I'd have to see the recipe to try and figure out why it might not reheat. What are you supposed to do if you were to freeze it? Wouldn't you reheat it after the freezing? I can see no reason to freeze something for just a day or two.

Oh, gosh, I have refrozen and reheated and re-you-name-it to blintz souffle. The worst thing that would happen is that it might "weep" a little. So just pour it off or blot with paper towels. It may not be quite as good as fresh-baked, but it's still okay to eat.

I have reheated blintz souffle and it is fine. It does come out nice and puffy when freshly baked and you can't quite get that back. But everyone will be hungry and quite happy with a reheated blintz souffle on Saturday.

Seems I might not have to worry about it since both grocery stores in my area are completely out of cheese blintzes and don't expect another delivery until Sunday--possibly late Friday so I'll have to see what I can do. I guess I can make it between temple services but I hate to do that. Or I'll make it with blueberry and apple blintzes.

Do you all serve it with a strawberry sauce? I like strawberry rhubarb but I can't find rhubarb either. Grrr.

Have no fear, I have recipe that I use that doesn't use packaged blintzes. It's easy and frankly, I like it better. It seems lighter.
Here you go:

Blintz Souffle

¼ lb. Butter or Margarine softened
1 cup all purpose flour
1/3 cup of sugar
2 teaspoons baking powder
6 eggs
1 ½ cups dairy sour cream
Blintz Filling (see below)
½ cup of orange juice

Blintz Filling
1 (8 oz.) pkg. cream cheese (cut up)
1 Tablespoon sugar
1 pint small curd cottage cheese (2 cups)
1 teaspoon vanilla extract
2 egg yolks

Preheat oven to 350. Butter a 13x9 baking dish; set aside.
In a blender or a large bowl, (I use a blender) mix butter, sugar, eggs, sour cream, orange juice, flour and baking powder until blended. Pour half of the batter into prepared baking dish.

Prepare Blintz filling in a medium bowl or Cuisinart fitted with the metal blade, combine all ingredients until blended. Drop filling by heaping spoonfuls over batter in baking dish. With a knife, spread it evenly; it will mix slightly with the batter. Pour remaining batter over filling. Unbaked souffle may be covered and refrigerated several hours or overnight until ready to use.

Before baking, bring souffle to room temperature (or close). Bake uncovered 50-60 minutes or until puffed and golden. Serve immediately with blueberry syrup and sour cream or jams if desired.

DON'T WORRY ABOUT RE-HEATING IT. I've done it before, just nuking it in the microwave in smaller portions.

Refreezing previously frozen food only applies to meat that has not been defrosted in a refrigerator and so has potentially started to go off (freezing will not stop the process once it starts).

Thanks for your responses everyone, especially for the recipe compumom. I'll have to try it sometime. For now, nervous cook that I am, I'm going to make the blintz souffle using blueberry and apple blintzes. That's the plan so far anyway. Or maybe I'll get my courage up. (Kind of leery after my carrot apple muffin fiasco. And that recipe was supposed to be fool-proof.))

I have a similar recipe to what compumom posted (may be the same one, it's at home and I'm at work) and it's very easy and delicious. Meg, you should try it! I'm planning on making it tomorrow afternoon for our break-fast.

When I went to Costco today I stopped at Trader Joe's and bought their version of cheese blintzes: made with toffuti of course. Then I ventured into the local QFC and found--ta da!--cheese blintzes. Real cheese blintzes. (Must be a less Jewish area.)

I bought four boxes. So now my garage freezer has four boxes of cheese blintzes, three boxes of tofutti blintzes, four boxes of blueberry blintzes and two apple. Whew! That's alot of blintzes!

OK so how did it all come out? Did you reheat the blintz souffle and did you use the cheese ones or the fruit ones? And how was everyone's fast? And the break-the-fast meals? And the rabbis' sermons? We did quite well in our shul, anyway those around me seemed to be uplifted and by the end of the day, 7:30-ish, the energy was overwhelming, with surround-sound shofar blasts from everyone in the congregation who had a shofar and the strength to blow it! Wow! There really is something to fasting all day in the company of hundreds of others who are doing the same. Once you get past a certain moment, it seems to be a different moment for everyone, you get a new surge of energy that carries you through to the end. At the point of actually breaking the fast you don't really feel that hungry. ...until that first bite...but the day isn't only about fasting and when the whole thing comes together, for me there is a sense of renewal (sp?) and strength that surprises me every year.

You know, it isn't really hunger that makes you feel bad. I mean, after all, you're just skipping breakfast and lunch; that's enough to make you hungry, but not to make you feel sick.

