What to do with turkey gelatin?

I cooked down a turkey carcass and put the liquid in a container. Usually after being cooled in the refrigerator I would skim off the fat and then freeze the broth. This time I open the container and its all gelatin. I add some hot water, mixed it, cooled again. Still gelatin.

So I googled a bit and apparently what I got is good stuff. Now what? I was planning this for a soup base. How is this stuff different than just broth?

Also why did I get gelatin this time? When I cook down chicken all I get is broth with maybe just a touch of gel.

On another note, my biscuits are still not rising. If you feel bad for my family having to eat flat biscuits the rest of their lives, please check into my flat biscuit thread. : )

No need to adjust anything, it's just stock - good stock! It'll liquefy when you reheat and your soup will have a nice "mouth feel." Sorry about your biscuits! My only guess was baking powder as others said..

Yummy stock you have there. On the flat biscuits I was wondering what kind of flour are you using? If it is self rising are you adding the baking soda to it? don't add it, if you are. All purpose then use it. Is your flour old? Does your family enjoy the flat biscuits? Enjoy them if they are tasty.

Here you go Pat, it's Ann T's recipe. As you can see in the picture I do individual puffs. Ann does a full ring. La Gougere (Ann T) 1 Cup water (or half milk/halfwater) 1/3 Cup butter 1/2 Tsp salt fresh nutmeg,Grated cayenne pepper 1 Cup flour 4 eggs 1 Tbl Dijon Mustard 1 Cup gruyere cheese 1 Tsp milk extra cheese for top Bring the water/milk to a boil and add butter. When butter has~melted remove pan from heat and add flour, salt, cayenne, nutmeg, pepper and stir vigorously with a big wooden spoon. The mixture should come away from the sides of the pan and form a ball. Place mixture in the bowl of a large mixer and add one egg at a time beating well, After you add last egg continue to beat well. Mixture will be shiny. Add dijon mustard and taste for~ seasoning. Adjust to your taste. Add coarsely grated cheese. Butter a large cookie sheet and flour. Draw a small circle in the flour (about 2 inches wide) and proceed to drop the dough by tablespoon fulls around the outside of this hole, making a ring, or a crown. Dough should be piled high. Brush lightly with milk and sprinkle the extra cheese over top. Bake the ring in the over for 45 minutes at 400F. Do Not Open Door. Aften baking, open the door of the oven and leave the gougere in the oven for 5 minutes. It should be firm to the touch and golden brown. My Notes: 1)Do not refrigerate batter it needs to be at room temp. Do not place on the pan until ready to cook or they will spread. Cook as close to servng as possible...best warm but OK room temp 2)Gougere are best when cooked as close to preparing the batter as possible in order to get maximum "puff" and best texture. 3)I prefer individual puffs. Scoop up a heaping teaspoon of dough and with another spoon, push it off onto the paper-lined baking sheet (it should form a mound about 1 inch in diameter). Continue with the remaining dough, leaving an inch of space between the gougeres (work in batches as necessary, the dough can stand, covered with buttered waxed paper or parchment, for up to 1/2 hour). Bake until the gougeres are puffy and light golden, about 25 minutes, switching pan positions halfway through. Remove from oven and let cool slightly before serving, or turn off oven and let gougeres remain in oven, with door ajar, for up to 1 hour. 4) Chopped chives make an nice addition so does roasted garlic .

I use to brine until I found out about Judy Roger's presalting method. I've been using the presalting method for the last five years or so and for me, I find it superior to brining. And it certainly is much easier. Home Cookin Chapter: Recipes From Thibeault's Table Pre-Salting =========== Judy Rogers' Zuni Cafe Method Servings: 11 to 15 Note: This is more a technique than a recipe. It makes a bird that has concentrated turkey flavor and fine, firm flesh and that is delicious as it is. But you can add other flavors as you wish. Minced rosemary would be a nice finishing addition. Or brush the bird lightly with butter before roasting. ADVERTISEMENT 1 (12- to 16-pound) turkey Kosher salt 1 Wash the turkey inside and out, pat it dry and weigh it. Measure 1 tablespoon of salt into a bowl for every 5 pounds the turkey weighs (for a 15-pound turkey, you'd have 3 tablespoons). 2 Sprinkle the inside of the turkey lightly with salt. Place the turkey on its back and salt the breasts, concentrating the salt in the center, where the meat is thickest. You'll probably use a little more than a tablespoon. It should look liberally seasoned, but not over-salted. 3 Turn the turkey on one side and sprinkle the entire side with salt, concentrating on the thigh. You should use a little less than a tablespoon. Flip the turkey over and do the same with the opposite side. 4 Place the turkey in a 2 1/2 -gallon sealable plastic bag, press out the air and seal tightly. Place the turkey breast-side up in the refrigerator. Chill for 3 days, turning it onto its breast for the last day. 5 Remove the turkey from the bag. There should be no salt visible on the surface and the skin should be moist but not wet. Place the turkey breast-side up on a plate and refrigerate uncovered for at least 8 hours. 6 On the day it is to be cooked, remove the turkey from the refrigerator and leave it at room temperature at least 1 hour. Preheat the oven to 425 degrees. 7 Place the turkey breast-side down on a roasting rack in a roasting pan; put it in the oven. After 30 minutes, remove the pan from the oven and carefully turn the turkey over so the breast is facing up (it's easiest to do this by hand, using kitchen towels or oven mitts). 8 Reduce the oven temperature to 325 degrees, return the turkey to the oven and roast until a thermometer inserted in the deepest part of the thigh, but not touching the bone, reads 165 degrees, about 2 3/4 hours total roasting. 9 Remove the turkey from the oven, transfer it to a warm platter or carving board; tent loosely with foil. Let stand at least 30 minutes to let the juices redistribute through the meat. Carve and serve. My NOtes: This same method can be used for chicken, chicken pieces, pork roasts, ribs, chops, etc.. With the smaller cuts just pre-salt 4 or five hours in advance. Even this short period of presalting makes an amazing difference. Don't cover, just refrigerate and then remove from the fridge in time for the meat to come to room temperature before cooking.

