I saw your post for bear recipes and was reminded. I tried to cook an old wild boar roast once. It was awful. No amount of garlic or marinade seemed to improve it. I thought I'd never get the smell out of my kitchen and I nearly threw away the cast iron skillet I used to roast it in.

Unusual is in the eye of the beholder.

Most unusual? I dunno.....

Snapping turtle? It was darned good. Porcupine? It tasted like dark meat turkey, also good. Dandelion greens? I like them, but not as well as spinach or chard.

Unusual for me would be truffles or caviar, both of which I disliked.

Miners' Lettuce: grows wild in the CA yard in Spring. It's a bit sweeter than Spinach but has the same texture and uses. The Grandkids thinks it's so special to go out "picking lettuce" with the basket over their arm.

I've eaten a lot of herbs which many people would consider unusual, including flowers. But I think the most unusual thing I've ever eaten was emu steak - cooked on a shovel over an open fire. Tastes like strong beef - but it has a long-lasting effect. Burp. Burp. Burp.

There was also the emu egg, made into an omelette big enough for 6 people. Quite nice, actually!

Do frogs' legs count as unusual? I've had those, and liked them. Can't come at snails, however.

Gosh, that is difficult! As barnmom says, unusual is in the eye of the beholder.

Because I dabble in many ethnic cuisines, I have used many ingredients that might be considered, "unusual" depending upon perspective.

I use a number of spices and herbs that many Americans would consider unusual, for example. Asafoetida, kari leaves, cassia, fenugreek, black cumin, mango powder, black salt, kaffir lime leaves, shiso...heck, even cilantro seems unusual to a lot of people.

I have cooked any number of "innards" that many people would think unusual, species of fish only available in ethnic markets, various preserved and dried foods that one would never find at the neighborhood grocery store, etc.

I dare say I have a number of ingredients in my pantry that would stump many people.

Heck, if it's edible, and people somewhere enjoy it, I'll give it a try. I draw the line though, at anything that is still lively going into my mouth. Gotta be dead.