It's the dehydration and, for those of us who drink coffee or cola, the caffeine withdrawal that give you that woozy headache.

So I eat a high-carb dinner the night before to help with the dehydration. I used to cut down on caffeine for a week before to avoid the withdrawal, but I've decided it isn't worth it to me to give up most of my beloved coffee for a week or so just to avoid a few hours of discomfort!

Our services were good and the sermons were terrific. My husband is the cantor, so I cannot be objective about the davening, but I thought he did great. I am amazed at how he is able, year after year, and even with so many other people participating, to end Ne'ilah EXACTLY on the dot. Last year at a neighboring shul with a new rabbi, they went over by an HOUR -- I'm surprised there wasn't a riot!

An hour?! Oy Vey!! Yes about the caffiene thing. I load up on the carbs but I didn't know it helped with the dehydration problem. I wondered how I managed to get thru without several drinks of water during the day. On regular days I usually have a bottle of water with me because I walk a lot. Given the long walk to shul, 14 blocks, its mystified me. But now I know, and as my kids used to say, "...and knowing is half the battle.."

I made compumom's recipe and it turned out great! Break was just me, DH & my younger son, Ben, and a friend of ours. I cut squares out of the souffle, MWd them for about 3 1/2 minutes, and they were fine!

Services were good, sermons were good, and we had a discussion on cremation during the break (we always have a discussion on something at around 4 pm before we begin the service again at 5).

Shofar was supposed to blow at 8:02, they blew at 8:10 so not too bad. One year we were between rabbis and we had a sub rabbi for high holidays. The head of the RPC (religious practices committee) decided (about 30 min before services should have ended) that he had forgotten to tell this rabbi that we do one additional service - or some such directive - and we went over by about 40 minutes. It was awful!

I agree with gellchom regarding skipping meals as opposed to skipping water. I drink water all day so it's tough not to. I don't do caffeine so that's not a problem for me. I also agree with mimsic that I definitely feel a sense of renewal from the day.

Someone or other is always asking me about fasting -- "I don't know how you do it!" "Isn't it hard??" and questions like that. I always reply, you know, it's not only not bad, but I actually welcome giving my stomach a rest for one day. And like mimsic said, you're in the synagogue, everyone else is fasting, you're praying and the day just goes by.

One funny thing, am I the only one? Or do you find yourself singing some of the melodies in your head for a few days? Just hearing some of those so many times during the day, I can't help replaying some of them in my mind!

On Sunday afternoon there was a concert on the steps of the library and there were several friends from shul there. It kinda felt like 'third-day yontif' for a few minutes, til reality hit. So, yes, gellchom, the melodies and the whole feeling lasts into the next few days. I watched the first installment of Ken Burns's "The War" last night and am not sure I can continue because it took me down so many notches after feeling so high from the fast, shul, community and all that. I need to keep that positive momentum right now.

I agree about the sense of renewal. I had had a bad year (issues with DS with special needs), and I missed all of Rosh Hashanah dealing with his problems (hospitalization for depression/anxiety followed by medical leave of absence from college). I am a past president of our congregation, and we built our new building when I was president, so it is always a pleasure for me to see it so full. I felt a sense of homecoming and inspiration at Kol Nidre, and I found Yom Kippur day services equally moving and inspiring. I had stupidly eaten something salty for dinner Friday night, so I was very thirsty, but I won't make that mistake again. Like Lowspark, I actually like fasting. For me, it distinguishes Yom Kippur from every other day in the year. We had over 40 at our home for break-fast (probably stupid to have done, given our lives the last few weeks), but it was very nice. We have lots of friends whose parents have retired here, so we had three generations of several families, and it was very heart-warming. Now I just have to figure out how to keep the positive momentum going....

brachl: it was the right thing to do, have your house filled with family and friends to break the fast. The hard times are when you need your rituals, your safety net around you. The year my youngest was severely hurt in an accident - 2 weeks before Pesach - we were complete basket cases. But come the 2nd seder - our house was full. We always had the seder the second night and I couldn't figure out how it was going to happen that year. But I discovered that more than any other time, when things are bad, you need your rituals. We changed the dishes, cleaned the kitchen (but not the rest of the house as we have always done - my wonderful aged aunt-in-law said, "the prohibition is against Chometz, not dust.") And so we had the seder. It was absolutely the right thing to do, there was no other answer. And nearly 10 years later, I am very glad we did that. My children learned from it and we have supported and been supported so many times by friends, neighbors, congregants and the practices and rituals of life, whether religeous or otherwise. May you and your family find comfort in the weeks and months ahead. - M