I'm opne who just cannot toss bones without getting every last bit of goodness from them. Doesn't matter if chicken or turkey... great stock for basically nothing. Measured out in about 2 cup containers... perfect for cooking one cup of rice. Or add a few veggies and a few T of rice for soup. Or added to about anything that calls for water. Have plopped in container of frozen goodness into chili when envelope of seasoning called for water. No matter that chili was ground beef... stock was just so much tastier than plain water. Knew I wasn't having any left-overs from T-Day so roasted off a package of wings (one of my favorite parts anyway) the day before. Once I was done pickiing at them, into soup pot with carrot, onion and celery for a nice simmer... super jellied once cool. Cooked half a turkey breast on Friday for my NEEDED turkey sandwiches. Used some of the jellied stuff to add to pan to make nice amount of gravy. Put left-over gravy in small containers (maybe 1 1/2 cups) and froze along side vac sealed packages of sliced turkey... just enough for a generous hot turkey sandwich later.

I am very interested, because I cook most meat/poultry pieces in a frozen state. Have never cooked a whole chicken or turkey in the frozen state, but am most interested in doing so. Just need more information. Thanks." Jacques Pépin’s (Spellcheck keeps on changing to Pippin ) method is to cut up the turkey, similar to what’s known as spatchcock method. Basically cutting up the turkey in sections to cook, making it easier not to overcook the bird. Safety in cooking is very important. Every year around Thanksgiving and Christmas many people get sick from eating improperly prepared turkey, from thawing to cooking. Many refrigerators are not cold enough to thaw a frozen turkey for a few days, and not using a thermometer is highly questionable. My method requires the use of sous vide cooking equipment, which can heat up food much faster using moving hot water at a precisely digitally controlled temperature. Temperature for cooking using sous vide electronics can be accurate to less than one degrees. This allows the turkey to be thawed and cooked much faster and cooked to known safe temperature inside and out. This stuff is "magic" and soooooo good for us! We've all but lost the art of making and consuming gelatin-rich bone broth.

I will even add a couple tablespoons of unflavored gelatin (Bernard Jensen's 100% Bovine Gelatin) to the broth after cooking 10-pounds of meaty bones (chicken carcass/chicken feet/drumsticks, turkey carcass, beef bones, pork ham bone...). Pour the broth into an 8-inch square pan (you could also use ice cube trays). When set, I cut the gelatin broth into 1-inch cubes and freeze them. Each cube will produce one cup of stock by adding the cube to one cup of hot water and letting it melt. Do-it-yourself bouillon cubes.

I just learned a new trick.... You can further dry out the broth cubes by setting them on a cotton cloth or layer of paper towels in the refrigerator for 8- to 24-hours more to make them a little more portable (easier to use when traveling or for the lunch box).

I drink a cup of bone broth or add a T. of unflavored gelatin to a hot beverage as a mid-morning pick-me-up. Great to have on hand when anyone gets sick.

grainlady, thank you!!! I will follow your advice about pouring in a pan and cutting into cubes. I have quite a bit of it.

Qs How did I get gelatin? As in how can I get it again?

What's the secret? The type of bones? The length of time cooking?

I've recently added more gelatin and bone broth to my diet because of arthritis in my hands/fingers (since I was 14-years old), as well as carpal tunnel and tendonitis from too many years of knitting and crocheting professionally. I have a LOT of knitting to do before Christmas and it's helped so much I'm way ahead of schedule and NO pain killers! :-)

Wow, Ruthanna, what a blast from the past that thread is! I miss a lot of those folks. I can't remember the last time I made chicken stock without chicken feet. Raw feet, roasted carcasses. That's my formula, anyway.

When stock goes to gelatin when chilled... YA DONE GREAT!! I'd put into freezer containers... know how much is in each one, say 1 or 2 cups.

I almst NEVER toss any bones without getting some stock out of them... chicken, turkey, ham, etc. From frozen, it'll melt down pretty quickly over medium heat. Find it makes a nice differrenct from water for things like rice and veggies.

When T-Day rolls around (SOON!?!), a container will be nice to add extra richness to gravy or moisten stuffing.

Update: I have been freezing it in a mini muffin pan. Then I pop them out (they come out very easy) and put them in a ziplock freezer bag. These will be easy to use. Thanks all!

Pig's feet give you all the gelatin you want and you can eat the meat too.

You can buy beef tendon in Asian stores. That's basically 100% gelatin.
