Another reason to make AnnT's scones

I am toying with a very small commercial opportunity that could involve these wonderful scones (among a few other things). I have no intention of baking every morning and wanted to see if these could be prepared and then frozen prior to baking without sacrificing the final product. They can! Yesterday I made and shaped the dough, added the cream and sprinkled icing sugar and then placed them in the freezer on a parchment lined cookie sheet and covered them with plastic wrap. Today, I took two out of the freezer and turned on the oven. The scones sat out for the 40 min. it took for my oven to reach 425. Baking time was just about 18 minutes, give or take a minute. They tasted wonderful. No difference whatsoever from out-of-the-bowl fresh. Now, if I choose to pursue this opportunity, I can sell frozen unbaked scones. Less work for me, less expense and the shop can offer hot from the oven product. The only downside is now my scone cravings can't be resolved as quickly.
