Recipe needed - frog legs!

I am still laughing about using the "search" option before posting. I never did find a recipe, but everything else you might need to know about frogs - real and decorative - can be found here. OK - so I have never had frog legs in a restaurant, but I found some today in an eclectic grocery store. I had to buy them. They are fresh. SO - flour, egg dip, panko - ??? That is my initial inclination, but perhaps you have something special to recommend. Thank you so much!

Skin them, shake in seasoned flour (I usually use salt, pepper and paprika) and saute in garlic butter or olive with garlic until golden brown.

Here's one I have not tried yet.

Finley's Frog Fry

16 frog legs, skinned
1 cup flour
1 cup crushed saltine crackers
1/4 cup corn starch
1 tbs black pepper
1 tbs season salt
1 tbs lemon pepper salt
2 eggs
1 cup milk
2 quarts peanut oil

Pat legs dry with paper towels. Heat oil to 375 degrees. Combine dry ingredients into a large plastic bowl with lid. Dip legs into milk and egg mixture then drop into bowl with dry ingredients. Cover bowl and shake your legs! Drop in hot oil and cook until golden brown.

Thanks for the advice, the post was posted five days ago, so I really didnt think I was going to get a response any time soon, the frog has gotten much better basically on his own, all I did was to dilute three drops of hydrogen peroxide with three drops of water and applied the mixture to his leg with a cotton swab, I dont know if that had anything to do with his recovery but Ive been monitering him daily and he has been eating and now has better control of his leg, the color is coming back and he doesnt seem to have a problem keeping the leg tucked under when resting, whereas it was just dangaling the first two days, hes also getting along around the set up just fine now, so I hope/think whatever was bothering him was killed by the peroxide, I dont really care what made him better, Im just glad that he is! =)

I found one of these the other day on my tomato plant. I guess they like any of the nightshade family (tomatoes, peppers, eggplants), however rarely is it something you need to control. Unless you are infested, or see a ton of damage, I wouldn't worry about it - I'm certainly not! I'm going to just keep an eye on the plants - see if I notice any severe damage. There has been very minimal thus far.

RECIPE: need a recipe for a Sponge cake

Angel cakes don't use any yolks. SPONGE CAKE 6 eggs 1 TBL lemon juice 1 tsp grated lemon rind (no white part, only the yellow) 1 cup sifted cake flour Pinch of salt 1 cup sugar Preheat oven to 325Â°. Lightly grease & flour the bottom, not the sides of a 10" tube pan. Break the eggs into the large bowl of a mixer, add the lemon juice & grated rind & beat the mixture at highest speed until soft peaks form, 12-16 minutes. while the eggs are being beaten, sift together the flour & salt onto a piece of waxed paper. Continue beating the eggs at highest speed (after soft peaks form) & pour the sugar in a fine stream over them, taking 2 1/2 to 3 minutes to add all the sugar. Change to lowest speed & sift the flour & salt over the surface of the mixture as the bowl turns, taking 2 1/2 to 3 minutes to add all the flour. Scrape the sides of the bowl & beat at lowest speed 1/2 minutes. Pour the batter into the prepared pan & bake 50 minutes, or until a toothpick inserted near the center comes out clean. Invert the cake pan & set it on a rack to cool. Prop it up if necessary so that the air can circulate between the cake & countertop. Here's my avorite recipe, I've made it many times. Siam Restaurant's General Tso's Chicken 1/2 cup cornstarch 1/4 cup water 11/2teaspoons minced garlic 11/2 teaspoons minced gingerroot 3/4 cup sugar 1/2 cup soy sauce 1/4 cup cup white vinegar 1/4 cup sherry 11/2 cups hot chicken broth 1 teaspoon MSG(monosodium gluconate), optional 3 lbs. deboned dark chicken meat, cut into large chunks 1/4 cup soy sauce 1 teaspoon white pepper 1 egg About 1 cup cornstarch 1 cup vegetable oil, plus more for stir-frying 2 cups diced green onion 16 small dried hot peppers To make sauce, mix 1/2 cup cornstarch and the water together. Add garlic, ginger, sugar, 1/2 cup soy sauce, the vinegar and wine. Add chicken broth and MSG, if desired, and stir until sugar dissolves. Refrigerate until needed. In seperate bowl, mix chicken, 1/4 cup soy sauce and the white pepper. Stir in the egg. Add about 1 cup cornstarch, until chicken is coated evenly. Add 1 cup oil to seperate pieces. Divide chicken into small quantities and deep-fry @ 350 until crispy. Drain on paper towel. Place a small amout of oil in a wok and heat until wok is hot. Add green onions and peppers and stir-fry briefly. Stir sauce and add to wok. Place chicken in sauce and cook until sauce thickens, adding water or cornstarch as needed for the right consistency. When I was young, my brothers often went frog-spearing at night. The legs were pretty much prepared as fish were...flour, egg, crumbs, fry.

jojoco - THAT is a gross hoot!!!! I love it!!! I will include it in emails to my friends for a while!!!

Package came w/ 4 sets of legs. I saved two for tomorrow - and had 2 for breakfast this AM. I tried to keep from the chicken thing - only because I would feel less guilty if I WAS actually eating chicken.

I just flour dusted w/ garlic seasoning - and fried in butter. Added lemon juice when done. Oh - so good.

I can still see the chicken connection in one's mind - because it really doesn't have any strong predominant other taste. Maybe somewhat like zucchini in that regard - it tastes like whatever else you put with it.

So - I think I will stay with the first plan for breakfast tomorrow.
