Beef Flanken ribs and what to serve with them

I'm having a little family gathering soon and am going to make grilled Korean flanken ribs. What do you think would be some good accompaniments for a family that is mostly meat and potatoes with one mostly vegetarian eater? Which is dh. He'll eat a rib but will complain. I might have to grill some salmon also.

I steam a big bunch of broccoli and then toss with this light asian-esque sauce. Hope you like it. I'm always on the prowl for easy broccoli ideas!
Dressing:
1 Tbl mirin wine (or sherry or white vermouth, once I used sake!)
1 Tbl rice wine vinegar
1 1/2 Tbls honey
1/2 tsp salt
2 1/2 Tbls sesame oil
Ground black pepper or 1/8 tsp cayenne to taste.

Rococogurl's Chutney Cole Slaw
1/2 a small head of savoy cabbage (no dark green leaves - pale only), shredded
1 small red bell pepper, cut in julienne
6 medium sliced scallions
1/2 small head of radicchio rosso

For the dressing
About 2 tbsp rice vinegar
About 1/4 cup cider vinegar
1/2 jar of Major Gray's mango chutney
About 2 tbsp Stonewall bourbon molasses mustard
1/3 -1/2 cup salad oil
3 tbsp olive oil
I mixed it all together and let it refrigerate for an hour or so. It was tangy, sweet/sour and quite different.

Audry, With the exception of some dry seasoning up front, your method sounds great. I use garlic powder, Lowery's seasoned salt, pepper and cayenne... Here's one additional thing to try: After cooking on the grill to the point where the outside is as carmelized as you want, finish the ribs off in the oven. We line a roasting pan with Reynolds Wrap Release foil (to ease cleanup), put the ribs in and add BBQ sauce. (We don't use BBQ sauce while the ribs are on the grill.) Cover the roaster and roast at 350 degF until the ribs are fully cooked. You'll get really tender ribs with that crunchy outsides from the grill, but fully cooked and tender enough to fall off the bone.

Gell I think it's sweet that you adopted a wee bit o' the Irish on behalf of your son! I got engaged on St Patrick's in St Maarten. We were at a restaurant that was centered about a pool under a lenai with gorgeous birds and tropical foliage. We had dinner and then went to the bar for beverages served in ivory plastic mugs that turned green when filled with cold liquid. I teased down the steps into pool [shoes off] to the top of my shorts and DH followed. We kept going and wound up slow dancing in the pool up to our waists fully dressed. Dh said "You should marry me" I said "I might rabbit I might" the next day we bought a ring in Phillipsburg and he asked me in the store and asked again later that night out on Honeymooners walk in the moonlight with a steel drum band in the background to make sure. We love 7's and 17's. Engagement 3/17 his DOB 1/17 my DOB 4/17 our first house 117 our second house 17 our first son due June 7, our second son born 2/7. Damn that's *nothing* to do with corned beef! Or the lack thereof lol.

That Weber method is basically a braise, no? I, too, prefer pork ribs over beef ribs except for short ribs. I fondly remember the days when I would get a full prime rib, bone on, fat cap on. We'd layer the bottom of an apple crate with salt, place the roast on that and totally cover the roast with more salt. Then into the oven overnight at 200* (as low as it would go). The next morning we would knock the salt cap apart and cool the very rare roast. That evening the friends would gather and I'd carve it up, to order so to speak, and each guest would quickly toss theirs onto the grill to warm it. Those bones were good. Now that my mortgage is done, maybe I can try that once again. I have an oven that will set lower too...that would be ideal.

Tried this the other night--sort of "cabbage rolls/Polish Pigs" without the rice-- nice change of pace. Diane's Home Cookin Chapter: 2014/15/16--to try--main dishes & sides Unstuffed Sweet-and-Sour Cabbage ================================ source: Gourmet 11/2008 1 (2-pound) head green cabbage, quartered or cut into sixths-- lengthwise and cored 1/2 cup reduced-sodium chicken broth 3 garlic cloves, thinly sliced, divided 1 large onion, thinly sliced 1 tablespoon olive oil 1/2 pound ground beef chuck 1/2 pound ground pork 1 (28-ounce) can whole tomatoes in juice 1/3 cup dried cranberries 3 tablespoon red-wine vinegar 1 tablespoon packed dark brown sugar 2 tablespoon chopped flat-leaf parsley Accompaniment: steamed rice . Cook onion and remaining garlic in oil in a heavy medium pot over medium heat, stirring occasionally, until golden, about 8 minutes. Increase heat to medium-high and stir in ground meats along with 1/2 teaspoon each of salt and pepper. Cook, stirring and breaking up lumps with a wooden spoon, until no longer pink, about 3 minutes. Stir in tomatoes with their juice, cranberries, vinegar, and brown sugar and simmer, uncovered, stirring occasionally and breaking up tomatoes with spoon, until slightly thickened, about 20 minutes. Season with salt. Sear cabbage pieces lightly in bacon grease then place in a deep 12-inch heavy skillet with broth, 1 garlic clove (sliced), and a rounded 1/4 teaspoon salt. I think a noodle dish would be interesting.

Jessy posted this one which is a cold dish.

Spicy Cold Soba Noodles

1/3 cup soy sauce
1 tbls molasses

1/4 cup brown sugar
1/4 cup tahini
1/4 cup sesame oil
1/4 cup chili oil
3 tbls balsamic or red wine vinegar
1/2 bunch thinly sliced scallions, white and green

1/2 lb soba noodes

Place soy sauce in a pan over high heat and reduce by half. Turn heat to low, stir in molasses, and warm briefly. Transfer to a serving bowl. Add brown sugar through scallions and whisk to combine.

Bring a large pot of water to boil. Add noodles; bring back to a boil, and cook, stirring occasionally, until they just begin to soften, about three minutes.

Have ready a large bowl of iced water. Drain noodles, plunge in iced water, and drain again (I just rinse with cold water in the colander). Transfer noodles to the serving bowl that has the sauce, toss well and chill.

Sesame Noodles (Chien Noir) by Susan Branch
serves 6

1/4 cup tahini
1/4 cup warm water
1/4 cup soy sauce (or Tamari)
1/4 cup vegetable oil
2 tablespoons sugar
2 tablespoons cider vinegar
2 cloves garlic, minced
1 1/2 tablespoons chili oil
2 teaspoons sesame oil
1/2 cup green onions
16-ounces thin udon noodles

Look for any unfamiliar ingredients at your health food store. Whisk together tahini and water; whisk in soy sauce, vegetable oil, sugar, vinegar, garlic, chili oil and sesame oil. Finely chop green onions. Cook the noodles according to package; lightly coat them with sauce, tossing gently. Sprinkle green onions and serve. Best hot or at room temperature. Try Chinese egg noodles if you canÂt find udon!

For veggies how about Kimchee?
