Express Fruit Cobbler

Hi everyone,

Saturday is the last "workday" before the show goes on at our local theatre (Moon Over Buffalo). For our lunch break (or brunch when we arrive), I'm planning on making some iced tea (mint, from tea bags lol) and this cobbler recipe I found. Just bought the ingredients today. The recipe says blueberry but it also notes that any kind of fruit pie filling can be used. So, I said what the heck and chose blackberry pie filling :-). Here's the recipe:

2 20 ounce cans blueberry (or other fruit) pie filling

1/2 cup (1 stick) butter, softened

1 18 ounce box white cake mix

1 egg

Preheat oven to 350 degrees. Spread pie filling in 9 x 13 inch baking pan. In large bowl, cream butter to smooth texture. Add dry cake mix and egg and blend well (mixture will be very stiff). Spoon mixture over pie filling. Bake for 40 minutes or until golden brown. Cut into squares. Serves: 16.

I'll be leaving my cobbler whole when I take it with me. That way, whomever wants a piece can cut off as large or small of piece as they want it.

Oh, and on the back of the cans of the pie filling, they include two recipes: Blackberry Pie and Blackberry Coffee Cake.

Sounds lively....and enjoy the show....It's very very funny!!!
We are getting very close to production date on the show I am directing...wish you would come and bring my cast and crew some cobbler!...maybe I'll have to make one!!

Bumble doodle, I've never frozen one unbaked. I'd be afraid that the juice would soak into the flour too much before it froze. I do freeze just the already cooked filling and then I can thaw that and top it with fresh crumb topping. Or I use it instead of dates in date bars. I also freeze raw sliced peaches, but we usually thaw those and eat them raw, or pour a bit of cream over them while they are still frozen and stir until it makes "ice cream". My recipe for cobbler is gluten free, but it should work with wheat flour. It's pretty basic. I'm kind of a by gosh and by golly cook, so sometimes measurements are just what looks right. Oregon Woodsmoke's Peach Almond Cobbler Preheat oven to 425 F Fresh peaches, sliced, pitted, peeled or not as you prefer 1/4 cup granulated sugar 1/4 brown sugar 1/4 teaspoon cinnamon 1/8 teaspoon, very scant, allspice 2 teaspoons cornstarch 1 teaspoon fresh lime juice Toss peach ingredients together to coat and bake for 10 minutes at 425 F Remove from heat, reduce the heat to 395 F, and top with: 1 cup flour 1/4 cup white sugar 1/4 cup brown sugar 1 teaspoon baking powder 1 cube real dairy butter 1 teaspoon real almond extract Cut the butter into the dry ingredients until it resembles course meal. Add the almond extract and mix it in. Top the peaches with the crumb mixture. Bake the cobbler for 20 minutes at 395 F Remove cobble from oven, and top with: 1 egg white 2 Tablespoons granulated sugar 1/4 teaspoon cinnamon generous handful of sliced almonds Mix the almonds into the egg white to coat. Add the sugar and cinnamon to blend. Spread the almond mixture over the cobbler and return to the oven and bake for 10 more minutes at 395 F It's done when the almonds are nicely toasted and the sugar is melted. Dough should feel set to the touch.

Cynic hit it right on the nose: I'm writing down recipes to give to her as a gift. She's also getting two cookbooks of Depression-era recipes and a kitchen towel set that mom got as a free gift in a catalog order and was planning to give away. Perfect timing! lol Annie, the largest of the pans I already have planned for frying up some green tomatoes this summer :-). The smallest looks big enough to fry a single egg and the medium sized pan looks right for making grilled cheese or French toast I was looking through my Pioneer Woman cookbooks. I wrote down her Spicy Pulled Pork recipe and the recipe from mom's recipe box for M&M or white chocolate chip cookies. Now I have a dessert recipe, a cookie recipe, two meat recipes, and a potato recipe. Now all I need is a beverage recipe and perhaps a salad recipe and/or an appetizer/snack recipe. Brad AKA Moonwolf

It is acceptable that a top-crust cobbler can be a bit soupy. Probably why the dish exists. It is easy with fresh seasonal fruit and the top is always crisp. I've never used canned fruit because of all the gooey sugars. My dad likes the warm fruit over ice cream but could care less about the crust. Others want crust so it is a crowd pleaser and so good for breakfast the next day. (already prepping for a family reunion next month, oh my) Seems like you need a good tried and true that you trust. If you like your MIL you should ask for her recipe...my MIL is thrilled when i call her for help. I've tried different recipes based on the seasonal fruit at hand. My t&t is a rustic crostata, classic bottom pie crust baked in a glass pie plate where the crust is so thin it folds over the top slightly. If too thin it is still spoonable, but often can be served in slices, has a nice bit of crispy crust, as it is not a mile-high traditional pie. -never liked big pie. (and i make it because that is what i like). The link is just an example but they are rustic and small...fine for 4 adults. For a large family a cobbler is what i will need for my family visit. Linda C, wishing you and your cast and crew the best of luck :-D. I had a heck of a time choosing what kind of pie filling to make for this cobbler. I originally wanted the blackberry pie filling, so I hope my first instinct was a good one. LOL I'd be more than happy to bring your company some cobbler!

Annie, we love our food as much as we love the theatre. I know at the last cast party, my gram's lemonade and the Pink Lady Cake were huge hits. This cobbler recipe is from the same book as the Pink Lady Cake. I know it's not a good thing, but the thickest section of my recipe box is the desserts!

Here is the blackberry cobbler! I had a helping hand with this: my eldest niece :-). She and my nephew are spending the night. I cannot tell you how good this smells!

Mom and I made the tea earlier today. We had a small sample of it and it's good too :-). I think we'll have a happy workday tomorrow lol.

Brad I'm so glad you posted this recipe!! I had a picnic party this weekend and didn't have time to make my usual blackberry cobbler recipe. This was just the ticket to round off the meal!! Thankfully I had some yellow cake mix in the pantry! I'm going to keep this recipe handy for many last minute dinner parties! I used a bag of frozen blackberries which I dolled up with some brown sugar, cinnamon and some dabs of butter. Then topped with the cake mix as directed.

A good recipe to keep handy, and it looks like it would be easy to make half a recipe with one of the Jiffy 9 oz. cake mixes. I don't often feed 16, but it will sure make a good dessert for the family.

The cobbler was a huge hit and so was the mint tea! I only had a few pieces left to bring home and a little bit of the tea as well. Glad everyone enjoyed the recipe! This was some of the best cobbler I ever ate! To think, this came from a recipe book that I found for sale at Dollar General!

I don't know about the rest of you, but I took a container of Cool Whip to go along with this as well. Mmmm-mmm!

lpinkmountain, glad I could help! :-) I didn't add any spices to my blackberries, just what it directed in the recipe. I'm very happy to hear that this was a hit for your picnic party!

Mustangs, lol I should have put up a disclaimer saying that this was extremely delicious and may cause one to wreck their diet. What kind of pie filling did you use?

Raspberry pie filling with a few fresh raspberries mixed in. That's what I had in the pantry along with a long ignored Jiffy Mix.
