The mexican casserole that Connie posted was good !

Connie...Denny called from the store wanted to know if I needed anything ...So I gave him a list of ingredients...lol

I chopped up lettuce and served it over the top. We all went back for seconds...It will be on my list of things to make again.

We liked it here! It was a new thing for us. The kids were so busy moving today I took them one too and they were very happy to get it and said it really hit the spot!
I'm glad I posted it now if you enjoyed it too.

I added a can of drained corn and since I forgot the packet of taco seasoning I wanted to try I sprinkled a little chili powder over the meat/bean mixture. I still want to try it with the taco seasoning though! LOL
I used the Nacho Doritos as the base cause I had a whole bag here.

Connie, I'm going to try this tomorrow, I'll let you know what the family thinks. I'm sure I'll love it, but they are all picky!

I can't vouch for these lasting all week - not sure, but here are some recipes. Christmas Mornin Strata Serves 6-8 1 loaf French bread - cubed (either by hand or with a knife) 2 packages frozen chopped spinach -- thawed and squeezed dry 3/4 pound Provolone, chopped 14 large eggs 2 1/2 cups milk Salt and pepper -- to taste 2 teaspoons dry mustard (optional, but adds a nice little bite) 3/4 pound cheddar, shredded Grease a 9 x 13 inch baking dish. Make a single layer of bread cubes in the bottom of the baking dish. Cover the bread evenly with the spinach. Then add the chopped Provolone cheese. Top with another layer of bread cubes. In a medium sized mixing bowl, whisk together the eggs, milk and seasonings. Pour over the layers evenly making sure that all of the top layer of bread is moistened. At this point, you have two options: refrigerate it overnight or bake for 1 hour (350 degree preheated oven) When you bake it, watch it starting at about 50 minutes It shouldn't be ready to pull until its puffed up a bit and just starting to get golden brown (you don't want it too brown). If you want to test it, a knife inserted in the center should come out clean. While it is cooling, top with the cheddar cheese and allow it to melt by itself. You might need to return it for just a minute to the oven to finish melting. Makes 6-8 servings FIESTA OLE -woodie 1 bag of Tater Tots 2 large tomatoes, sliced or cut up 1 lb. bacon, cooked and cut up 1 large can diced Green Chilies (optional) 1 dozen eggs, scrambled (soft) 1 bunch green onions, chopped 8-10 oz. sour cream (optional) 2-3 cups grated cheddar cheese (or American & Cheddar mixed) Mrs. Dash seasoning (optional) In 9 X 13 dish, place tater tots and sprinkle with Mrs. Dash. Bake in 400* oven for 15 minutes. After baking, smash tater tots with potato masher so they are level and make a "shell" or crust. Layer (in this order) on top the bacon, scrambled eggs, spoonfuls of sour cream, tomatoes, green onions, and top with cheddar cheese. Bake in 400* oven for 20 minutes. Let stand for 5 minutes before cutting. Sausage egg breakfast casserole - Marilyn 1 1/2 # ground sausage 1 onion; chopped 1 red or green pepper (or both); chopped 1 teaspoon dry mustard 1 dozen eggs; beaten 8 large slices bread; cut into cubes 2/3 pound cheddar cheese cut into small cubes 2 cups milk Brown sausage in a medium skillet; remove and add onion, mushrooms and peppers. Cook until vegetables are tender. Gently combine sausage with vegetables, dry mustard, eggs, bread and cheese; pour into greased 9X13X2-inch baking dish. Pour milk over all. Cover and refrigerate overnight. Bake at 350° 30 to 40 minutes until puffed and golden. Do not over bake. This casserole is very versatile. Replace the bread with baked mini Tater Tots as pictured left. Or use fried bacon in place of sausage. Spice it up with chopped Jalapeno pepper and use Mexican cheese in place of cheddar. Add mushrooms and fresh herbs. *I like Velveeta in this. Vegetable Quiche Cups To Go Ingredients 1 package (10 ounces) frozen chopped spinach 1/4 cup diced green bell peppers 3/4 cup liquid egg substitute 1/4 cup diced onions 3/4 cup shredded reduced-fat cheese 3 drops hot-pepper sauce (optional) Instructions Line a baking tray with 12 foil baking cups, spray with cooking spray. Fry the spinach until well cooked, or for 21/2 minutes on high, and drain it. Mix the spinach, peppers, onions, egg substitute, and cheese in a bowl. Split between the 12 baking cups. Bake for 20 minutes at 350°F , check if the cups are cooked by inserting a knife in the center, if it comes out clean, they should be cooked. Any combination of appropriate vegetables and reduced-fat cheeses may be used. ________________________________________________________ Maybe you could make these up ahead of time, freeze them, take out to thaw the night before and then just bake em in the AM? Breakfast Burritos 8 eggs 1 TBL butter or oleo 8 sliced mushrooms 1 clove garlic, minced 1/4 cup sour cream 3 TBL Taco Sauce 3/4 cup shredded cheese, divided 10 soft tortilla shells 10 slices pre cooked bacon In skillet saute' mushrooms, onion and garlic in butter til tender. In a bowl, mix eggs, sour cream, taco sauce and 1/4 cup cheese. Pour over vegetables in pan and cook til set. Place one slice of pre cooked bacon on each tortilla. Spoon egg mixture into tortillas; roll up. Place seam side down in 9x13 pan. Sprinkle with remaining cheese. Bake at 350 for 5 minutes. Serve with sour cream and taco sauce. I make mine the night before and bake them in the morning til heated thru!

