Not making anything, and don't watch, but this one is so good.

You can make as is or with the modifications.

Toasted bruschetta is best for serving with.

Blackbean raspberry salsa dip

1 red onion, chopped
10 oz. can black beans, drained
1/2 cup white canned corn (drained)
1 tsp. cumin (sprinkle on top of corn) **skipped the cumin
8 oz. pkg softened cream cheese
1 jar raspberry salsa ***I used raspberry chipolte salsa
1 cup pepper jack cheese, grated ***used finely grated pizza blend
Preparation:
Preheat the oven to 350 degrees F. In a greased 9 x 9 pan, or other medium-sized casserole dish, layer the ingredients in the above order. Bake for 30 minutes.

This year it is just the two of us and decided to eat up frozen things we have.

But in the past I used to do appetizer nights often with the family and movie night.

One that was easy, that most don't make that I know of is you take some long bread sticks. spread some cream cheese on one end of it and wrap some thinly sliced ham or other meat around them.... the stick does get a little soggy under cheese if you make them too far in advance, but they are really tasty. you can also season the cream cheese any way you like, cumin/chili powder for mex taste... or italian seasoning if you want to make it kinda Italian.

Another thing my kids really liked was mini quiches. Easy to warm up at the party.

Another thing is mini wieners wrapped up in cresant rolls. I take them out and cut each triangle into 3 small triangles, wrap around wienies and then bake till done. YUMmmmmmm

As every year, we are going to friends who have a 70" TV. They usually invite a dozen or people & it's a potluck. I'm making two appetizers:

Bacon-Wrapped Jalapeno Thingies

20 Fresh jalapenos, 2 Â 3 inches in length
8 oz. Cream cheese, softened
Thin, regular bacon, sliced into thirds

Slice the jalapeno in half length-wise. With a spoon, gently scrape out the seeds and white membranes.
Smear cream cheese inside each jalapeno half generously.
Wrap 1/3 slice bacon around the jalapeno snugly, but not tight.
Stick a toothpick through the middle of each one; this will keep the bacon from coming off in the oven. Place them on a pan with a rack (so bacon grease can escape) and bake at 375 degrees for 20-25 minutes.

Serve hot or at room temperature.

Asparagus with Wasabi-Mayonnaise Dip

3 lb thin to medium asparagus, trimmed
1 cup mayonnaise
4 teaspoons soy sauce
1 1/2 teaspoons sugar
2 teaspoons fresh lemon juice
2 teaspoons wasabi paste

Blanch asparagus in 2 batches in a large saucepan of boiling salted water 1 minute. Transfer to a colander and rinse under cold running water to stop cooking. Drain well and pat dry.
Whisk together mayonnaise, soy sauce, sugar, lemon juice, and wasabi paste until sugar is dissolved.
Serve asparagus with dip.

Finally decided to bring wings. Check out Alton Brown's recipe. It's very good and not as messy to eat as most. Dottie

I'm making Hummus dip this year (it's on my diet). Found a recipe for it on allrecipes.com that doesn't call for tahini (which I cannot find in my little town).

My friends always look forward to my appetizers every year.. hope they aren't disappointed in this one. They are used to my cheesy, high calorie dips and such. Might lose my 'appetizer queen crown' this year. lol

Roasted chickpeas

1 (12 ounce) can chickpeas (garbanzo beans), drained 2 tablespoons olive oil salt (optional) garlic salt (optional) cayenne pepper (optional)
Directions
Preheat oven to 450 degrees F (230 degrees C).
Blot chickpeas with a paper towel to dry them. In a bowl, toss chickpeas with olive oil, and season to taste with salt, garlic salt, and cayenne pepper, if using. Spread on a baking sheet, and bake for 30 to 40 minutes, until browned and crunchy. Watch carefully the last few minutes to avoid burning.

That asparagus with wasabi mayonnaise dip sound so good. I may have to make a smaller recipe of that.

These two are REALLY Simple and ALWAYS get rave reviews!

Bruschetta

Ingredients:

Tomatos (Nice and Ripe)
1 Clove Garlic
1 Cup Olive Oil
1 Cup Chopped Fresh Basil
Salt
Mozzarella Cheese
French or Italian Bread

Find the smallest italian or french bread you can.
Cut it in 1/4" slices, toast it lightly

Mix:

A cup of fresh chopped Basil
1 Clove of Minced Garlic
Olive Oil (about a cup)
Pinch of Salt
Let this marinate for about an hour (room temperature)

On the toasted bread, place a slice of Mozzarella Cheese, a slice of tomato and a bit of the marinade mixture. DONE! Its delicious! Make plenty, they go fast!

EASY DIP:

In a 8 x 11 inch pan

Spread 2 packages (8 oz size) of cream cheese
Place 2 cans of Hormel or your favorite chili on top (spread)
Cover with Shredded Cheddar (0r your favorite cheese)

Bake til bubbly and melted, serve with Tostito Chips!
