why can't you reheat a blintz souffle?

Sorry to be such a cooking id-yit, but my blintz souffle recipe calls for frozen blintzes. I had planned to bake it on Friday and then reheat it at a low temp on Saturday while I'm at temple.

I read elsewhere that I should not bake and re-heat it. That poster said to bake and then freeze it, but I'm hesitant to do that because I always thought that you shouldn't freeze food that's already been frozen once before--ie the previously-frozen blintzes.

Can someone please advise me? Thanks!
