grilling chicken

How long does it take to grill chicken breasts (with no bones) on an outdoor grill? We are always grilling hamburgers and hotdogs, but this is our first time grilling chicken. I put a little olive oil on each breast and sprinkled on Rotisserie chicken seasoning. We have a regular grill, not gas. Thanks.

Depends on many factors.

Do you have a meat thermometer? If not, get one. That's the only way to tell when the chicken is safely cooked, if you are not experienced in grilling chicken.

Once the coals are hot push them to the outer edges of the grill. Place the chicken in the center of the grill. Then you will be grilling "indirectly" and have less chance of burning them or drying them out before they are done. I would do 6 minutes on one side and 4 minutes on the other. Remove one and make a cut in the thickest part of the breast. If there is no pink and juices are running clear they should be perfect.

Initially, I had planned to have the BCBs along side some veggies. But the HVAC tech, who had been threatening that he was "on his way" since 1:30, hadn't shown up by dinner, I changed to Chicken Pasta Pesto (cheese tortellini, pesto and the repurposed chicken). I heated the chicken more like what DCArch suggested, but with tap hot water, cut it up and tossed in the pot with the cooked tortellini and pesto, covered it and let it sit a few minutes. No one complained...so it must have gotten hot enough. If I'm not shredding the BCBs for BBQ, stir fry, quesadillas, or similar, I usually do make a gravy/sauce to counter the dryness. Thanks for the tips on reheating....now I'm armed for the next time!

We like them grilled too, and depending on my mood I flavor them in different ways. If you can get it Yoshida's Gourmet Sauce is a teriyaki-like sauce that's really good with either chicken or beef and gives an Oriental flavor to the chicken. Another favorite is to marinate the chicken in a mixture of mayo, pesto, lemon juice and garlic. For chicken Caesar salad I marinate them in a combo of Caesar dressing, lemon juice, garlic and milk (which really tenderizes them). And there's always fajitas or jerk chicken burgers - I'm posting a couple of recipes below for you for those. And I agree with Linda - they key to keeping them moist is to not overcook them. If you don't have one, get an instant-read thermometer. I cook them over hot coals for about a total of 15 minutes, turning every 5 minutes so they don't get too brown. Once your internal temp's up to 160F they're done. Lynn, I'd go with AnnT's souvlaki marinade. It is so simple and soooo good. I've done it with boneless chicken breasts. How about just plain old spinach (frozen or fresh baby if you have time and can get enough) maybe with some sauted pine nuts? Maybe some cherry tomatoes for color instead? With the mashed potatoes and chimichurri it sounds great for a simple but very nice meal. Maureen Chicken breasts Fresh minced garlic dried oregano lemons olive oil Salt Pepper Cut chicken breasts into 1 inch cubes Place on wooden Skewers that have been soaked in water (prevents sticks from burning.. or on metal skewers. Rub with fresh minced garlic and dried oregano Squeese fresh lemons over chicken and some olive oil Salt and pepper Marinate for up to 1 hour. If marinating longer do not add lemon juice until the last hour. Lemon juice "cooks" the flesh and changes the texture. Place on hot grill and turn often until done. Serve with Greek salad and rice. Great idea, Woodie: serving it with steak. I have ordered a blue cheese crust before in a steakhouse, it makes sense to have it as a sauce, though it had not occurred to me before. As far as the recipe, I'll answer my own post! I had all the ingredients, so couldn't wait. I have to say, it turned out really well. I have not actually tasted the Trader Joe's version, but mine was good. I have a George Foreman Grill, so cooked the chicken strips on that. A real grill would be good, too, or some other cooking process that is similar to grilling. 2 Chicken breasts, cut up into strips (marinate for 10 minutes or more, in 1/4 cup lemon juice, dash lemon pepper, 1 T Italian seasoning, 1 T paprika). Drizzle with olive oil right before cooking. 2 onions, sliced 2 red or green peppers 1/3 to 1/2 pound sliced Portabella mushrooms (the mushrooms are critical to the flavor) 1/2 lb. Gorgonzola cheese, crumbled or chopped 4 to 6 cloves garlic, minced (if you're not a real garlic lover, use the smaller quantity) 1/4 cup of grated parmesan. Italian parsley, optional, chopped Cooked pasta Grill the marinated chicken on the George Foreman grill. Sauce base: Melt 2 T butter in a shallow pan. Make a white sauce with 2-3 T of flour stirred into 1 cup milk. Cook until thickened: add black pepper, garlic salt, and minced garlic. Simmer on very low heat, adding more milk as needed to maintain a consistence that can coat the chicken. Add the chopped Gorgonzola cheese, and about 1/4 cup of grated parmesan. Let cheeses melt, keep warm. Gorgonzola may not melt completely, but appear chunky in the sauce. Saute the onions in olive oil, until lightly caramelized; after them the peppers: remove to a plate. Saute the mushrooms until browned. Put them all back in the pan. Put the cooked chicken in a large shallow serving bowl, add the onions/peppers/mushrooms. Pour the cheese sauce over, and toss to coat all lightly. Or toss them all together in the larger of the saute pans. Add chopped parsley. Serve over Pasta.

