Key Lime Pie Cookies!

I kid you not, these taste like Key lime pie. I was tempted to spray them with whipped cream!


Ingredients

  • 2-1/2 cups whole wheat flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 stick unsalted butter
  • 1 cup packed brown sugar
  • all the zest of 2 small limes
  • 1/4 cup Nellie & Joe's Key Lime juice
  • 1/4 cup whole milk
  • 1/3 cup honey
  • 2 teaspoons vanilla extract


Process


Preheat the oven to 350 degrees. Mix the flour, cinnamon, baking soda, and salt in a bowl. Set aside. Cream the butter, sugar, and lime zest. Mix in the milk, lime juice, honey, and vanilla. Add the dry ingredients and mix. Sticky dough will spread, dry dough will produce dry, crumbly cookies. You want something in-between.


Roll into 1" to 1-1/2" balls and place on parchment paper. Press to flatten, but no more than halfway. Bake for 18 minutes. Yields 2 dozen cookies. Enjoy!
