucchini bread and I love pink mashed potatoes ( with carrots) and when my kids were little I would put the egg and onion and peppers in the blender before adding to meat loaf.
Make carrot cake....it's good for you!

Well.... It may be a good way to get some veggies into your kids but... After scanning some of the recipes you'd have to serve very small portions to someone who needs to cut back on salt and fats, very small... Or don't let them eat anything else that day.... lol

Linda, re the chicken nuggets, that's what I was thinking! You can't get too much broccoli if it's just in the coating. I guess she figures a little amount is better than nothing. I just tell my daughter that broccoli is good to prevent cancer, and she eats it! LOL

I've got an awesome, moist zucchini chocolate cake recipe.

Several "zucchini haters" have eaten and loved it.

IF you're wanting to get some veggies in AND you would be likely to eat chocolate cake anyway, it's probably a better option than the non-zucchini version.

But, to eat cake with the idea that you'd get even close to a serving of veggies isn't realistic. I love carrot cake, but it's cake to me, not a veggie.

Me, I just like the cake and usually have shredded zucchini in the freezer that needs using....... :+)

Here's the one I use....you can add raisins but I don't.
1 1/2 cups all-purpose flour, sifted
2 teaspoons baking powder
1/4 teaspoon salt
1/2 teaspoon mace ( or mutmeg)
1 teaspoon cinnamon
1 cup granulated sugar
1 cup chopped pecans
1/2 cup chopped dates or raisins ( I omit)
2 large eggs, lightly beaten
4 tablespoons milk
1/4 melted butter
1 cup cooked and mashed sweet potatoes
PREPARATION:
Bake or nuke sweet potatoes until soft...mash and measure.
Grease bottom of a loaf pan approximately 9- x 5- x 3-inches. ( or muffin pans).
Mix together dry ingredients ( flour, salt, spices, baking powder and sugar.
Mix sweet potato, eggs and milk.
Stir the dry ingredients and spoon onto muffin cups ( or bread pan).

Bake at 350° for about 17 to 20 minutes, for muffins or 45 minutes for a loaf` or until they test done. I often use giant muffin cups and

I have a boatload of sweet potatoes and will be making lots of these muffins!

Deanna, I think we have the same zucchini chocolate cake recipe. My son loves it, and my daughter has become a fan after finally admitting that she can't taste the zucchini after all! LOL!

I'm curious though to try some of these recipes, anything to get more veggies in my kids. Thanks for sharing.
