I got a new portable Weber gas grill for my birthday. Any suggestions?

We just love this one. The recipe calls for chicken legs but we have used breasts, both boneless and bone-in. Cook it low and slow.

LEMON ROSEMARY CHICKEN LEGS (OR BREASTS)

Chicken drumsticks or breasts

Marinade:
1 cup olive oil
zest from 2 lemons
freshly squeezed juice from the 2 lemons
5 tbsp chopped fresh rosemary
5 cloves of minced fresh garlic
1/3 c. + 1 tbsp Dijon mustard

Whisk together all the ingredients for the marinade. Place chicken in a ziplock baggie and pour in the marinade. Place chicken and marinade in the refrigerator for about 2 hours. Remove from the refrigerator about 30 minutes before cooking.

Reserve marinade. Place chicken on a greased grill over medium heat. Cover and cook for 25 - 30 minutes, turning once or twice, until golden brown.

Brush reserved marinade on chicken and cook for additional 10-12 minutes or until the juices run clear. Season with kosher salt and freshly ground pepper to taste.

The grilled chicken can be served either hot or cold.

This is one that I make often and everyone in this house loves it.I think I have posted it here before but I'll post it again. Ritzy Chicken Casserole 4 Large,cooked,boneless,skinless chicken breasts.I usually just put them in a pan and cover with water and cook until they are tender.You can use a deli chicken too if you like dark and white meat. 1 can cream of chicken soup 1 cup Hellmans mayonaise or 1 cup Sour cream.The original recipe calls for mayo.I know it sounds wierd but it is really good.I didn't have mayo one time and used sour cream instead and my bunch liked it better. 2 Tbsp.Lemon juice(optional) 1 sleeve Ritz Crackers(aproximately 16 crackers,I think) 1 stick real butter(melted) Spray a baking dish with non stick spray.Cut the cooked and drained chicken into 1 inch cubes and place in the baking dish.Mix the soup,mayo(or sour cream)and lemon juice together in a bowl and spread over the top if the cubed chicken.Crush the Ritz Crackers finely in a food processor or smash them in a zip lock bag and spread evenly over the top of the soup mixture.Drizzle the melted butter all over the crackers.Bake at 350 for 30-40 min. or until the crackers are lightly browned.

My sister was engaged to one of their cousins at one time, and I can tell you the whole family has wonderful Italian recipes. I have found a recipe for Pollo Menichino which is also an herb marinated grilled chicken recipe by Damian when he was the owner of Damian's Restaurant in Houston, before he joined up with Johnny Carrabba. Beer Lime Grilled Chicken

READY IN 54 Min

Â 1 lime, juiced
Â 1 (12 fluid ounce) can light colored beer
Â 1 teaspoon honey
Â 2 cloves garlic, minced
Â 2 tablespoons chopped fresh cilantro
Â Salt and pepper
Â 4 skinless, boneless chicken breast halves

DIRECTIONS

1. In a bowl, mix the lime juice, beer, honey, garlic, cilantro, and salt and pepper until the honey dissolves. Pour the mixture over the chicken, cover and marinate for 30 minutes.
2. Preheat an outdoor grill for medium heat and lightly oil grate.
3. Remove chicken from marinade and shake off excess; discard remaining marinade. Grill chicken until tender and juices run clear, about 7 minutes per side.
