Advice On Saturday Dinner?

I am making dinner for some of our oldest friends tomorrow, who are visiting all the way from SoCal. Because I am an idiot, I am going to try a dish for the first time. Rabbit in mustard sauce. Classic French comfort food, so they tell me.

Anyway, I could make this on the stovetop, or I could make it in the oven, and I could make it "wet" (brown then braise) or I could make it "dry" (marinate then cook). Any recommendations?

For accompaniment, is there a time-honored side that goes with mustard sauce rabbit? I was thinking about French mashed potatoes (aligot) and some braised carrots, but am very open to suggestions.

Finally, I made some duck confit and then forgot about it - it has been in the refrigerator, sealed in the duck fat and covered, for 3+ weeks now. D'you think it is still "good"? I could use it as another dish in case someone doesn't like rabbit.
