Butting new wall against old wall...

My house was built in 1939 or so. Walls are drywall topped with a cement type stuff topped with plaster, total a bit over 3/4" thick (it varies a little). I recently knocked out a knee wall to make a room bigger. Having difficulty getting the new wall to line up with the old wall without a ÂridgeÂ. Adding to the difficulty, lumber isn't the same dimension we get nowadays, the 2x4s are 3 3/4, or tad thicker. I want to prevent a "ridge" where the new wall butts up against the old wall. I did rip some lumber to the appropriate width (depth, actually), but walls aren't true so the new drywall sticks out at the top and will be a bit deep at the bottom. How to avoid this without doing some serious/extensive use of drywall mud and endless feathering?