This is one of those "no recipe" dishes. It's something you can't really mess up. I always cook the meat first and get rid of the grease. I often will use sausage instead of hamburger or a mixture. I prefer my vegetable on the side but sometimes mix it in. Not a green bean fan so the "traditional" method is modified here. I too am not a mushroom fan so I use other cream soups, whatever I have. Cream of potato is great, celery, chicken, like I said, whatever I have. Sometimes I'll put in a can/jar of gravy instead of the cream soup if I'm tired of cream soups. Sometimes I'll use canned potatoes, fresh ones or whatever frozen potatoes I have. Large diced potatoes work great. After all, it's meat, potatoes, and a veg. How do you mess it up? It's GOT to be good! I'm moderate with seasonings these days, but I like some Louisiana Hot Sauce in it, garlic salt, onion, and if I'm short on hamburger or something I'll cut up some smokey hot dogs, use some frozen meatballs or something to put in for added meat. Depending on the flavor I desire, I might add some Worstechire sauce, Teriyaki, steak sauce or something too. I cook mine covered to get the potatoes cooked through, then turn up the oven a bit, pull the foil off and brown it up so the top is crisp. Ir reheats well either in the microwave, stove or oven although sometimes I do need to add a little water to steam it a bit to get a good reheat and then it's like when it was first made. In Minnesota, it's a "hotdish". And Tater Tot Hotdish is popular and simple. This is something that everyone should be able to make. It's really not difficult and truly is no-fail. Want more meat? Fine. Want more potatoes? No problem. Want more veggies? Go for it. No onion? Lots of onion? Half the pan with onion and veggies and the other half without? Simple. Few dishes are so simple and fool proof.

Beef Enchilada Casserole 2 lbs. ground beef 1T oil 3T chili powder 1 1/2 tsp salt 2 tsp oregano 2T paprika 1/3c flour 1Qt tomato sauce 1/2c water 1 1/2-2 dozen corn tortillas, cut in quarters Cheddar cheese chopped onion 2 small cans green chilies Brown beef in oil and add chili powder, salt, oregano, paprika and flour. Stir well; add liquids and chilies and simmer for ten minutes. In a large baking dish, place a layer of meat sauce and cover with tortillas. Add approximately half of the remaining sauce and top with a really generous sprinkling of onions and cheese. Cover with remaining tortillas and remaining sauce. Top with more onions and cheese. Bake at 350Â° for 30 minutes or til bubbling and very hot. Can be made a day ahead and then heated when ready to serve. Serves 10.

I do like chicken pot pie, and AnnT's green enchiladas. We had a version of chicken ala king too, served over biscuits, but Grandma just called it "creamed chicken" and it contained whatever leftover vegetables we had, the leftover chicken, some stock and milk, flour to thicken if necessary. My girls loved anything that contained chicken and rice, so that made it easy to make fried rice with leftovers. I've also taken leftover chicken, pulled it apart, added BBQ sauce and made sandwiches, and the girls always liked ramen noodles, so I'd throw some chopped chicken in there for some protein and I've made chicken croquettes with leftover chicken as well. I've even put leftover chicken on pizza crust with other ingredients, whatever sounds good. Like Peppi, Elery and I are fans of legs and thighs instead of breasts, and because we raise our own chicken, there are always wings and breasts available. I just dumped a bag of wings into the roaster and made chicken stock, as I'm down to 4 quarts, and Amanda will always take the breast portions for chicken nuggets. Annie

I watch sodium intake. So I used 1/2 of the Taco Season in my Cassarole which is very similiar to Connies.

