Sharon, these are great - double the recipe right away cause they go in the freezer and I promise you, everybody will eat em up quick! I take a few out and have them for lunch and once Ken took just 2 of them out and put them in the toaster oven for a snack for himself.

SAVORY SPINACH BALLS
from Ruthanna

2 packages frozen chopped spinach, cooked and drained
1 large onion, chopped fine
4 eggs, beaten
3/4 cup melted butter
1/2 teaspoon salt
1/2 teaspoon garlic salt
1/2 teaspoon thyme
1/2 cup Parmesan cheese
2 cups Pepperidge Farm herb seasoned stuffing mix

Mix all ingredients in a large bowl; chill 1/2 hour.
Roll spinach mixture into small balls (rounded teaspoons or tablespoons). At this point, you can freeze the unbaked balls on cookie sheets, then transfer to plastic freezer bags and bake when needed.
Preheat oven to 350 degrees F. Grease cookie sheets or line with parchment paper. Bake balls for 15 minutes.
Note: I like to serve these with a dip of mayonnaise or sour cream mixed with mustard and some dill.
Makes about 4 dozen

Seems to me I also read that you could spread the mixture in a jelly roll pan and cut into squares after baking.
Did I dream that up all by myself?

I love spinish balls. I would think spreading them and cut sq would work. would you do an adjustment on cooking time.
It sure would be a lot less messy than rolling the balls.

Maybe old age is catching up with me too.... I hate to be obtuse, but are these an appetizer? served hot? They sound very interesting for the holidays coming up... especially if they can be made ahead and frozen.

Linda, I am a few seconds younger than you and I have no idea why Ihave a can of chipoltles in adobo in the pantry. It has been there a year now and I have no clue.

Peppi, I bet you have that adobo to make Jessy's honey/chipotle/lime marinade/dip.

Hey Diana, we all make typing/spelling errors. In fact if I'm not mistaken you just spelled/typed your own name wrong. LOL! I don't know about Linda, but I don't want my mistakes always pointed out. Of which I'm sure there are many. In fact I'm sure that because I spell a number of words the Canadian/British way that there are many here that think my spelling is worse than it actually is. And just for the record "Appetiser" is in the British dictionary.

Ann, my boss is Canadian. She spells "cheque" and "honour", calls vacations holidays, says zed instead of zee. She has also introduced us to nanaimo bars. She thinks we're wrong and we think she's wrong, but we all laugh about it. She cracks up every time we say "g'ahead" for go ahead.

I have plenty of mystery stuff but I could win the prize for antique food. I still have spice jars with price stickers on them instead of bar codes. Maybe I can sell them on ebay.

I don't mind at all having errors pointed out....I make enough typos to keep everyone busy telling me what they are!
I also have a can of chipotles in adobo.....about a year old.
We need to start a thread for recipes using chilis in adobo!

I have one better, I was cleaning out the pantry and found an oozing can of peaches and a can of three beans dated 2001. In the trash they went!!! That could have been a disaster if the can exploded!!! LOL

Well, at least you figured it out. I use a very similar recipe with broccoli instead of spinach; it's one of our favorites. (I know about having lots of Pepperidge Farm Stuffing on hand!) May I just say...Balls are Better! (It's just a personal preference, IYKWIM.) If you roll them in parmesan cheese like I do, you can call them Hairy Balls. (Jessy, are you out there?)

I just cleaned out my pantry and found way too many boxes of Jello...what is that all about? I'll trade 10 for a can of chilis in adobo sauce!
