I know nothing about the brand of product you are using. If it is only key lime juice, here is the ingredient list: 4 eggs, separated 1 14-oz can sweetened condensed milk (I use fat free) 1 scant 2/3 cup Key lime juice Zest of one lime (optional) 1/2 teaspoon cream of tartar Directions With an electric mixer, beat the egg yolks on high speed until thick and light in color. Turn off the mixer and add the condensed milk. Mix on slow speed. Still on low speed, add half the lime juice, cream of tartar, and then the remaining lime juice. Mix at slow speed until blended. Pour into the prepared crust and bake at 325 degrees for 15 minutes or until the center is firm. Hope this helps!

Just need to find some time and I'll make my own key lime pie from these. I've seen some recipes with sour cream. Do you think that's a good addition? Another recipe added 2 tablespoons of lemon juice. And a combo of lime and lemon zest might be nice. Where did I hear that a garlic press is useful to squeeze them? Edit: Here's the real Key Lime Pie. Recipe called for a layer of whipped cream, but I ran out of time ...and had to use a store-bought crust. Doesn't really need the whipped cream at all. Wow. So yummy. So limey, tangy, yet sweet. Better than at the restaurant.

I am juicing them now for the pie and will calculate roughly how many it takes to give me 1/2 cup. I'll report later. Hobby, I have been thinking of you because of my key limes. Ok, so I definitely think you need to get a thorny key lime! My thorny one and thornless ones are both about the same age (I think the thornless one is a little older and definitely taller) and they are both my son's roommates for the winter ;-), so identical conditions. Let me tell you....the thorny one has just started going crazy and will have blossoms coming out of the nodes of almost every branch. The thornless one....almost nothing. For that matter, the baboon lemon that has not lost one leaf and is also in his room, but not up by the window, is also going into a major bloom flush. I'm a happy camper!

Cool! I wouldn't have guessed from the ingredients but then I'm thinking it includes the crust, not just the filling. Congratulations! Question: I notice that it doesn't have the 1:2 ratio, or does it flex to that extra half cup flour?