Connie...I didn't use beans....??? I wonder if I missed writing that down..or just missed putting it in.

I hate it that my printer won't work...
And my other one is still out of ink.
I'd buy new ink but I had just got a new double supply of ink for the one that is sitting there with documents to print. Arrrg

Anyway last night I was thinking beans would be good in it too....LOL

Easy Mexican Casserole

INGREDIENTS
a.. 1 pound lean ground beef
b.. 2 cups salsa
c.. 1 (16 ounce) can chili beans, drained
d.. 3 cups crushed tortilla chips
e.. 2 cups sour cream
f.. 1 (2 ounce) can sliced black olives, drained
g.. 1/2 cup chopped green onion
h.. 1/2 cup chopped fresh tomato
i.. 2 cups shredded Cheddar cheese

DIRECTIONS
1.. Preheat oven to 350 degrees F (175 degrees C).
2.. In a large skillet over medium-high heat, cook ground beef until no
longer pink. Stir in salsa, reduce heat, and simmer 20 minutes, or until
liquid is absorbed. Stir in beans, and heat through.
3.. Spray a 9x13 baking dish with cooking spray. Spread crushed tortilla
chips in dish, and then spoon beef mixture over chips. Spread sour cream
over beef, and sprinkle olives, green onion, and tomato over the sour cream.
Top with Cheddar cheese.
4.. Bake in preheated oven for 30 minutes, or until hot and bubbly.

Yummy!

I make a Mexican Lasagna that's similar to this, only you layer meat, then cheese then a flour tortilla. It is yummy too and easy to make in a crockpot at low temperature.

I think I'll make this tonight for me, Alex can eat thawed out chili since he doesn't like sour cream or cheese. I'm going to try it with ground turkey instead of beef.

I just have one question, Connie, do you use "chili flavored beans" or something like plain kidney beans?

Guess I'm not going to get an answer before I leave, just wondering since it kinda defeats the purpose of chili flavored beans if you drain off the sauce, doesn't it?

I have one that is similiar that I make. I guess there are several variations.

Southwest Casserole

1 pound of hamburger
1 cans Rotel Tomatoes
1 can Crm of Onion Soup
1 Pkg. SW Veggies
1 Pkg. Taco Seasoning
Corn Tortillas
2 1/2 cups shredded cheese (I like 3 cheese Mexican)

Scramble hamburger while steaming SW Veggies.

In a mixing bowl add Soup, Rotel, Veggies & Meat. Mix in Taco Seasonings (I only use half, because of sodium)

Layer Shredded Tortillas on the bottom of a casserole. Spread the Â½ Meat Mixture and Sprinkle with Â½ of the cheese. Repeat Layers. Top with cheese.

****I have also made this with Chicken and used Doritos for layers and Cream of Chicken Soup and served Sour Cream on the side.

Here I can buy kidney beans or chili beans (chili beans are smaller) I used chili beans.
I had a regular sized can of ripe olives left from Christmas, so I just sliced what I thought was enough for the topping. But yep the 2 oz can is what it calls for.

Thanks, Connie. I just bought black beans. I changed your recipe a little more, hope you don't mind. I used ground turkey instead of the beef. I also had some blue organic corn chips so used those for about half of the casserole bottom. Used a taco sauce packet, a small can of tomatoes with lime and cilantro and a bigger one of Fire Roasted tomatoes with garlic. I wanted some fresh cilantro but our Kroger store didn't have any. I also used low fat Mexican "mix" cheese along with a little real Kraft sharp cheddar. Everything else is the same. I hope it turns out ok, it's in the oven now.

I made Alex some chili mac and he was eyeing my casserole. He liked the way it looked up until I put the sour cream on it. Lauren comes home tomorrow so she can help me eat the rest.

I am sure it will be fine Kath. I can't remember where I got the recipe, either a site or in a email. I think black beans might be good too.
I added a can of corn, I mentioned it in the other post but forgot in this one.

This is just like the Fiesta casserole recipe I make, mine doesn't call for black olives, but they sound good in it. We don't care to have the tortilla chips in the bottom though because we don't like them soggy so I serve the chips on the side.