I neglected to note that the cooking time depends alot depends on how many coals you are using.

The cooking time will also depend a lot on the size/thickeness of the chicken breasts.

When I grill boneless breasts I usually flatten them out so they just take a few minutes to cook.

Rubbed with fresh garlic, salt, pepper, dijon mustard, a little olive oil and fresh squeezed lemon juice.

Very true.

Also, what temperature you start out with, 40 degrees F (refrigerator temperature) or 90 degrees F (air temperature).

In addition, whether you grill with or without the cover on will make a huge difference.

A digital meat thermometer can be bought for $5.00 on eBay. I have one I have been using for a few years. I am surprised that it's actually very accurate.

We did ok. I had thawed the breasts out first (air temp)before hubby put them on the grill. We had just bought a smaller table top grill that we wanted to use when grilling just for the 2 of us, so that is what we used (our first time using it). The breasts were not thick, but we left them on the grill for a good 40 minutes with the lid on, and he turned them every so often. Maybe 40 minutes was too long, but we weren't sure how long to grill them for. Rather over cook them than under cook them. There wasn't much juice, so I guess maybe we overcooked them, yet they didn't taste dry. Ann T, your chicken looks delicious, but I'm not so sure about the dijon mustard (neither of us like mustard). Is the amount you use enough that you would taste it? Anyway, we always cover the rack part with foil first, no matter what meat we are grilling, even though we clean it first. The chicken tasted very good, and neither of us got sick LOL! I do have a meat thermometer, but I didn't think of using it. I do use it every time I cook a turkey, (and it's almost that time of year again). Teresa, will have to try the indirect method next time.

Donna, I don't like mustard either. But I like it on this chicken. Just a little spread on with the garlic and olive oil and fresh lemon juice. You could try it or just leave out the mustard and just go with the garlic and lemon. I sometimes go with a Greek twist, adding some oregano to the mix.

Why do you cover the rack with foil? I have done that before and much prefer the taste from some slight flare ups.
I understand not wanting to get sick but if you scrub the grill well and let it heat up with the coals, it will be fine.

I missed the fact that you covered the rack with foil. For me that kind of defeats the purpose of cooking on a grill. You aren't going to get the wonderful flavour especially the flavour you get from cooking over charcoal.

It shouldn't take anywhere near 40 minutes to cook boneless chicken breasts.

Donna - if it took 40 minutes you probably did not have many coals. The one advantage to the indirect method is that you can cook other foods around the edges over the coals - corn, peppers, onions. The Weber website has recipes one of which is a whole chicken using the indirect method.
You will have to sift thru the recipes - alot of them are for the Weber gas grill.

If they cooked for 40 minutes and were boneless chicken breasts and were still moist then they must have been pumped from the packer.

They inject a saline solution and I don't know what your regulation is but up here it can be as high as 20%. 20% water at whatever $ per pound you paid.

Gosh, it barely takes me 15 minutes more to grill a whole bird. I can't imagine 40 minute breasts. I'm not trying to be snarky, I simply can't imagine waiting that long for that particular portion of meat.

YouTube has a lot of Alton Brown cooking shows, I'm sure there must be a grilled chicken one there. He'll take his time and talk all the while but he will get you there.
